Boondi Bhel with Crispy Paneer...!!!

Well Chaat items are loved by  all.But trying chaats at home rather then having them in stalls is fun sometimes specially when they turn out real tasty.I have posted lot of chaat items before in this blog and had not posted anything from past few months as i had covered mostly all from chaat items and dint have anything new to post, but recently i encountered with this boondi bhel with crispy paneer.Its a very unique and tasty chaat dish.Give it a try and i am sure you will love it.


INGREDIENTS:
  • 2 cups of fresh and crisp boondi(little salted boondis)
  • 2 cups fine yellow shev
  • 2-3 table spoon spicy green chutney
  • 2-3 table spoon sweet tamarind date chutney
  • 2-3 table spoon chopped coriander leaves
  • 3 tea spoon lemon juice
  • 2 tea spoon chat masala
  • 1 tea spoon chill powder
  • 100 grams paneer chopped in thin long slices
  • 1 table spoon besan(gram flour)
  • pinch of baking  soda
  • salt
  • oil

METHOD:


Take a bowl, add besan in it, little spicy green chutney,baking soda,salt n little water and make a thin batter.Dip the paneer cubes in it and shallow fry on both sides using little oil till crispy.Use a non-stick pan preferably.


Take a big bowl and add boondi and shev in it and mix them well.add chill powder, chat masala and toss them again.Add tamrind date chutney and green chutney and lemon juice,chopped coriander leaves and stir the mixture well.Add the chutneys according to your taste.


Add the fried paneer cubes and serve immediately.Add more chutney on top if required and serve.


NOTE: You can add finely chopped onion and tomato in it if you like.

Cheese Kutchi Dabeli...!!!

Kutchi dabeli is very famous snack originaly from gujrat, but now also popular in Maharashtra specially in Mumbai and Pune.Its a spicy and tangy indian sandwich also called as double roti.I love its taste, i used to enjoy it during my stay in Pune.It was a common snack in most of the sandwich joints.Mostly i used to enjoy cheese dabeli which is very popular now, so here i have made it as now i miss it a lot here.Original dabeli do not have cheese, so its optional.Don’t get scared looking at long list of ingredients because the recipe is simple and very straight forward. Along with spicy potato filling, I am also giving the recipes for 3 different chutneys which are used in it.Original recipe contains just Sweet & Sour tamarind chutney and green mint-coriander chutney but one special dabeli stall in pune used 3 chutneys and it was very tasty. He used one more red chilli chutney,so i tried to make closer to his version. I enjoyed making this dabeli and loved it.

INGREDIENTS:

4-5 round soft breads(pav)
1 cup thin yellow sev
1 cup finely chopped onions
1/2 cup chopped corainder leaves
3/4 cup masala peanuts
1/2 cup pomegranate seeds(optional)
3-4 table spoon butter
1 cup grated cheese(optional)

For Potato Filling:

3 potatoes boiled and mashed
2 table spoon dabeli masala
1 tea spoon chilli powder(optional)
1 table spoon lemon juice
salt
oil

For Sweet Tamrind chutney:

1 lemon sized tamarind (soaked in water)
1 tea spoon red chilli powder
4-6 table spoon jaggary
1/2 tea spoon cumin powder
Salt to taste

For Green Mint chutney:

1/2 cup mint Leaves
1 cup Coriander Leaves
4-6 Green Chillies
¼ tea spoon tamarind paste
Salt

For Red Chutney:

10 dry red chillis(or 3-4 tea spoon chilli powder)
1 medium tomato
2-3 garlic cloves
1/2 tea spoon tamrind pulp
salt


METHOD:

First to make sweet tamarind chutney, grind all the ingredients to a smooth paste using very little water.

To make green chutney grind all the ingredients to form thick green paste.It should be very fine.Adjust the number of green chillis, i love bit spicy so have added more.Similarly to make red chutney grind all the ingredients to form thick and smooth paste.Tomato is used as it helps to grind chillis very finely or else they are difficult to grind.

