TANGRI BHARWAAN KEBAB (STUFFED CHICKEN LEGS)....!!!

"Bharwaan Tangri"  is a very delicious grilled chicken dish....If u try it once m sure ur goin to include it in your next party menu....Here chicken legs are stuffed with  a stuffing including chicken kheema(chicken mince) , cheese and cashewnuts which gives  them a superb taste.




INGREDIENTS:
  • 4 chicken drumsticks(Choose legs which are big in size and broad in shape)
First Marinade :
  • 1 table spoon lemon juice
  • 1 tea spoon red chili powder
  • 1/2 tea spoon salt
Second Marinade :
  • 1 cup thick hung curd
  • 1/2 cup thick cream
  • 2 table spoon grated cheese
  • 1 tea spoon shahi jeera crushed
  • 1 table spoon cornflour
  • 1-2 tea spoon red chiili powder
  • pinch of turmeric
  • 1 tea spoon garam masala
  • 2 table spoon ginger-garlic paste
  • 1 table spoon tandoori masala
  • 2 table spoon chopped corainder
  • 3 tea spoon oil
  • salt
Stuffing:
  • 100 grams chicken kheema
  • 1 finely chopped onion
  • 1/2 tea spoon cumin
  • 1 tea spoon ginger-garlic paste
  • 2 table spoon chopped cashewnuts
  • 1 green chilli chopped
  • 1/2 tea spoon cumin powder
  • 1/2 tea spoon chiili powder
  • 2 table spoons of grated cheese
  • 2 table spoons of chopped corainder.
  • salt
  • oil

METHOD:

Wash and pat dry the chicken legs.Pick each tangri and make a very deep cut lengthwise on backside of leg with a knife.Go deep but see the bottom is intact,so that the filling does not come from other side.Mix the ingredients of the 1st marinade and apply to chicken legs and marinate for 1 hour.

Now to make stuffing. Heat 1 table spoon oil in a pan and add cumins seeds, whn they splutter add fine onion and saute it till transparent. add ginger-garlic paste and green chilis and saute till onion turns golden. Add chicken mince andstir fry for 4-5 mins.Add all the ingredients listed under it except cheese. Remove from flame and add grated cheese and keep aside to cool.

With your fingers make maximum space in the tangri cuts to stuff. Divide the stuffing in 4 parts and 
make rough balls of the stuffing. fill each deep cut of each tangri with each stuffing ball.Try to fill maximum as posible.

Mix all the ingredients listed under 2nd marinade.Hold each tangri carefully and spread the marinade all over it. The legs should have a thick coat of the marinade on all sides. Marinade them for 2-3 hours.

Place the stuffed marinated legs on greased  grill.Grill for 20 mins at 180 deg.Baste with 2 table spoons of oil and again grill them for more 15 mins or till done.

Check with knife and remove from oven. Serve hot with yogurt mint dip.

Preparation time : 40 mins.

Healthy Paneer Tikka Wraps...!!!

This Paneer Tikka Wraps are very quick to make and very tasty to...Till now to who ever i have served this wraps  they have just loved them a lot and have asked for more...:-) So i am posting their recipe here. 






INGREDIENTS :


For Paneer Tikka :
  • 200 grams fresh paneer cut into 1" cubes
  • 2 capsicum s cut into 1" squares
  • 2 big onions 
Marinade For Tikka :
  • 1/2 cup thick curd
  • 2 tea spoon besan
  • 1/2 tea spoon amchur powder
  • 2 tea spoon tandoori masala
  • 1/2  tea spoon garam masala
  • 1 tea spoon ginger-garlic paste
  • 1/2 tea spoon chili powder
  • 1/2 tea spoon jeera powder
  • 1/2  tea spoon chat masala
  • 2 table spoons of chopped coriander
  • 1/2 tea spoon sugar
  • salt
For Salad :
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrot
  • 2 table spoons of chopped corainder
  • 1/2 cup shredded capsicum
  • salt
  • chat masala
Other Ingredients : 
  • 4 wheat flour rotis cooked
  • 3 table spoons low fat eggless mayonnaise 
  • 1/2 cup green chutney (Grind to fine paste pudina 1/2 cup, coriander 1 cup, 2-3 green chilis ,tamarind pulp 1 tsp,garlic 4 pods,ginger 1/2",fresh coconut 1 tbsp,chat masala,sugar n salt with little water)
  • oil
METHOD:


Mix all the ingredients listed under marinade. Cut the onion into 4 quarters and then separate each layer.Now take a big bowl and add  the paneer cubes,chopped capsicum  & onion. add the  prepared marinade over them and mix it properly with the paneer n veges. Keep aside for 15 mins.


Take satay sticks or skewers and prick one piece of capsicum, then one paneer cube then one onion pieces and so on. Continue this pattern till the end of stick. Similarly prepare such tikka sticks.


Now heat a flat griddle and sprinkle  2 tea spoons of oil all over it. Put each satay stick over it and sprinkle little oil over them and keep on turning them after 1-2 mins. After 4-5 mins when they are almost done take each satay stick and hold it over naked flame and keep on turning and roasting it till little black patches appear on the onion, paneer and capsicum.This gives the paneer tikka the perfect tandoori flavor. When the tikkas are done remove them from fire and keep aside.


Mix all the veges listed under salad in a bowl and sprinkle little salt and chat masala over them. Take a roti and spread the green chutney all over it on one side. Then above it spread 2 tea spoons of mayonnaise .Sprinkle the shredded veges salad all over it. Then place one paneer tikka stick over it and carefully separate the stick from the panner cubes and let the paneer cubes be in a line over the roti. Carefully roll the wrap and prick with a toothpick.


Serve immediately.


Preparation Time : 15 mins


NOTE : You can even shallow fry the  wrap in butter after its done if u like it more crispy.
Instead of wheat flour roti you can also use maida roti. I have used a healthy option here.

Chicken Burritos With Smoky Red Sauce...!!!!

