Banoffee Pie...!!!

Author: Siddhi Shirsat // Category: ,

Banoffee pie is an English pastry based cake made from bananas, cream, toffee boiled condensed milk(or dulce de leche), either on a pastry base or one made from crumbled biscuits and butter. Its name is constructed from the words "banana" and "toffee".I came across it while surfing and found it very interesting so i tried it. Its realy very tasty, a perfect desert after food. And most importantly its the most easiest pie recipe i have seen.

1 n 1/2 cup course powder of marie biscuits (or some other wheat cookies)

1/2 cup butter

4 small ripe bananas

250 gms condensed milk can

1 cup fresh cream

3 table spoon icing sugar

1 tea spoon vanilla essence

1 cup grated chocolate

Melt the butter and mix it with biscuit powder.Take a pie pan and press down the crumbs at the bottom of it.Refrigerate it for 1 hour so that it gets hard and fixed on it.

In a big vessel, bring water to boil. Drop the condensed milk can in it. Do not open the can.Close the lid and let it cook for 2 hours in it on medium flame. Take care that the water level in vessel is always above the can or else the can can burst.

The milk inside will become thick but will have little flowing consistency.Remove it from water and let the can cool. This cooked liquid in the can is called toffee.

Slice the bananas and spread a layer of them on the set biscuit crust. Now pour the toffee on the top of banana layer.Refrigerate it for 2-3 hours.

Take the cream in a bowl. Add icing sugar and vanilla essence and whip it till it becomes fluffy.Spread a layer of this whipped cream on the set pie.Sprinkle grated chocolate on it.Refrigerate again for 30-40 mins.

Simple Mushroom Rolls...!!!

Author: Siddhi Shirsat // Category: , ,

This mushroom roll is a very simple and tasty .I make different types of mushroom rolls, this is one of them. For this roll i have used the same stuffing as mushroom kathi roll which i had posted some days ago, but this roll has a soft and chewy coating campared to hard coating of kathi roll. You can try its coating with some other stuffing also like paneer, corn etc

For Stuffing:

Prepare as in this recipe

For Coating:

1 cup maida(all purpose flour)
1/2 cup curd
2 tea spoon sesame seeds(til)

Prepare the stuffing according to the recipe.

Take a bowl and add maida. Add curd, salt, sesame seeds and mix well. Add water to get a required consistency for the batter. It should be like dosa batter.

Heat a tawa and add butter. Take little batter in a laddel and spread it like a medium size dosa. When its done from down, put the stuffing on it and roll it on tawa only. Since the top side of dosa is not cooked directly it will help in sealing it.

Seal the roll properly and cook for 2-3 mins turning frequently so that it gets cooked on all sides.

Remove from flame and cut in pieces and serve hot.

Eating home made bread is realy a nice experience. I always wanted 2 try baking a bread at home once. So last week i decided to give a try. I like working with yeast, i just love 2 c the dough which rises and becomes double. They turned out very soft inside. I wanted bit crispy outside so i baked them bit longer. We enjoyed this bread. I had a very good experience baking a bread so i am sharing the recipe here.

1/2 cup warm water
1/2 cup warm milk
3 tea spoon active dry yeast
3 tea spoon sugar
1 tea spoon salt
4 table spoon butter

Mix sugar and yeast in warm water and keep closed for 10 mins, till it gets forth. This measn the yeast are become active.

Seive maida and salt together. Take it ina bowl. Add the yeast water and milk and kne dit into a soft dough. Now add 2 table spoon of melted butter and kned again for 10 mins minimum to form a soft dough.Kneding well is very important to get soft bread.

Keep this dough ball in a bowl. Cover it with a soft muslin cloth. Keep it untouched for 60-80 mins.Grease a baking tray and keep aside.

After one hour the dough will become double in size.Punch it down gently and make equal sized balls with the dough and place it on the baking tray about 1/2 an inch apart a shown below.

Cover the tray and keep it untouched for more 60-90 mins. The balls will become double in size. the edges will be joined as shown below. Make smooth balls for good finish. As it was m first try i had not made those balls that smooth so shape is not that perfect , but next time i vl surely give it a good shape.