Now to make the potato filling heat little oil in a non-stick pan.Add mashed potato, little water and salt and mix it.Cook it on low flame.Now add dabeli masala, chilli powder, lemon juice and 2-3 table spoon of sweet tamrind chutney.You can skip the chilli powder if you do not want it to be more spicy.Adjust the masala to your taste.Cook till the mixture gets dry.

Now slit the breads horizontally without cutting through.Now apply green chutney on one side and red chutney on the other side of bread.Apply tamrind chutney on the lower side and above it spead a thick layer of potato mixture.

Heat a tawa and add butter.Place the stuffed bread on hot tawa and toast it till crispy on both side.While toasting press it gently in middle to toast evenly.Now remove the hot toasted bread from tawa and add chopped onions and corainder leaves above potato mixture.Now spinkle lot of sev and masala peanuts.add some pomegranate seeds.Finaly add the grated cheese and close the bread and press it a bit.

Hot cheese dabeli is ready.

NOTE:Dabeli masala is easily available in stores.If you cannot find it, refer its preparation here .I had used ready made one.
In tamrind chutney you can even add 4-5 dates, but then reduce the amount of jaggery.

Chicken Shawarma...!!!

Shawarma is a Middle-Eastern sandwich-like wrap of shaved lamb, goat, chicken or a mixture of meats. The meat is placed on a spit or rotisserie and may be grilled on for as long as a day. Shawarma is a fast-food staple across the Middle East and North Africa.It is thinly sliced meat, wrapped or filled in pita bread with pickled and/or plain veggies and sauces is a delicious quick meal.This is the traditional shawarma, but in india we get different shawarma rolls and wraps with different sauces and dips.Pita bread is the most common bread of middle east so its mostly used for shawarma there.This shawarma rolls are one of the famous street foods in arabic countries .This is my 2nd middle eastern recipe as i was interested in trying some of them, so i tried it with little modification and it tasted very good,I liked the way chicken is marinated and cooked and when it gets stuffed in pita pocket with pickled veges and sauces it tastes awesome.I even added vinegar pickled veges in it and it tasted more good,

INGREDIENTS:

1 cup boneless chicken pieces
3-4 pita breads(or any other bread)
1/4 cup tahini sauce( refer recipe here)
olive oil

For Marination:
1/2 cup yogurt
2 table spoon vinegar
2 table spoon lemon juice
1-2 tea spoon chilli powder
2 table spoon ginger-garlic paste
1/2 tea spoon turmeric
1/2 tea spoon pepper powder
2 green cardomoms
salt

For Salad:

1/2 cup sliced onion
1/2 cup sliced tomatoes
2 table spoon yogurt
1 table spoon mint leaves
1/2 tea spoon pepper powder
1/4 cup shopped cucumber(optional)
1 tea spoon tahini paste( for recipe refer here)
salt

For Yogurt Sauce:

1 cup yogurt
2-3 table spoon lemon juice
2 table spoon garlic paste( or crushed garlic)
salt

For vinegar pickling:

1/2 cup sliced carrot
1/2 cup sliced beet root
3-4 green chillis
1 cup white vinegar
1 tea spoon sugar

METHOD:

Cut the chicken in small pieces and add all the ingredients of marination and keep it for 7-8 hours in refrigerator.

For pickling veges add sugar to vinegar and heat it till it gets slightly warm and add the sliced beet root pieces , carrots and green chillis.Keep overnight.Because of this the veges will have very nice and different taste, even the chilli will become less pungent.

To make yogurt sauce whisk the yogurt well and add salt, garlic paste and lemon juice and whisk it again to form a smooth sauce.You can even pass it and squeeze through muslin cloth to become more fine and smooth.

For salad mix sliced tomatoes, onions ,salt and pepper powder.Add tahini and yogurt and mix well.