First of all i would love to congratulate " Team India " for winning the ICC World Cup yesterday .I am feeling very very happy for my country.
My todays post is dedicated to Indian Cricket Team:-)))


I had not posted any Mexican dish in this blog recently so today i a posting chicken burritos which are stuffed with a mildly spiced chicken stuffing and drizzled with smoky and spicy red sauce.These burittos are very filling as they contain rice, chicken and also cheese so they can be served as a main course item.




INGREDIENTS:


For Chicken Stuffing:
  • 400 grams boneless chicken 1/2" pieces
  • 11/2 cup fully cooked rice
  • 5 table spoon butter
  • 2 tea spoon chopped garlic
  • 11/2 cup milk
  • 2 table spoon maida(flour)
  • 5 table spoons grated cheddar cheese
  • 2 table spoon chopped pickled jalapeños or 2-3 chopped green chillies
  • 2 table spoons chopped fresh coriander
  • salt
For Smoky Red Sauce:
  • 6 ripe tomatoes
  • 7-8 dry kashmiri red chillies
  • 4-5 garlic cloves
  • 1 tea spoon red chilli powder
  • 1 seasoning maggi cube
  • 3/4 tea spoon dry basil
  • 3/4 tea spoon dry oregeno
  • 3 table spoon tomato sauce
  • salt
For Tortillas:
  • 11/2 cup maida(all purpose flour)
  • warm water
  • 2 table spoon oil
  • salt
METHOD:


First to make the tortilla dough mix maida, salt and oil together. Then add warm water and kned it into firm and elastic dough.Wrap it into wet cloth and keep aside for 30 mins.Make small balls and roll each into big and thin chapati.Heat a griddle/tawa. Cook each rolled chapati for 1 min on one side and then turn and cook for 20 secs while reducing heat till light brown specs appear.Remove from heat and repeat the same with remaining dough.


Now to make smokey red sauce take each ripe tomato and piece it with a fork and roast them on naked flame for 3-4 mins each till they get black patches.Repeat the same with the kashmiri red chillis.Let them cool now.Now chop the tomatoes without peeling their skin, this will only give the sauce the smoky flavour.Now take chopped tomatoes and roasted chillis and all the other ingredients listed under smoky red sauce in a mixie. Add water and grind it into a smooth sauce.


Now heat a pan and add 1 table spoon butter. Add the prepared sauce and give it one boil.Cook till it becomes thick for more 2-3 mins.Remove it and keep it aside.


Now finally to make the fillling heat a pan and add the remaining butter.Add chopped garlic and saute for 30 secs.Add chicken pieces and saute them till they get slightly brown on various sides.Now close the lid and let the chicken get cooked for 5-6 mins. When chicken is done add maida and stir fry it for 1 min.Add milk and cook till the sauce gets thicker.Add grated cheese and cook for more 2-3 mins.Remove it from flame.


Now to the hot chicken filling add boiled rice, chopped jalepenos and chopped corainder and salt and mix well.


Now to assemble , place 3-4 table spoon of chicken filling on a tortilla, and roll them to firm rolls.Repeat it with other tortillas.Now heat a griddle and add butter and shallow fry the burritos till light brown on all sides.


Now drizzle hot smoky red sauce on them and serve them  hot.

Mushroom Wraps in Creamy Spinach Sauce...!!!

Mushrooms n spinach is a awesome and healthy combo. This mushroom wraps in spinach sauce is a tasty and healthy one pot meal. If you want a change from your regular food then do try this continental dish .


INGREDIENTS:


For Mushroom Stuffing:
  • 1 cup finely chopped mushrooms
  • 1 onion finely chopped onion
  • 2 table spoon finely chopped cabbage
  • 3-4 table spoon grated cheese
  • 1/4 tea spoon pepper pwoder
  • 1 green chilli chopped
  • 1/2 tea spoon ginger- garlic paste
  • salt
  • oil
For Pancakes:
  • 3-4 cup maida( plain flour)
  • 11/4 cup milk
  • 1/4 tea spoon pepper powder
  • pinch of baking powder
  • salt
For Spinach Sauce:
  • 1 1/2 cup chopped spinach
  • 21/2 cups milk
  • 2 table spoon cornflour( or maida)
  • 2 table spoon butter
  • 1/4 tea spoon pepper powder
  • salt
Other Ingredients:
  • 2 table spoon tomato ketchup
  • 2 tea spoon red chilli sauce
  • 2-3 table spoon cheese

METHOD:


For the pancakes sift maida, baking powder and salt together. Add pepper powder and milk and beat well to get a  smooth batter of pouring consistency . Keep aside for 10 mins.Now to make pancakes heat a non stick pan. add 1 tea spoon oil over it.Sprinkle a pinch of salt over it. Take a wooden spoon and spread oil n salt all over the pan. 


Now remove the pan from fire and pour 1/3 cup of batter on it and tilt the pan so that the batter spreads to a thin pancake. Now keep the pan back on fire and let the pancake get cooked till edges turn brown.Turn the pancake and cook it for 1 min.Make 3 -4such pancakes and keep them aside.


For the stuffing heat 2 tea spoon oil in  a pan.Add onions and saute them for 2-3 mins.Then add mushrooms and saute for more 3-4 mins.Add green chillis and ginger garlic paste and mix well.Add chopped cabbage and stir fry for more 2-3 mins.Add salt and pepper powder. Remove from fire and add grated cheese and mix and keep it aside.


Take one pancake with light side on top.Mix tomato sauce and red chilli sauce.Spread one tea spoon of the tomato-chilli sauce mix on it. Then spread 2 table spoon of mushroom stuffing in a row on top.Then roll the pancake to get a tight roll, seal it with tomato sauce.Now turn the roll and keep the joint side down.Cut each roll in 2 pieces each of about 2 inches long. Keep them aside.Repeat this with all the remaining pancakes and stuffing.


