Quiche Lorraine...!!!

Quiche Lorrane - One of the most famous dish from French Cuisine...Looking at it you all will think that its a very tidious affair to make this baked delicacy...but its a very small procedure..it can be made in few mins and the result is just awesome.




INGREDIENTS:


For The Cripsy Crust :
  • 200 grams all purpose flour (maida)
  • 70 grams salted chilled  butter
  • 2-3 table spoons chilled milk
For  Stuffing:
  • 8-10 button mushrooms chopped finely
  • 1 medium bellpepper chopped finely
  • 1 medium bunch of spring onion greens n whites chopped finely
  • 1 onion finely chopped
  • 3 tea spoon finely chopped garlic
  • 1/2 tea spoon pepper powder
  • 1/2 tea spoon mustard powder
  • 1 tea spoon dried oregeno
  • 1 table spoon butter
  • salt
Other Ingredients:
  • 150 ml fresh cream
  • 2 eggs
  • 1/2 tea spoon pepper powder
  • 1/2 tea spoon mustard powder
  • salt

METHOD:
First to make the crust take the flour in a bowl and add pieces of chilled butter and rub chilled butter into maida with fingertips to attain a sandy crumbly texture.Now add the chilled milk to this mixture and kned it to form a smooth dough,do not over handle the dough. Wrap it in a cling film and refrigerate it for 1 hour.



Preheat oven to 180 deg . Roll out the prepared pastry approx 5 mm thick and line in 6-8 " greased quiche/pie tin. Prick all over with a fork and bake blind for 12-15 minutes.Let it get cooled.


Now to make the stuffing heat butter in a pan.Add garlic and saute for 2 mins and then add chopped onion and saute till tranparent.Add chopped capsicum, mushrooms and saute for more 2 mins.Add spring onion greens and whites and saute for a while.Add salt, pepper powder and mustard powder and saute and cook till the mixture is fully dry.Add oregeno and remove from flame and let it get cooled.


Take fresh cream in bowl and add the eggs in it and beat the mixture well for 4-5 mins. Add salt, pepper powder and mustard powder and beat again.


Preheat the oven at 180 deg.Put the prepared vegetable stuffing on the prepared pastry shell and top up with egg and cream mixture.Fill the tin fully till rim with egg and cream mixture.Bake for 15-20 mins till egg mixture is golden and firmly set. You can bake the last 5 mins at 200 deg for better results.


Remove it from oven. Cut it and serve hot...

Date Pastries...!!!

This date pastries are again christmas special...these pastries are very easy to prepare yet very tasty n crispy.I make them often with different stuffings...mostly i use powdered dryfruits as stuffings but this time i used soft dates as stuffing and they tasted very nice.The sugar coating on top of them is like adding a cheery on a cake:-)

INGREDIENTS:

For Dough:
  • 2 cups all purpose flour
  • 1/2 cup wheat flour
  • 2 table spoon powdered sugar
  • 1 cup cold butter cubes(or margarina)
  • cold water
  • pinch of salt

For Stuffing:
  • 1 cup seedless dates finely chopped
  • 2 table spoon ghee/butter
  • 1/2 cup powdered sugar(For brushing)

METHOD:

Mix all the ingredients of the dough and kned it into a dough using cold water.Kned it till a a soft firm ball is formed.Now wrap it into a plastic wrap and refrigerate it for 2 hours.

Now heat a pan and add butter.Add the chopped dates and saute on low flame for 2 mins.Do not allow them to get overcooked.Let the mixture cool.

Now take the refrigerated pastry dough and roll it into desired shape.It will be very easy to handle it now as it is cold and it has lot of butter.It should be rolled with thickness of 2-3mm. Give it the desired shape, i used biscuit cutter to shape them.

Take one rolled pastry shell and put 1 tea spoon of date stuffing on it.Close it with same size and shaped another rolled pastry shell and seal the edges tightly.Below u can see the pic.Repeat the same with the remaining dough and filling.Brush them on top with butter.




Preheat the oven at 180 deg for 10 mins.Bake this pastries at 180 deg for 25 mins or till they turn light brown.Cool them on wire rack.

Mix 1/4 cup powdered sugar with 1/4 cup water and heat it till it becomes sticky.Now brush it on top of baked pastries.Now spinkle the remaining powdered sugar on it.This step is optional if you want them to be more sweet.

This pastries remain fresh and crisp for upto 15 days.

NOTE: You can even add 1/4 cup powdered cashewnuts and almonds to the date mixture after it gets cooled.

Banoffee Pie...!!!

Banoffee pie is an English pastry based cake made from bananas,cream,toffee boiled condensed milk(or dulce de leche), either on a pastry base or one made from crumbled biscuits and butter. Its name is constructed from the words "banana" and "toffee".I came across it while surfing and found it very interesting so i tried it. Its realy very tasty, a perfect desert after food. And most importantly its the most easiest pie recipe i have seen.


INGREDIENTS:

1 n 1/2 cup course powder of marie biscuits (or some other wheat cookies)

1/2 cup butter

4 small ripe bananas

250 gms condensed milk can

1 cup fresh cream

3 table spoon icing sugar

1 tea spoon vanilla essence

1 cup grated chocolate

METHOD:

Melt the butter and mix it with biscuit powder.Take a pie pan and press down the crumbs at the bottom of it.Refrigerate it for 1 hour so that it gets hard and fixed on it.