Now finally to cook the chicken you have two ways either you can apply olive oil and grill it in oven or you can cook it in pan.I used pan to cook.Here add little olive oil in a pan and add the marinated chicken pieces and let them get cooked on medium flame for 20-25 mins.Be sure not to overcook it. If chicken becomes a little dry, add a few drops of water after every 5 mins throughout cooking duration, this is very important step so that chicken remains moist and gets cooked well.

Now finally to assemble the shawarma.Cut the pita breads in two halves.Apply tahini sauce at one side and yogurt sauce at other side on the pita bread pockets.Add the hot chicken pieces ,salad and vinegar dipped veges.Drizzle yogurt sauce in middle and serve immediately.


NOTE: While cooking chicken pieces i had added 1 tea spoon tandoori masala to make it more spicy.Its not in the traditional recipe.
If you do not get pita bread you can use normal bread also.
If you get very thin pita bread then you can even wrap all the things with it like a frankie.

Chilled Pani Puri(Gol Gappa)...!!!

Pani puri is famous chaat in india. Its famous in north india as gol gappa.It tops on my list of favourite chaats.Whenever we see a pani puri stall, we cant control having it.I had never tried making pani puri at home.But last week i wanted 2 have pani puri. There is a famous beach here called miramar beach and chaats in that area are very famous in goa.There are aorund 30 stalls of chaats in line there. Pani puri over there is mind blowing. It was raining very heavily here in goa so i decided better not to have stall food in this season.So i decided to give it a try at home. I tried to get taste like miramar pani puri.It was almost the same, but not the exact taste as them. I vl find out more about their preparation and try once again. But this pani puri was chatpata.I enjoyed having them.



INGREDIENTS:

20 puris
1 cup boiled white peas
1 cup boiled and mashed potatoes
1 cup sweet tamrind chutney
1 tea spoon chaat masala
1/2 tea spoon cumin powder

For Pani:
1/2 cup mint leaves
3-4 table spoon lemon juice
3-4 gree chillis
2 tea spoon ginger
1 tablespoon pani puri masala
1/2 tea spoon cumin powder
1/2 tea spoon corainder powder
1 tea spoon black salt


METHOD:

Grind mint leaves, green chillis, ginger and black salt into a fine paste using little water.Add Lemon juice and mix.Now add 1/2 litre of water in it and mix. Add pani puri masala , cumin powder, jeera powder and stir well.

Chill this water in refrigerator.Strain it and use.

Take the boiled white peas and add little salt, chat masala and cumin powder to them and mix. Add little salt in mashed potatoes and mix it well.

Now to assemble the pani puri.Keep all the ingredients ready. Take a puri and make a small hole in its center.Fill in 1 tea spoon of white peas mixture. Above it add 1 tea spoon of mashed potatoes mixture.

Add 1-2 tea spoons of sweet tamrind chutney.Add tamrind chutney according to your taste. If you want pani puri to be sweet add more and if you want spicy add little.Now deep this filled puri in chilled pani puri water and enjoy it.


NOTE:Boondi can also be added in the puris to make boondi pani puri.
If you do not like chiiled pani puri, use water directle without refrigerating.

Fresh Corn Bhel...!!!

This fresh corn bhel is fresh blanched corn mixed with tomatoes,potatoes and cucumber and spiced with different chat chutneys and spices.Its a very healthy and tasty combination.Just give it a try.

INGREDIENTS:

1 cup sweet corn boiled
1/4 cup finely chopped cucumber
1/4 cup finely chopped tomatoes
1/4 cup finely chopped potatoes
1/4 cup finely chopped onion
1/2 cup sev
2 table spoon corn chivda(optional)
2 table spoon chopped corainder leaves
1 table spoon lemon juice
1/2 tea spoon chat masala
salt

METHOD:

Take a bowl and add boiled sweet corn kernels in it. Add onion and mix well.

Now add cucumber, tomato and potato pieces and mix. Add green spicy chutney and sweet tamrind chutney according to your taste and mix. Add chat masala , salt and corainder leaves and stir.