Now for the spinach sauce heat 2 table spoon of butter in a heavy bottomed kadhai.Add chopped spinach and stir for 2-3 mins till the water dries up .Add cornflour or maida and stir for 1 min.Add milk and stir continuously till it boils and thickens. Add salt and pepper powder and stir.Simmer on low heat for 2-3 mins  to get thin pouring sauce which coats the spoon.Remove from fire.


Take a Over proof glass serving dish. Spread 1/4 of the spinach sauce in it. Arrange the mushrooms rolls on top. Spread the remaining sauce on top to cover the rolls completely.Sprinkle grated cheese on top.Bake at 200 degrees for 10-12 mins.


Serve with toasted bread to make a complete meal.

Cheesy Prawns Wraps...!!!

Hello Friends...Was off from blogging from quite a long time but cant be away from it for long time:-)...I am posting a cheesy yummy prawns wraps today... I have stuffed wheat tortilla with a prawns and egg mix and finished off with mozzarella cheese. the combo of prawns with melted mozzarella gives a nice taste.



INGREDIENTS:
  • 1 cup medium sized prawns chopped in 3-4 pieces
  • 2 tea spoon lemon juice
  •  2 wheat tortillas
  • 2 tea spoon chopped garlic
  • 2 tea spoon chopped ginger
  • 1 onion finely chopped
  • 1/2 tea spoon turmeric powder
  • 1/2 tea spoon chilli powder
  • 1/4 tea spoon pepper powder
  • 1/2 tea spoon garam masala
  • 1 table spoon tomato ketchup
  • 1 tea spoon soya sauce
  • 1 egg
  • 200 grams mozzarella cheese
  • butter
  • oil
  • salt


METHOD:

Marinade the chopped prawns with turmeric powder, little salt and lemon juice and keep for 20 mins.Heat a pan and add little oil. Add chopped ginger and garlic and saute for 2 mins and then add chopped onion and saute for 3-4 mins till it turns light brown.

Add marinated prawns pieces and cook till done.Add salt, chilli powder,.Saute for 1 min and then add tomato ketchup and soya sauce and garam masala.Cook till done and remove from flame.Let it cool for 5-10 mins.

Beat and egg in a bowl and add little salt and pepper powder in it.Add the prawns stuffing made before in it and mix it well.

Now heat a non stick pan and add little oil/butter in it. Put the tortilla and on it pour the half of prawns and egg mixture on it. Spread it evenly on the whole tortilla and let it get cooked.When the egg is cooked flip it and let it get cooked on the other side. After 2 mins flip it again and add grated mozzarella cheese on the egg side and cook till it gets melted.

When cheese is melted roll the wraps and serve them hot.

Achari Paneer Tikka...!!!

I am a big fan of tikkas and kebabs and trying them with different flavours is a very interesting task.So i made this "Achari Paneer Tikka" recently by using achar masala(Pickle spice powder) and some regular ingredients.Pickle is a must with food in many regions of India  , so why not use it to make some other tasty dishes.This is a very quick,easy and tasty starter.I added whatever spices i found to make it more spicy but it will get its main taste from the achar/pickle spice powder.You can use any achar/pickle powder for it.I have used a homemade pickle spice powder, but if you do not have homemade achar/pickle powder you can even use readymade pickle spice powder as its very easily available in stores.

       


INGREDIENTS:

  • 250 grams paneer (cottage cheese)
  • 2 capsicum
  • 2 tomatoes
  • 1 cup yogurt
  • 1 table spoon of homemade/readymade achar masala(Pickle spice powder)
  • 1 tea spoon chilli powder(optional)
  • 1/2 tea spoon turmeric powder
  • 1 tea spoon amchur powder(dry mango powder)
  • 1 tea spoon cumin powder
  • 1/2 tea spoon chat masala
  • 1/2 teaspoon sugar
  • salt
  • oil



METHOD:


Put the yogurt in a muslin cloth and tie a knot.Hung it for 1 hour so that all the water drips down from it.Cut the paneer intoone  inch cubes.Similarly cut capsicum and tomatoes in one inch square pieces.


Take the hung yogurt in a bowl.Add chilli powder, turmeric powder,cumin powder,amchur powder, chat masala and achar/pickle spice powder,sugar and salt  to it.Mix it well so that the spices get distributed evenly.Add the amount of spices according to your taste.Add 2 tea spoon oil also and mix.Marinade is ready.


Now take the paneer cubes and chopped tomato and capsicum pieces in a big bowl.Add the marinade  mixture to it ans mix it well..Apply the marinade gently to the paneer cubes or else they tend to break.


Take some satay/skewer sticks.Take one stick and thread alternate layers of marinated capsicum, paneer cube and tomato.Repeat it with the other sticks.

Heat a tawa/griddle with little oil or a stone griller or tandoor and grill it for 2-3 mins on each side till done.


Serve hot.

Vegetable Seekh Kebab & Guest Post...!!!

I had posted lot of sweet recipes recently so now i am posting a spicy and tangy recipe or else my blog mite be prone to diabetes...he he...Veg Seekh Kabab is not only one of the most famous and delicious kebabs but they are also very easy to prepare them.I make both chicken as well as vegetable seekh kebabs.But today i am posting vegetable seekh kebab recipe as i had made them few days back. I have made changes in it according to my choice.They really taste delicious and are very easy to prepare.One of the best starters to serve for a party at home:-)


INGREDIENTS:
  • 2 -3 medium sized potatoes boiled
  • 1 cup green peas
  • 3/4 cup grated carrot
  • 3 table spoons gram flour(besan)
  • 1 tea spoon caraway seeds(shahi jeera)
  • 1 table spoon ginger-garlic paste
  • 2-3 green chillis chopped
  • 1 tea spoon tandoori masala
  • 2 tea spoon chat masala
  • 2 table spoon cashewnut powder
  • oil
  • salt
  • 10 satay sticks

METHOD:

Blanch the green peas in hot water till they become soft.Grate the boiled potatoes.Heat little oil in a deep pan and add caraway seeds in it.After 1 min add the besan and roast it for 2-3 mins till the aroma comes.Keep it aside.