In a big vessel, bring water to boil. Drop the condensed milk can in it. Do not open the can.Close the lid and let it cook for 2 hours in it on medium flame. Take care that the water level in vessel is always above the can or else the can can burst.

The milk inside will become thick but will have little flowing consistency.Remove it from water and let the can cool.This cooked liquid in the can is called toffee.

Slice the bananas and spread a layer of them on the set biscuit crust.Now pour the toffee on the top of banana layer.Refrigerate it for 2-3 hours.

Take the cream in a bowl. Add icing sugar and vanilla essence and whip it till it becomes fluffy.Spread a layer of this whipped cream on the set pie.Sprinkle grated chocolate on it.Refrigerate again for 30-40 mins.

While serving remove it, cut in pieces and serve.


Preparation Time :30 mins (excluding refregeration time)




Apple Banana Pie...!!!

A pie is a baked dish which is usually made of a pastry dough shell that covers or completely contains a filling of various sweet or savoury ingredients. Pies can be either "filled", where a dish is covered by pastry and the filling is placed on top of that, "top-crust," where the filling is placed in a dish and covered with a pastry/potato mash top before baking, or "two-crust," with the filling completely enclosed in the pastry shell. Pies can be a variety of sizes, ranging from bite-size to ones designed for multiple servings.Apple pis is a two crust very famous pie.I have had it once soem days back , i just loved its taste with the cinnamon flavour infused in it. I decided to give it a try at home.I made mixture of apple and banana pie. It was superb, the combination of apple and banana went well.


INGREDIENTS:

For Pie Crusts:

250 gms plain flour
100 gms frozen butter
1/2 cup ice cold water
pinch of salt
1 egg(optional)

For Filling:

2 apples (peeled and diced)
2-3 half ripe bananas (peeled and diced)
1 table spoon butter
2 table spoon brown sugar( or castor sugar)
1 tsp cinnamon powder
1/4 tea spoon nutmeg powder


METHOD:

Sift flour and mix it with butter.Add cold water and knead into soft dough.Wrap in plastic or foil and refrigerate for 60-90 mins.

Microwave butter in a microwave safe bowl at 100% powder for 1 min. Mix apples, bananas and sugar and microwave in it for 3-4 mins on 100% power. Sprinkle cardomon and nutneg powder and keep aside to cool. This mixture cna be prepared on gas also in same manner but keep on stirring till apples and bananas become soft.

Roll the cold dough and cut into two pieces.Roll each piece into shape and size of the pie baking dish.Now line the dish with one layer, now stuff it with the apple and banana filling and cover with the other layer.Press the edges together till they become joined. Now design the pie according to your taste.





Beat the egg and brush it on the pie.Preheat the microwave and bake it on convection mode for 30-40 mins at 190 deg on the lower rack.It must becme light brown .Or bake in oven at 190 deg.

Let it cool for 1-2 hours. then slice it and serve.Spinkle more castor sugar on top and serve.If served with a spoon of vanilla ice cream it tastes best.


Preparation Time : 50 mins



Nutty Chocolate Roll...!!!

This nutty chocolate roll looks realy yummy na...and it tastes also very good. Everyone will like this roll. It is chocolate role stuffed with nuts and strawberry syrup.And chocolate syrup on top of it makes it damn yummy. By luking at it one may think that it will be very difficult to make this rolls, but it is damn easy. Kids just love this roll.We see such rolls outside in pastry shops and buy from there. We never think of making them at home,as they seem very difficult to make.But now we can make such roles at home that too with less effort.This role requires ingredients that are easily available at home.

INGREDIENTS:

For Roll:

2 cups marie biscuits crushed(fine powder)
3/4 cup drinking chocolate
1/2 cup powdered sugar
1/4 cup milk
1/2 cup dessicated coconut
1/2 cup chopped cashewnuts, pisatochos and almonds
1/2 cup strawberry syrup
1/2 cup icing sugar
9-10 cherries
1 tea spoon butter

For Chocolate Sauce:

1/2 cup water
1/2 cup sugar
1 tea spoon cocoa powder
1 tea spoon drinking chocolate


METHOD:

Take a bowl and add marie biscuit powder , drinking chocolate and sugar in it. Mix it well.Add sugar according to your taste. Add milk and kned it well so that it becomes very soft and firm like a dough.Apply butter to make it smooth and keep aside.

Now the stuffing need to be done. Mix the coconut, with dry fruits and mix. Add icing sugar to it to make it enough sweet.Mixture is ready.

Take a piece of dough ball and give it round shape. Flatten it using hands and role it using icing sugar. Make a thick flat roti of it by rolling, do not make it thin.Now cut the big roti in to long strips of 2 inches broad.

Now apply the strawberry syrup on the top side on the cut strip. Add the coconut and nuts mxture above it. Role it into a roll as shown in the above pic. Side ways it will look like the pic below.

Now we need to make the chocolate sauce. Mix the water and sugar and heat the mixture when the sugar and water mixture starts boiling up add the cocoa powder and drinking chocolate powder and stir. Let the mixture boil again and become thick. When the mixture becomes thick remove it from heat and cool for some time. Choco sauce is ready.

Now take the rolls and add chocolate sauce on them and garnish them with cherries. Serve them.





NOTE: This rolls can be stored in refrigerator for 4-5 days.
Filling can be changed according to your needs. Even cut strawberry pieces can be added to this roll mixture, but they have to be consumed soon , they cannot be stored for more then a day.

Preparation Time: 20 mins.