Sprinkle lemon juice.Finally add half amount of sev,corn chivda and mix well.

Put in a serving dish. Garnish with remaining sev and corainder leaves.

Serve immediately.

Veg Grilled Sandwitch...!!!

I was staying in pune for last 8-9 months.Pune city is famous for many things. Its also famous for the restaurants or small cafes which are present there. Roadside snacks are also very famous over there like vada pav, pakodas, sandwitches,dabelis etc.There was one sandwitch wala opposite to the building where i used to stay. He used to make awesome grilled sandwitches garnished with sev and cheese.I have tasted many grilled sandwiches in many restaurants but till now , not even one sandwitch tasted like his. His were just superb.Me and my friends used to love them. Now i am in goa from past few months and i realy miss those sandwitches. So few days before i decided to try them at home. I used to see him making them many times.So i followed it. It became very tasty, my attempt did not fail.Its taste was almost close to his.-:))

INGREDIENTS:

8 sandwitch bread slices
1 cucumber
1 boiled potato
1 tomato
butter
chat masala
pepper powder
salt
1 cup shev
1 cheese cube
1/2 cup tomato sauce


METHOD:

Cut the cucumber, tomato, potato into thin round slices.

Remove the sides of the bread slices.Take two slices.Apply butter on each slice.Now apply the corainder mint chutney above the butter on each slice.

Layer potato,tomato and cucumber on one bread slice. Keep 4 slices of each on one layer.sprinkle some salt, pepper powder and chat masala in between each layer if you want spicy or above all layers.

Grill it in a toaster till it becomes light brown and crispy.

Remove it when done. Cut into two halves.Apply little sauce on top of it.Then sprinkle lot of sev on it.Grate cheese freshly over it.

Serve Hot...

Sweet Corn Butter Chaat...!!!

Sweet corn is very popular in india now a days.Many dishes can be prepared from it, like pulav,chaats etc. This steamed corn chat is very popular. You get it in malls and multiplexes.One cant resist to have steaming hot corns with diffrent spicies.This is my recipe which i had experimented and it tasted very good.

INGREDIENTS:

1 cup fresh sweet corn
3 tea spoon butter
1 tea spoon garam masala
1/2 tea spoon coriander powder
1/2 tea spoon chat masala
1/4 tea spoon pepper powder
salt

METHOD:

Steam the sweet corns. When they are hot take them in vessel and keep on very low flame.

Add butter and mix well.When the butter melts and mixes with it,add garam masala, corainder powder,salt and mix well.

Remove in a serving dish and sprinkle chat masala and pepper powder.

Serve hot.

NOTE: Amount of spices can be increased or decreased according to your taste.

Delhi Style Aloo Chaat...!!!

Aloo chaat is one of the famous chaats in north india. It is crisp fried potatoes tossed with spices and lemon juice.In delhi its very famous.I had aloo chaat of delhi and its damn tasty. I remembered the taste and tried at home and it turned out good.Here is the recipe.

INGREDIENTS:

3-4 potatoes
1 large chopped onion
2-3 green chillis finely sliced
2-3 table spoon corainder leaves chopped
1 big lemon
1" ginger piece
1 tea spoon chat masala
1/2 tea spoon chilli powder
1/2 tea spoon cumin powder
pinch pepper powder
salt
oil

METHOD:

Cut ginger into thin long strips. Apply lemon juice and little salt to them and keep in the refrigerator.

Chop the potatoes into small cubes of 1/2 inches.Heatoil in a kadai till medium hot. Deep fry the potato pieces till crisp and golden. Fry on low flame or else they remain uncooked and hard inside.Remove and keep on a absorbent paper.

Now take the pieces in a bowl. Add onion, chilli powder, chat masala, cumin powder, coriander leaves, green chillis and salt. Mix well.Squeeze lemon juice on it and miz again.

Now put it on a serving dish and garnish with ginger strips.

Serve immediately.