Grind blanched green peas and green chillis coursely, do not add water.Heat little oil in a pan and add grated carrot in it.Saute it for 1 min and add the grinded green peas and chilli mixture and mix it well and cook for 1-2 mins.Add the roasted gram flour and caraway mixture and saute for 2 mins.Then add the ginger-garlic paste and saute for more 2 mins and remove from flame and let it cool.

In a bowl take the boiled and grated potatoes and add the cooked vegetable mixture.Then add salt,chat masala, tandoori masala and cashew nut powder.Mix it to form a soft mixture.Divide into 10 equal parts.

Take a portion of this mixture and place at the center of a satay stick and press it around the stick till its evenly layered.Press the ends firmly.

Heat a tawa and add little oil and shallow fry this kebabs till golden brown on all sides for 5-6 mins or you can even grill them in a tandoor or oven.

Spinkle chat masala and serve hot.

NOTE: If you like you can even add grated cabbage in this mixture and even sweet corns.

Preparation Time: 25 mins.

Yummy Vegetable Manchurian Rolls...!!!

This vegetable manchurian rolls is a very tasty and filling snack...if ur a manchurian lover you will definetly love them...I love making this snack often as its quick , filling and tasty snack.


INGREDIENTS:
  • 4 long bread rolls
  • 1 1/2 cups Shredded cabbage
  • 1 cup grated carrot
  • 1 cup very finely chopped caulifower florets
  • 1/2 cup chopped spring onion greens
  • 1/2 cup finely chopped onions
  • 1/2 cup + 2 tea spoons cornflour
  • 1/4 cup maida(all purpose flour)
  • 2 table spoons soya sauce
  • 1 table spoon tomato ketchup
  • 1-2 tea spoons green chilli sauce(optional)
  • 1-2 table spoons finely chopped garlic
  • 1-2 table spoons finely chopped ginger
  • 2 tea spoons finely chopped green chillis
  • 1 tea spoon vinegar
  • 1/2 tea spoon sugar
  • salt
  • oil

METHOD:

Take a bowl and add shredded cabbage, grated carrot and finely chopped cauliflower florets.Add salt and 2 tea spoons soya sauce in them and mix it well so that its evenly coated with it.Now add the corn flour and maida in them and bind them well.

You can add more maida and cornflour if required but remember the ratio of quantity added should be 1:2 i.e cornflour should be double of maida.This gives the required crispiness to the balls when fried.Bind the mixture properly and do not add even little water as if water is added the balls will absorb more oil while frying.

Shape them into marbel size firm balls and deep fry them in hot oil till golden brown and crisp.Remove them on absorbing paper and keep aside.

Now to make the sauce heat little oil in a pan and add the chopped onion and saute it till soft then add the chopped ginger, garlic and green chillis and saute for 2 mins. Add the remaining soya sauce , tomato ketchup, vinegar and stir well.Now add salt and sugar and cook for 2 mins.

Mix 2 tea spoon cornflour in 3/4 cup water and mix it well.Add it to the cooking mixture and stir well.Cook till it thickens.You can add little water if required to get the required consistency.Add the spring onion greens and the fried manchurian balls.Close and cook for 3-4 mins.Manchurian is ready.

Slit the bread rolls without cutting through, apply a thick layer of the gravy from the prepared manchurian.Arrange 4-5 balls from the manchurain gravy and close the roll and serve while its hot.

Tastes best when served hot.


TIP: If you have some leftover cooked noodles you can even add them while mixing the manchurian balls mixture.They bind the balls very well and balls become more crispy.

Spicy Mexican Bean Burritos...!!!

Burritos one of the famous snack of mexican cuisine is mostly a tortilla filled with beans, rice and meat.But i have made this burittos little spicy, of less calories yet they are very very tasty..They have got a spicy hot sauce which give them a nice spicy taste.This hot sauce is realy very tasty n nice you can use it as sauce for other snacks also.I have tried it make it a bit low calorie by not using cheese and butter and the sour cream used i have made using only yogurt instead of cream so a little of less calories there:-).I have also fried this burritos till crisp.



INGREDIENTS:

For Hot Sauce:
  • 10 long dry red chillis
  • 1 tomato very finely chopped
  • 1 table spoon finely chopped garlic
  • 1 table spoon tomato ketchup
  • salt
  • oil
For Bean Stuffing:
  • 1 cup red kidney beans
  • 2 green chillis
  • 1 medium onion chopped
  • 1 table spoon chopped garlic
  • 1 table spoon above hot sauce
  • oil
  • salt
For Sour Cream:
  • 1 cup thick yogurt(low fat)
  • 1 tea spoon tabasco sauce
  • salt
For Outer Tortilla:
  • 1 cup wheat flour(or maize flour)
  • 3/4 cup all purpose flour
  • 1/2 tea spoon oil
  • salt

METHOD:

Soak the red kidney beans is water for 7-8 hours.Then pressure cook them using green chillis and salt.Keep aside. Kned the dough using all the ingredients.Keep it aside for 1 hour.

For hot sauce first soak the dry long red chillis for 2 hours in water and then boil them for 5 mins and grind to a fine paste.Heat a pan with little oil and add chopped tomato.Saute it for 2 mins till they becomes soft.Then add tomato ketchup and saute for 20 seconds.Add chopped garlic and again saute for 1 min.Add salt and the red chilli paste and cook for 2 mins and remove from flame and keep aside.

For the beans stuffing heat pan with little oil and saute onions till light brown.Add garlic and saute for 1 min.Add the cooked rajma, hot sauce and salt and mix well.Cook for 2 mins and remove.

For sour cream put the yogurt in a muslin cloth and tie and knot and hang it for 2-3 hours so that all the water in it sips down.Then add salt and tobasco sauce and mix it.Sour cream is ready.

For the outer tortilla.Make small balls of the dough and roll them into rotis.Heat a tawa and roast them till they get cooked.Do not over roast them they should remain soft.Cool them.