Now preaheat the oven at 190 deg celsius or 375 F. Place the baking tray in the oven and bake for about 15 minutes until the bread is baked to a nice brown color on top.Remove from oven, when you tap the top of the bread it will be a little hard and sound a bit hollow, apply a little butter on top and bake for another couple of minutes.

Fresh home made bread is ready. Enjoy it with pav bhaji or other things.

NOTE:Bake the bread according to your choice. If you want crispy bread bake it bit longer and if you want soft laddi pav used for pav bhaji remove it some time before, you will get very soft bread.

Prawns Stuffed in bell pepper and Snake Gourd...!!!

Author: Siddhi Shirsat // Category: , , ,

This recipe is a very uncommon combination but is very tasty. I love this from my childhood. It was a common dish at my place. In this both snake gourd as well as bellpeppers can be used to stuff prawns mixture. I have put the pic of both. With snake gourd it gets a different taste with mild flavour of snake gourd and if stuffed in capsicum its gives different taste of capsicum. Both combinations have their own special taste. Normally i do not eat any dish made from snake gourd, as i do not like it. But i just love this dish. Its so tasty that people who do not like snake gourd will also enjoy it.Its a very good starter recipe .

3/4 cup cleaned medium size prawns
4-5 small size green bellpeppers
1 snake gourd
1 1/2 cup onions chopped finely
3/4 cup chopped tomato
2 green chillis chopped
2 table spoon chopped corainder leaves
1/2 cup besan
1/2 tea spoon chilli powder
1 table spoon lime juice
1 tea spon turmeric
2 tea spoon garam masala

Cut the snake gourd in round pieces, may be 2 inches in length.Remove all the inner seeds and pulp. Make them hollow like pipes.

Take each capsicum and chop its one end, not the end near stem but the opposite one. A hole of 1 n 1/2 inch is developed. Now remove all the seeds from it and make it hollow.Cut is always made to the end opposite stem as it makes it easier to remove the seeds.

Apply salt, lemon juice and turmeric to prawns and keep them for marination for 20 mins.

Now Heat a pan. Add 2 table spoon oil in it.Fry onions in it till soft and light brown. Then add tomatoes.Saute till they become soft.Add green chillis. Now add the marinated prawns. and cook them for some time till they are fully done. Now add salt, garam masala and mix it properly. When the whole mixture is done garnish it with coriander leaves and remove from flame. Let it cool for some time.

Now take bowl. Add besan to it. Add little salt and chilli powder.Add little water and mix it well till it forms a thick paste. It should not be thin batter.

Now take one capsicum. fill it fully with the prawns stuffing. Now seal its open end with the besan batter.Repeat the same with the remaining bell peppers.

Now take one snake gourd piece. Fill it with the prawns stuffing. Seal its both edges with the besan mixture. The mixture must be thick, it should not fall when applied.

Heat a pan. Add oil and shallow fry them on all sides till they are done.Remove them on paper to absorb oil. They can also be deep fried but i avoid it as it consumes more oil which is not good for health.

Or they can even be cooked in microwave.Brush oil on each one of them and cook them on convection mode for 10 mins and 5 mins on grill.

Serve them hot.

NOTE:I have used small size bellpeppers as they are good to stuff as well as cook. While eating also no need to cut and serve, they can be serves as whole.

If medium size prawns are not available, cut big size prawns in pieces and use.

1 cup sugar
3-4 table spoon chopped cashew nuts and almonds
1 cup grated coconut
3-4 cups milk
3-4 table spoon fennel seeds(saunf/badishep)

For Sugar Syrup

2 cups water
2 cups sugar
5-6 cloves

Heat a tawa (flat griddle) and put 2-3 tbsp ghee in it and spread it with wooden spatula.

Take a small ladder full of paste and spread it in round fashion in the heated tawa. Make 2-3 small rounds of paste depending upon how big your pan is.

Cook it in the slow heat for some time and then turn all puas to other side using a thin flat spatula. Add more ghee when puas are turned for good frying.

When they are done remove them from tawa. Put on absorbant paper for some time. This is called pua.

Now to make it malpua, dip it in sugar syrup. Keep it in sugar syrup for 2 hours so that it absorbs it.

Malpua is ready...

It can be eaten plain. but it tastes best when its served with rabri or kheer. Malpua-kheer or rabri malpua is famous.