NOTE: You can even add tamrind-dates sweet chutney and green spicy chutney in this chaat you want it to be more spicy.

Palak Pakode Ki Chat...!!!

Palak pakodas tastes realy nice and if we prepare chat from them then it becomes cherry on a cake.This chat is very tasty and becomes ready in no time. It is a very tasty evening snack.

INGREDIENTS:

1 tea spoon chat masala
1 tea spoon roasted cumin powder
1 tea spoon chilli powder
200 grams sev
salt

METHOD:

Prepare palak poakodas from the recipe mentioned in the link.As you fry the spinach leaves some of batter will form little balls.Deep fry them till golden and crisp.Drain and palce them on absorbent paper like pakodas.

Keep the hot pakodas on a plate.sprinkle the cumin powder,chilli powder,chat masala and salt on the pakodas evenly.

Drizzle a little sweet tamrind chutney and green spicy chutney according to the taste on the pakodas.crush the batter balls and sprinkle on top along with sev. Add more chutney if required.

Serve immediately.

Sukha Puri...!!!

Masala Soda...!!!

Masala soda is a popular roadside appetizer, but can be made at home also . Home made masala soda is as tasty as outside as well as hygenic n safe.

INGREDIENTS:

500ml chilled soda
8 table spoon kokum syrup
1/2 tea spoon rock salt(kala namak)
2 table spoon lemon juice
4-5 black peppercorns(crushed)
10-12 fresh mint leaves(torn)
1/2 tea spoon jal jeera powder
1/2 cup crushed ice


METHOD:

Combine kokum syrup,rock salt,lemon juice,jaljeera and crushd black peppercorns in a glass jug and stir to mix well.

Take two glasses and add crushed ice and mint leaves.

In the glass jug add soda, stir well and adjust.Por this into the glasses containing ice and mint leaves

Serve immediately.

Vada Pav...!!!

Vada pav – Indian version of burger, must be one of the most loved street foods. Vada or batata vada is a spicy potato mixture with a coating of gram flour, deep fried in oil. Pav is a special kind of soft bread, almost square in shape.Its mre popular in mumbai and pune, not that popular here in goa But still i love it. I used to enjoy it when i used 2 go 2 mumbai in my summer hoildays. I had tried it at home, this is the outcome. It tasted quite good-:))

INGREDIENTS:

FOR VADAS

VADA STUFFING:

2 potatoes boiled
1 tea spoon chopped garlic
1/2 tea spoon turmeric
1 table spoon choped corainder
2 green chillis chopped
salt
oil

METHOD:

Chop the potatoes in small pieces.Take a pan and add oil. When it heats up add the garlic and stir. Then add the green chillis.

After 1 min add chopped potatoes and turmeric powder and mix well . Add salt. When its almost done add coriander leaves and remove from flame.Its ready...



VADA COATING

1/2 cup gram flour (besan)
1 tablel spoon rice flour (added for crispiness)
1/2 tea spoon chilli powder
Salt
oil
pinch of baking soda

METHOD:

In a small vessel, mix bason, red chilli powder,rice flour, eating soda and prepare thin batter using water.Heat oil in a pan, add 2 spoon of heated oil to the batter.Its ready

MAIN METHOD:

Heat oil for deep frying.
Make small round flat balls from the stuffing. Dip the ball into the coating batter and deep fry in hot oil. Take out on a paper towel.

OTHERE INGREDIENTS:
4-5 pav (breads)
5-6 green chillis( apply salt and deep fry)

MAIN METHOD:

Take a pav. cut open but make sure one end is still connected.Apply coconut-garlic chutney on the lower half and green chutney on the upper half.Now all the sweet tamrind chutney on green chutney. This is optional for those who do not like spicy stuff.

Now place the vada on the lower half and close the pav.Press it a bit to flaten.Below is apic of the bread with chutneys applied and the vada.


Vada Pav is ready.Serve with fried green chillis.

NOTE:
Heated oil is added in vada batter so that it absorbs less oil n becomes less oily.