Finally to make the burritos take a fried roti.Add the bean stuffing in the center in a line.Add 2 tea spoonof hot sauce above it and little sour cream.Now to roll it, fold it 1 inch on both sides in which stuffing is added so that it does not fall when rolled.Then wrap it tightly like a normal wrap.

Eat it like this or heat a griddle and add little oil.Fry it on all sides till brown and crisp.

NOTE:I have used dry long red chillis for hot sauce which are less pungent and give a nice taste and red colour.They are local chillis here and the variety is called as "begdi".They are different and more spicy then the kashmiri chillis.If you do not get them use regular red chillis but according to your taste.

Spring Rolls With Sweet N Sour Sauce...!!!

Spring roll is a very popular snack and starter in restaurants.In india they are mostly deep fried and served.I like this spring rolls so wanted to try them at home,but since they are deep fried i was not in a hurry to try them.But somedays back i came to know this sping roll wrap recipe which can be shallow fried.I was very excited to try and made them soon.You get ready to use spring roll wraps in stores, but i wanted to make from scratch so i tried it. I made the stuffing using basic indo-chinese ingredients and veges.They were very tasty and with less oil.I also tried this sauce with it using whatever ingredient i felt like adding and sauce was just perfect for them.


INGREDIENTS:

For Outer Wrap:
  • 1 egg(or milk)
  • 3/4 cup all purpose flour(maida)
  • salt
  • oil
  • butter

For Filling:
  • 2 cups cabbage thinly shredded
  • 1 cup carrot very finely sliced(like matchsticks)
  • 3/4 cup capsicum thinly sliced
  • 4 spring onions chopped(whites and greens seperated)
  • 1 tea spoon finely chopped garlic
  • 1 tea spoon finely chopped ginger
  • 1 tea spoon chilli sauce
  • 2 tea spoons soya sauce
  • 1/4 tea spoon pepper powder
  • salt
  • oil

For Sweet N Sour Sauce:

  • 3/4 cup tomato ketchup(or puree)
  • 1 tea spoon minced garlic
  • 1 tea spoon minced ginger
  • 1/2 tea spoon thinly sliced green chillis
  • 1 tea spoon soya sauce
  • 1 tea spoon chilli sauce
  • 1 tea spoon white vinegar
  • 1/4 cup spring onions chopped
  • salt
  • pinch of sugar
  • oil

METHOD:

To make the batter for the wrap, Beat egg in a bowl.Add maida to it and whisk it well , add water little by little to get a smooth batter with dosa batter consistency.Add salt and mix.

Heat a nonstick pan and add little oil.Pour a cup full of batter to form a big thin pancake.When its done on one side flip it and cook the other side.You will get a light yellow colour bit chewy pancake.Repeat the same with the remaining batter.

Now to make the stuffing heat oil in a pan.Add chopped ginger garlic.Saute for 20 secs.Now add the spring onion whites and again saute for more 30 seconds.Now add chopped carrots and capsicum and saute them for few seconds.

Add the shredded cabbage and salt.Saute for few more seconds.Veges should remain crispy, do not cook them much.Now add soya sauce and chilli sauce, cook for few more secs.Now finally spinkle pepper powder and add spring onion whites and toss.Remove from flame.Let it cool.


Make a paste using little flour and water to seal the roll.Take a cooked pancake and spread the filling in the center and tightly roll it into a roll.Seal the edge with the flour paste so that it does not open up.

Heat a tawa and add little oil.Carefully put the sealed roll on it with sealed side down and shallow fry it.When one side done, turn and let the other side get browned.Now add little butter and let the roll get brown and crispy.Cut the rolls.

For the sauce, heat a small kadai and add little oil.Saute ginger and garlic in it for 1 min.Now add green chillis and saute more.Now add chilli sauce and soya sauce and cook for 10 seconds.Add in tomato ketchup and cook on low flame for 30 seconds.Add water to adjust its consistency.Add vinegar, little salt and pinch of sugar.Remove from flame and add chopped spring onion.


Serve the hot spring rolls with sweet N sour sauce.


NOTE: Vegetarians can use little milk in the batter instead of eggs,but taste will change a bit.
You can even deep fry this rolls instead of shallow fry.

Chicken Shawarma...!!!

Shawarma is a Middle-Eastern sandwich-like wrap of shaved lamb, goat, chicken or a mixture of meats. The meat is placed on a spit or rotisserie and may be grilled on for as long as a day. Shawarma is a fast-food staple across the Middle East and North Africa.It is thinly sliced meat, wrapped or filled in pita bread with pickled and/or plain veggies and sauces is a delicious quick meal.This is the traditional shawarma, but in india we get different shawarma rolls and wraps with different sauces and dips.Pita bread is the most common bread of middle east so its mostly used for shawarma there.This shawarma rolls are one of the famous street foods in arabic countries .This is my 2nd middle eastern recipe as i was interested in trying some of them, so i tried it with little modification and it tasted very good,I liked the way chicken is marinated and cooked and when it gets stuffed in pita pocket with pickled veges and sauces it tastes awesome.I even added vinegar pickled veges in it and it tasted more good,

INGREDIENTS:

1 cup boneless chicken pieces
3-4 pita breads(or any other bread)
1/4 cup tahini sauce( refer recipe here)
olive oil

For Marination:
1/2 cup yogurt
2 table spoon vinegar
2 table spoon lemon juice
1-2 tea spoon chilli powder
2 table spoon ginger-garlic paste
1/2 tea spoon turmeric
1/2 tea spoon pepper powder
2 green cardomoms
salt

For Salad:

1/2 cup sliced onion
1/2 cup sliced tomatoes
2 table spoon yogurt
1 table spoon mint leaves
1/2 tea spoon pepper powder
1/4 cup shopped cucumber(optional)
1 tea spoon tahini paste( for recipe refer here)
salt

For Yogurt Sauce:

1 cup yogurt
2-3 table spoon lemon juice
2 table spoon garlic paste( or crushed garlic)
salt

For vinegar pickling:

1/2 cup sliced carrot
1/2 cup sliced beet root
3-4 green chillis
1 cup white vinegar
1 tea spoon sugar

METHOD:

Cut the chicken in small pieces and add all the ingredients of marination and keep it for 7-8 hours in refrigerator.