Ragda Pattis...!!!

Today i am posting one more chat recipe which is also very famous 'Ragda Pattis'. I had never tried it at home before as i thought it will be very difficult to make it.But when i browsed for its recipe and found many of them. I tried to make my own recipe by mixing all of them and it turned realy nice.
                         

PATTIS RECIPE:

INGREDIENTS:

2 large cooked potatoes
1-2 slices of white bread(edges removed)
1/4 cup finely chopped onion
A pinch turmeric
1 tea spoon coriander powder
1 tea spoon cumin powder
1 tea spoon chilli powder
Salt
ghee

METHOD:

Grate the potatoes.Soak white bread in water and squeeze off excess water.

Mix it with all other ingredients. Make small balls of it, flatten on the palm of your hand and shallow fry them from both sides in ghee.

RAGDA RECIPE:

INGREDIENTS:

1 cup dry yellow peas(soaked overnight)
A pinch turmeric
Salt

METHOD:

Pressure cook the peas with turmeric and salt till they are soft and mushy.Turmeric makes them cook faster.

OTHER INGREDIENTS:

8-10 puris used for chats
1/2 cup finely chopped onion
4-5 strands of chopped coriander leaves
1 cup shev
1-2 tbl spn lemon juice
1/2 tea spn chaat masala
1/2 tea spn rock salt
1/2 tea spn cumin powder

This recipe also requires two types of chutneys.Sweet tamrind chutney and
Spicy green chutney. For its recipes check the link.


MAIN METHOD:

Take the hot ragda and mix rock salt, cumin powder and chat masala in it. Mix properly. Now add both the tamrind chutney and the spicy chutney in it and miz properly.Take them amount of chutnyes accordign to your taste.

There are two methods of setting ragda pattis.Above pic shows method one .

METHOD 1:

Take a plate and arrange pattis in it, 3-4 enough. Now add the hot ragda on it.

Add chopped onions, lemon juice, chopped coriander leaves, sprinkle some crushed puris.Add chutneys if required. Sprinkle shev according to your liking.Serve immediately.Above is a pic of it.



METHOD 2:

In a serving bowl, take hot ragda which has all the chutneys mixed.Now add 1 or 2 pattis, such that it soaks ragda.


Add chopped onions, lemon juice, chopped coriander leaves, crushed puris.Add chutneys . Sprinkle shev according to your liking.Serve immediately.Below is a pic of it.

Tawa Pulav...!!!

Tawa pulav is boiled rice tossed with fresh vegetables and spicy red chilli paste and masalas. Popular street food in india. I had tasted it in one of the restaurants in pune. We had loved it. So i decided to give it a try on day. So made it some days before refering to 2-3 recipes from net. Result was indeed good. I njoyed tossing it on tava the max...:-))

INGREDIENTS:

1 1/2 cup basmati rice
1 tomato chopped
2 cups mixed chopped vegetables(capsicum,carrot,cauliflower)
1/4 cup green peas(mutter)
2 onions chopped
1 tea spoon jeera
3 tea spoon chilli powder
3 table spoon pav bhaji masala
2 table spoon ginger-garlic paste
1 tea spoon cumin seeds
salt
3 table spoon coriander leaves chopped
1 table spoon limon juice
4-5 cloves
5-6 peppercorns
2" cinnamon
2 bay leaves
ghee

METHOD:

Wash the rice and drain water completely.Keep aside for 10 mins. Now take a pan and ghee. Add the rice in it and fry for 3-4 mins. Now add 3 cups of water. Add salt. Let it cook.

When the rice is done , spread it ona plate to cool and add little butter on it so that all grains seperate from each other.

Take green peas and cauliflower pieces ina bowl and add hot water to it and salt. They will become bit soft.

Heat a big tave.Add ghee. Add cumin seeds and saute till well browned.Add the onion and saute till lightly browned. Add ginger - garlic paste and tomatoes and saute till tomatoes become soft.