For pickling veges add sugar to vinegar and heat it till it gets slightly warm and add the sliced beet root pieces , carrots and green chillis.Keep overnight.Because of this the veges will have very nice and different taste, even the chilli will become less pungent.

To make yogurt sauce whisk the yogurt well and add salt, garlic paste and lemon juice and whisk it again to form a smooth sauce.You can even pass it and squeeze through muslin cloth to become more fine and smooth.

For salad mix sliced tomatoes, onions ,salt and pepper powder.Add tahini and yogurt and mix well.

Now finally to cook the chicken you have two ways either you can apply olive oil and grill it in oven or you can cook it in pan.I used pan to cook.Here add little olive oil in a pan and add the marinated chicken pieces and let them get cooked on medium flame for 20-25 mins.Be sure not to overcook it. If chicken becomes a little dry, add a few drops of water after every 5 mins throughout cooking duration, this is very important step so that chicken remains moist and gets cooked well.

Now finally to assemble the shawarma.Cut the pita breads in two halves.Apply tahini sauce at one side and yogurt sauce at other side on the pita bread pockets.Add the hot chicken pieces ,salad and vinegar dipped veges.Drizzle yogurt sauce in middle and serve immediately.


NOTE: While cooking chicken pieces i had added 1 tea spoon tandoori masala to make it more spicy.Its not in the traditional recipe.
If you do not get pita bread you can use normal bread also.
If you get very thin pita bread then you can even wrap all the things with it like a frankie.

Falafel Frankie...!!!

As i am trying some middle eastern recipes this days, this is my first recipe. I made falafel.Falafel is a fried ball or patty made from spiced chickpeas and/or fave beans. Originally from Egypt, falafel is a popular form of fast food in the Middle East. It is mostly served alone as a snack or in bread called as pita bread along with salads, pickled vegetables and hot sauce, and drizzled with tahini based sauces.I made this falafel and made a frankie from them. Its taste was nice and different.We must try some different cuisine for a change sometimes.

INGREDIENTS:

For Falafel:

1 cup chickpeas
2 table spoon lapsi rava(wheat semolina)
1 table spoon besan
3/4 cup chopped corainder leaves
1/2 cup finely chopped onions
1 table spoon sesame seeds
1 tea spoon corainder powder
1/2 tea spoon cumin powder
1/4 tea spoon pepper powder
3-4 green chillis
1 table spoon parsley
4-5 garlic cloves
salt

For Salad:
1 cup chopped cabbage
1/2 cup sliced onion
1 table spoon lemon juice
pepper powder
salt

For Frankie:
1 cup wheat flour
1 cup maida(all purpose flour)
1/2 tea spoon baking powder
1 table spoon butter
salt

1/2 cup Tahini Sauce

METHOD:

Soak the chickpeas in water for min 7-8 hours.Now grind chickpeas along with lapsi rava, besan,green chillis, garlic,corainder,cumin powder,corainder powder,pepper powder,parsleyand baking powder.Add very little water while grinding, it should form a very dry course paste.Keep the mixture covered for 1-2 hours.Then mix raw chopped onions, salt and sesame seeds in it.

To make the dough for frankies mix wheat flour,maida,salt,butter and baking powder and kned it using cold water.Keep the dough for 30 mins.

Make small balls of the prepared chickpeas mixture and flatten them on hand.Deep fry them till golden brown and crisp.Falafel are ready.You can enjoy them wid tahini sauce also.

Now to make frankie, make rotis of the kneded dough.To make salad mix cabbabe and onion and add salt and lemon juice.Keep it for 10 mins and them add pepper powder.

To make the frankie, first apply tahini sauce to the roti, then add fried falafel in line as shown below.Add salad.


Role into a tight role and seal.Frankie is ready.


NOTE: This dish is not mush spicy, as middle eastern dishes are not as spicy as our indian dishes.If you can want you can add some spices to your choice to suit your taste.


Prepration Time : 35 mins.

Cabbage Rolls with Mexican Salsa...!!!

Mexican cuisine is also very popular in world like italian cuisine. Specialy salsa with tortilla chips is a must in mexican cuisine. This cabbage rolls is a very healthy and filling recipe and when we serve it with authentic mexican salsa , it becomes a perfect and tasty combo. This rolls are perfect snack or starter.

INGREDIENTS:

1 medium fresh cabbage

For Stuffing:

4 boiled and mashed potatoes
1 cup green peas
1 cup grated carrot
2-3 chopped green chillis
1/2 cup roasted peanut powder
1 tea spoon turmeric
2 tea spoon chilli powder
2 table spoon lemon juice
1 tea spoon mustard seeds
salt
oil

For Salsa:

4 tomatoes chopped
1 capsicum chopped
1 onion finely chopped
3 red serano chillis
1 tea spoon red chilli powder
1 table spoon lemon juice
salt
olive oil

METHOD:
Remove fresh whole leaves of cabbage and wash them and refrigerate till use.For Stuffing heat a non stick pan and add oil. When it gets heated up add mustard seeds.When they splutter,add chopped green chillis and onion. Saute till it becomes soft.

Now add grated carrot and let it get cooked fully. Now add the green peas and saute them for 2-3 mins. Now add the mashed potatoes ans stir well. Add chilli powder and turmeric powder and mix it well.Spinkle some water and close it and let it get cooked on low flame for 3-4 mins. Sprinkle lemon juice and remove from flame.

For salsa heat olive oil, add serono chillis and chopped onion, chopped capisicum and saute.Let them get cooked well.Now add chopped tomatoes and salt. Add chilli powder and cook till tomatoes get soft.Add lemon juice and remove from flame and let the mixture cool a little. Finally grind the mixture together in a mini-grinder for 2 mins. without any water.Do not grind it too fine, it should be a course paste.

Now finally to assemble the rool, take each cabbage leaf, add 1 table spoon of prepared stuffing and sprinkle some peanut powder and roll it into a roll.Fix a toothpick to close the roll firmely and roll does not open.

Serve with salsa.

Tangy Paneer Rolls...!!!

This is a very spicy and quick roll...perfect to carry outside for picnics or as lunch. It gets ready in no time and is a very filling dish.Here paneer is marinated with yogurt and spices which gives it tangy and spicy taste.

INGREDIENTS:

1 cup paneer cubes(cottage cheese)
½ cup tomatoes, deseeded and diced
½ cup capsicum diced
oil

For Marination :

1/4 cup curds beaten
2 n 1/2 tea spoon chilli powder
1/2 tea spoon turmeric powder
2 tea spoon ginger-garlic paste
1 tea spoon besan
1 tea spoon chaat masala
1 tea spoon kasoori methi
1 tea spoon garama masala
salt

For Outer Covering:
1/2 cup wheat flour
1/2 cup maida flour
milk
salt
oil

METHOD:

Combine all the ingredients of the outer covering and knead into a soft dough using only milk.

Mix all the ingredients of the marinade in a bowl.Coat paneer cubes and tomato mixture in it and keep for 15 mins.

Heat a pan and add oil.Add capsicum and saute for 2 mins.Then add the paneer mixture and saute over a high flame for 4 to 5 minutes, stirring occasionly.Take care so that paneer pieces do not break.Cook till panner is done. Sprinkle little salt and kasoori methi and remove from flame.

Make balls of the kneded dough. Roll out thin chapatis.Cook each chapati on a tava on both sides using little oil. Keep aside.

Spread required of the filling in the centre of each chapati and roll up tightly.If required cook the rolls on a hot tava using butter till they get crispy.

Simple Mushroom Rolls...!!!

This mushroom roll is a very simple and tasty .I make different types of mushroom rolls, this is one of them. For this roll i have used the same stuffing as mushroom kathi roll which i had posted some days ago, but this roll has a soft and chewy coating campared to hard coating of kathi roll.You can try its coating with some other stuffing also like paneer, corn etc

INGREDIENTS:

For Stuffing:

Prepare as in this recipe

For Coating:

1 cup maida(all purpose flour)
1/2 cup curd
2 tea spoon sesame seeds(til)
salt
butter

METHOD:

Prepare the stuffing according to the recipe.


Take a bowl and add maida. Add curd, salt, sesame seeds and mix well. Add water to get a required consistency for the batter.It should be like dosa batter.

Heat a tawa and add butter. Take little batter in a laddel and spread it like a medium size dosa. When its done from down, put the stuffing on it and roll it on tawa only. Since the top side of dosa is not cooked directly it will help in sealing it.

Seal the roll properly and cook for 2-3 mins turning frequently so that it gets cooked on all sides.

Remove from flame and cut in pieces and serve hot.

Yummilicious Chicken Frankie...!!!

Frankie is a popular snack found in most of the food joints in metro cities of india. Its a tortilla stuffed with chicken stuffing or some other veg stuffing with a thin coating of egg inside it.I have eaten this frankie many times outside and i just love it. There are different types of fillings which can be used in frankie. I decided to try chicken stuffed frankie at home.I went on adding anythng which i liked accordign to my judgement and it turned out very tasty.Everyone loved it.So i am posting its recipe here.BoldYummilicious word i got from yummy and delicious...:)as it was indeed yummy and delicious



INGREDIENTS:

For The Roti:

1 cup wheat flour
1 cup maida(all purpose flour)
salt
oil

For Chicken Stuffing:

200 gms boneless chicken
4 table spoon ginger ,garlic, green chilli and corainder paste)
1 table spoon ginger-garlic paste
2 cups chopped onions
4 table spoon tomato-chilli sauce
1 table spoon garam masala
1 table spoon chilli powder
1 tea spoon corainder powder
2 table spoon chopped corainder/cilantro leaves
1 chicken maggi cube
salt
oil

For Salad Stuffing:
1 cup chopped cabbage
1 cup shredded lattuce leaves
1 onion thinly sliced
1 table spoon lemon juice
1 tea spoon chilli powder
2 table spoon mayonnaise(optional)
1/2 tea spoon pepper powder
salt

Other Ingredients:
2 Eggs
chat masala
salt
oil

METHOD:

Apply the ginger-garlic-green chilli and corainder paste to the chicken pieces and let them marinate for 2 hours

Take both the doughs in a bown and mix salt, butter and water and kned it into a smooth dough and keep aside for 30 mins

After 30 mins. Make 6 balls out of it and roll 6 rotis of it. Fry them on tawa without oil till they are half cooked. Do not cook them fully.Frankies outer roll is ready.

Cook the marinated chicken pieces. Add salt in between. Cut them into small bit size pieces.

Heat oil in a pan and fry onions till soft and light brown. Now add the ginger garlic paste and saute for 2 mins. Add the chilli powder, corainder powder, powdered chicken maggi cube and mix well.Add tomato-chilli sauce and mix well.

Now add the cooked chicken pieces and mix. Add garam masala and cook for 2-3 mins.When its done remove from flame and add chopped corainder and mix .

Now for the salad stuffing mix cabbage, lattuce and onions. Apply salt to them and spinkle lemon juice keep for 15 mins. They become soft.Now add chilli powder and pepper powder mix it well.Add mayonnaise if required and mix it well.

Beat the eggs in a bowl. Add salt and beat.

Heat a pan and sprinkle oil over it. Spread a half cooked roti over it. Spread some part of the egg mixture on the top side of it and spread it all over the roti.After 1 min flip the roti so that the egg coated side gets cooked. When both the sides are fully cooked, remove it.