Now add all the vegetables and mix.Add pav bhaji masala, red chilli powder , salt and a little water. Mix and cook for two to three minutes. Stir nicely and countinously.

Now keep the veges aside of tava and add little ghee and add all the whole masalas and fry for 10-15 secs.Then mix it with tave bhaji. This are added later to avoid extra overwhelming taste which we would get if we add them before with cumin.

Now add little more ghee and add rice to it and mix it with the tawa bhaji. Add first only half quantity of rice, when its properly mixed add the rest ans keep on stiring countinously.

Add lemon juice and coriander leaves.Now toss the pulav with high flame for 2-3 mins.Remove from flame .

Serve hot plain or with raita.

Serves:3-4

Pav bhaji is a fast food dish native to Maharashtrians and is popular in most metropolitan areas in India, particularly in the Maharashtrian city of mumbai & Pune. In childhood when i use to go 2 mumbai i used to eat it a lot. Now we get it everywhere. Now we make it at home sometimes. Its very easy to prepare it.With ready made pav bhaji masala its ver simple.

INGREDIENTS:

2 cups boiled and grated potatoes
1/2 cup fresh/frozen green peas
1/2 cup finely chopped onions
3/4 cup chopped tomatoes
1/2 cup chopped capsicum
3/4 cup chopped cauliflower
2 tea spoon chili powder
2 table spoon pav bhaji masala
2 tea spn ginger-garlic paste
4-5 strands coriander leaves
7-8 pav(breads)(Laddi pav preffered)
butter
Salt

TO GARNISH
Finely chopped onion
chopped coriander
lemon piece


METHOD:
Boil vegetables like capsicum,cauliflower and green peas separately. Mash them a bit and keep aside.

Fry the onions in ghee or butter till onions turn slightly brownish. Add ginger garlic paste. Add tomatoes and fry till tomatoes are tender.

Now add mashed potato, cooked and mashed vegetables mixture and mix well. Add chilli powder, salt and pav bhaji masala.Add spices as per your taste.Add water if required to get the consistency. Use the water in which the vegatables were boiled.Cook until it gets a boil.

Remove from flame.Now pav have to be freid.Heat a tava .Slit the pav into half and apply butter both inside and outside.Add butter on tava and sprinkle some pav bhaji masala on it and put the pav on it. Turn and fry other side also Fry till it becomes crips and red.

Now serve the pav bhaji by adding little butter and by sprinkleing some lemon and garnishing with chopped onion and coriander leaves.

Puri Aloo Chana Chat...!!!

Well chats are famous in india and many people just love them. They are tasty and easy to make things. I have eaten many chats in india at many places. Each place has its unique taste and preparation. I decided to make 1 chat at home and made this one by refering and mixing many recipes from net. It became very tasty and chatpatta. Give it a try.

INGREDIENTS:
1/2 cup white chanas boiled and mashed a bit.
chutneys.
10 puris
2 onions finely chopped
2 potatoes boiled
1 tomato finely chopped
1 cup fine shev
2 tea spoon chat masala
2 teaspoon garam masala
1 teaspoon jeera powder
2 table spoons curd(optional)
2 table spoons finely chopped corainder leaves

Three types of chutneys are required . Follow the recipe of sweet and spicy chutney from here

Third chutney is as follows. This is of thin consistency campared to other two
Ingredients:

1 tea spn jaggery

3/4 tea spn tamarind extract
1 tea sppon chilli powder

1/2 teaspoon cumin powder

1 cup water

Salt

Method:
Mix all the ingredients and boil for around 5-10mins.Chutney is ready.


MAIN METHOD:

cut the potatoes into small pieces.Add 1 tea spoon each of garam masala,chat masala and jeera powder to it.

Take a plate. Crush the 5-6 puris and spread on the plate. Now add 1 layer of potatoes on them.

Now spread the boiled chanas paste on them.Now add the sweet chutney and the spicy chutney according to your taste on this mixture. now add chopped onions and tomatoes.