Spread the egg coated frankie on a plate.Add the chicken stuffing in the center. Add salad mixture over it.Spinkle some chat masala.Add one lettuce leaf if required.Close the roti carefully.Wrap it with a aluminuim foil.

Repeat the above process with all the remaing rotis.Serve Hot.



Makes 6 frankies

Alu Vadi(Colocasia/Taro leaf rolls)...!!!

Alu wadi is a roll made of colocasia leaves stuffed with bengal gram filling.These leaves are called 'Alu' in konkani, so the traditional nameof this dish is alu vadi.This leaves are usualy grown in rainy season in goa. They are used for many festivals. A special vegetable dish is made from them for goan festivals. I will post that recipe later. This aluvadi is a tast snack liked by all.I had prepared this recently so i am posting its recipe.

Colocasia Leaves


INGREDIENTS:

4-5 fresh colocasia leaves
2 cups chana dal soaked
1/2 cup fresh grated coconut
2 onions finely chopped
1 table spoon garam masala
1 table spoon chilli powder
2-3 table spoon jaggery
oil
salt

METHOD:

Wash the colacasia leaves and dry them so that no water droplets remain on them.Grind the chana dal using very little water to form a course paste.

Now take it in a bowl and add garam masala, chilli powder, salt, grated coconut and jaggery. Mix well ,add water if required.Paste should be thick enough. It should not flow. Now add chopped onions. Mix again.

Now keep a colocasia leaf on a plate. Apply the chana dal mixture all over it to form a uniform layer of medium thickness. Roll the leaf to form a roll. Do not leave gaps in between, roll it carefully.Reapeat the same with the remaining leaves.

Now steam this rolls for 20 mins.The stuffed mixture hardens up after steaming, and the leaf becomes soft.Let them cool.After cooling cut them into slices of medium thickness,around half inch.

Heat oil in a kadia. Deep fry this cut roll slices in oil till dark brown and crispy.This rolls do not suck more oil.Remove them.

Serve Hot.

NOTE: Besan can be used insted of chana dal directly in the mixture. But mixture made of chana dal tastes good then besan.

Add amount of spices according to your taste. If you want you can make the paste more spicy.

Nutty Chocolate Roll...!!!

This nutty chocolate roll looks realy yummy na...and it tastes also very good. Everyone will like this roll. It is chocolate role stuffed with nuts and strawberry syrup.And chocolate syrup on top of it makes it damn yummy. By luking at it one may think that it will be very difficult to make this rolls, but it is damn easy. Kids just love this roll.We see such rolls outside in pastry shops and buy from there. We never think of making them at home,as they seem very difficult to make.But now we can make such roles at home that too with less effort.This role requires ingredients that are easily available at home.

INGREDIENTS:

For Roll:

2 cups marie biscuits crushed(fine powder)
3/4 cup drinking chocolate
1/2 cup powdered sugar
1/4 cup milk
1/2 cup dessicated coconut
1/2 cup chopped cashewnuts, pisatochos and almonds
1/2 cup strawberry syrup
1/2 cup icing sugar
9-10 cherries
1 tea spoon butter

For Chocolate Sauce:

1/2 cup water
1/2 cup sugar
1 tea spoon cocoa powder
1 tea spoon drinking chocolate


METHOD:

Take a bowl and add marie biscuit powder , drinking chocolate and sugar in it. Mix it well.Add sugar according to your taste. Add milk and kned it well so that it becomes very soft and firm like a dough.Apply butter to make it smooth and keep aside.

Now the stuffing need to be done. Mix the coconut, with dry fruits and mix. Add icing sugar to it to make it enough sweet.Mixture is ready.

Take a piece of dough ball and give it round shape. Flatten it using hands and role it using icing sugar. Make a thick flat roti of it by rolling, do not make it thin.Now cut the big roti in to long strips of 2 inches broad.

Now apply the strawberry syrup on the top side on the cut strip. Add the coconut and nuts mxture above it. Role it into a roll as shown in the above pic. Side ways it will look like the pic below.

Now we need to make the chocolate sauce. Mix the water and sugar and heat the mixture when the sugar and water mixture starts boiling up add the cocoa powder and drinking chocolate powder and stir. Let the mixture boil again and become thick. When the mixture becomes thick remove it from heat and cool for some time. Choco sauce is ready.

Now take the rolls and add chocolate sauce on them and garnish them with cherries. Serve them.





NOTE: This rolls can be stored in refrigerator for 4-5 days.
Filling can be changed according to your needs. Even cut strawberry pieces can be added to this roll mixture, but they have to be consumed soon , they cannot be stored for more then a day.

Cheese Carrot Rolls...!!!

Most of the people who have realy less time 2 cook need some easy recipes. And those recipes need to be healthy too. This cheese carrot roll is very quick recipe and is very healthy too.It has carrot which is a very nutritious vegetable.I had read this recipe in some megazine some months ago. I thought the combination of cheese and carrot wont taste good, but when i tried it it tasted awesome. And the best thing about this dish is u get tasty and nutritious snack in very less time and effort.

INGREDIENTS:

5-6 bread slices
1 cup grated carrot
1/2 cup grated cheese
1 tea spoon finely chopped ginger(or ginger paste)
1 tea spoon chilli finely chopped(or chilli paste)
1/2 tea spoon chat masala
1/4 tea spoon pepper powder
Amul butter( or any other brand)
salt

METHOD:

Take the grated carrot in a bowl and add cheese and mix well. Now add the chilli, ginger and chat masala and pepper powder and mix well.

Now remove the sides of the bread slices. Take 1 slice and roll it a bit to flatten it. Now apply little water to it and press and remove water. Roll again to flatten it more.

Now add the carrot and cheese mixture in the center and close the slice and seal. Repeat the process with the other slices also.

Now heat a pan and add butter. Shallow fry this rolls on low flame till crisp and brown on both sides. Add butter in middle of frying.

Serve hot with tomato-chilli sauce.

Note: Using butter to fry this rolls is a must.Using oil or ghee wont make them as tasty as butter.

Preparation Time: 15 mins.