On them spread the third chutney accoridng to ur taste.Add some curd in between if required.

Now garnish it a with a layer of shev and corainder leaves.sprinkle some chat masala and garam masala.Add some sweet chutney on top if required.

Serve Immediately.

Bhel Puri...!!!

Bhel is a very famous and tasty chaat one can find anywhere in India. Everyone has a different style of making bhel. Any version of this dish is delicious.
Well this is one chaat recipe which i make frequently.I make different types of bhels and this is one of them. It is very simple and easy.Puffed rice or churmuri is the main ingredient of bhel.


INGREDIENTS:
2 cups puffed rice(churmuri/chirmuli)
1/2 cup finely chopped onion
1/2 cup shev
5 puris
2 table spoon chopped coriander leaves
1/4 cup farsan mix(optional)

CHUTNEY
Ingredients
2 table spoon tamrind soaked in 1/2 cup water
2 tea spoon chilli powder
1/2 table spoon jaggery
2 dates(optional)
salt

Method:
Grind all the things together into a paste. Add water to get the required consistency.It shoud not be too thick like chutney used for shev puri. It must be of thinner consistency.

METHOD:

Take a bowl. Mix the puffed rice with the shev and farsan mix. Crush some puris and add to this mixture.Now mix the onions with it.

Add some corainder leaves.Then add little chutney and mix well. Add the chutney accoriding to your taste.

Now put it in a plate and garnish with shev corainder leaves and crushed puris .

Serve immediately as the puffed rice becomes soft very soon.

Shev Batata Puri...!!!

I am a big fan of chaats like pani puri,sev puri, bhel puri etc...when ever i pass by those chat stalls i cant control my self from having atlest one. This days its rainy season here so i dont prefer them as its not good to have them in this season as puri n all become soft. I wanted 2 have my favourite sev puri and coudnt move out as it was raning heavily... so i decided to make at home. I had never tried this at home anytime before. I searched on net and got lot of recipes, i combined 2-3 of them and made this one and it turned out to be awesome. My dad who do not like chaats also liked it...:)



INGREDIENTS:
14 puris
2 onions finely chopped
2 potatoes boiled
white chanas boiled and mashed a bit
1 cup fine shev
2 tea spoon chat masala
2 teaspoon garam masala
1 teaspoon jeera powder
2 table spoon finely chopped corainder leaves

Two types of chutneys are required. Recipes are as follows.

SWEET CHUTNEY
Ingredients:
5-6dates
2 tea spn tamarind soaked in water
1/2 tea spn roasted cumin seeds
1/2 tea spn coriander powder
2 tea spns jaggery
Salt

Method:
Make a thick paste of tamrind. Add all the remaining things and grind to a smooth paste.


SPICY CHUTNEY

Ingredients:
1 tea spn oil
1/2 tea spn mustard seeds
1/2 cup coriander leaves
3-4 green chilies
1/2 tea spn chili powder
1 tbl spn dessicated coconut
Salt

Method:
Heat oil and add mustard seeds. When they start to pop up, add green chilies, coriander leaves, coconut, chili powder, salt and fry for 2-3 mins. Grind it into a smooth paste.


MAIN METHOD:

Mash the potatoes and add salt to them.

Add salt ,1/2 chat masala and 1/2 garam masala, jeera powder to the chanas.

Now make a opening on the puris by breaking them in middle. Fill them with 1/2 teaspoon chana paste.Then add the mashed potato may be half teaspoon. this quantities depends on individual taste.

Now put the sweet chutney on top of it and then the spicy chutney.Adjust according to your taste. I added 1/2 teaspoon sweet and 1/4 teaspoon spicy chutney.

Now put some amount of chopped onions on this mixture and fill the puri.Add a lot of shev on it.

Now sprinket chat masala and some garam masala on top of it.Garnish with corainder leaves.Add some sweet chutney on top if required.

Shev batata puri is ready. Serve imediately.
