Dark Chocolate And Date Pancakes...!!!

I had made this pancakes today and thought of sending it for priyas event. They had turned very fluffy, soft and yummy...I had few dates lying in my pantry which were looking at me angrily as i had not used them in anything ,So thought of making pancakes with them as dats pancake are very famous around the world.I used the normal basic batter for pancakes and spinkled some chopped dates on them and I also added dark choco shavings in it to increase it taste and also coz  i am a big fan of chocolates .When these dark chocolate was melted after being cooked, it tastes superb, i am sure this pancakes will be loved by kids as well as elders too.I realised few mins back only that there are few mins left for the deadline of the event to get over, so i am posting this pancakes in a hurry.



INGREDIENTS:

  • 1/2 cup wheat flour
  • 1/2 cup all purpose flour(maida)
  • 1 table spoon brown sugar(demerara sugar)
  • 1/2 cup chopped dates
  • 50 grams dark choco block
  • 3/4 cup thick yogurt
  • 1 egg
  • 1 tea spoon vanilla essence
  • 1/4  tea spoon baking powder
  • 1/4 tea spoon baking soda
  • 2-3 tea spoon salted butter
  • oil

METHOD:


 Seive maida, wheat flour, baking soda and baking powder together.Then add brown sugar to it.Beat the egg in a bowl well and add to the above mixture.Then add curd .


Add melted butter and whisk it well .Add vanilla essence and 1/2-3/4 cup warm water.Stir it well and  adjust the consistency .Batter should be of flowing consistency andshould  flow like a thin ribbion.


Take the dark chocolate block and with a sharp knife slice it into thin shavings starting from one of the corners.Now heat a griddle and add little oil.Pour 1/4 amount of the total batter.Spinkle enough of chopped dates and sliced chocolate shavings.


Cook till bubbles come on top side then flip it.It should be golden brown on cooked side.Cook for 2-3 mins on other side and remove.Repeat the same with the remaining batter.


Drizzle honey and sprinkle some chopped dates and dark choco shavings and serve this pancakes.

Spanish Omelette(Tortilla De Patatas)

Spanish omelette or tortilla de patatas is a typical Spanish dish consisting of an egg omelette with fried potatoes. Frequently it also includes onion , spring onion depending on region or taste.I like this dish from before and i modify it by adding and changing its ingredients.This is my most favourite version in which i add mushroom, bellpeppers etc. Its a very simple recipe yet tasty:-))

INGREDIENTS:

4 eggs
1 cup chopped onion
1/4 cup chopped green bellpeppers
3/4 cup chopped mushrooms
1/2 cup finely diced potatoes
3-4 table spoon milk(optional)
1 tea spoon pepper powder
1/2 tea spoon termeric
olive oil
salt

METHOD:

Heat a pan and add little oil.Add chopped onions and saute them till soft.Now add the diced potatoes and saute them for 2 mins.Now close the lid and let them get cooked for 2-3 mins.Saute them till they turn light brown.

Now add chopped capsicum and saute for 2-3 mins.Now finally add sliced mushrooms and cook for 1 min.Add little salt and turmeric and saute more for 2-3 mins.By now mushrooms must have also got cooked well.

Beat the eggs well in a bowl and add milk.Milk is added as it makes the omelette more fluffy.Add salt and pepper powder according to your taste and mix it well.Now add the sauted veges in it and mix it.

Heat a non-stick pan and add olive oil.Add all the egg mixture and spread it evenly on it.Normaly for 4 eggs 8" pan is well suited as this omelette needs to be thick.But i had 12" so mine is a bit thin.Close its lid and let it get cooked on low flame.

After 5-6 mins it will get cooked.Base of it will get brown, no need to turn it and cook.Remove it from flame.

Slice it and serve with bread toast or plain.


NOTE: You can even add whole spring onion in it.

Vegie Oat Pancakes...!!!

Oats have become very popular in these few years in india mianl cause of its health benefits. Different dishes are being tried from them apart from the regular porridge. Even i felt like trying something different and healthy from them.Pancakes can be made from them , but often they are sweet pancakes using fruits or plain. So i decided to try somthing different with veges and some mild herbs and spices. So made this pancakes and the outcome was realy good. They were very tasty.A perfect and healthy breakfast or snack.Try them for a change from regular sweet dishes from oats.

INGREDIENTS:

2 cups rolled oats
1 cup besan
1/2 cup green peas
1 cup grated carrot
3/4 cup finely chopped onion
2 tea spoon oregeno powder
1 tea spoon pepper powder
2 green chillis chopped(optional)
2-3 fresh mint leaves torn
salt
oil

METHOD:

Grind the oats to from fine powder.Take a bowl and mix oats powder and besan in it.Boil green peas and mash them.

Add grated carrot, mashed peas and chopped onion . chillies to the mixture of besan and oats.Add enough water to form a batter of thick dosa consistency. Finely add pepper powder and oregeno, salt and mix well.

Heat a non stick pan and add little oil. Remove small pancakes and let them get cooked.Do not cover them while cooking. Cook them in open.When one side done, turn and cook the other side.

Remove when doen and serve them hot with tomato sauce or chutney.

NOTE: You can add more vegetable of your choice, like you can even add grated beetroot or finely chopped capsicum.

Healthy Vegetable Idlis...!!!

This vegetable idli are one of the variety of idlis which i like. I prefer this more then normal idlis they are more tasty and healthy.I eat this from childhood as this is my moms frequent dish.This idli contain vegetables, so it enhances its taste and also nutrition level.They serve as perfect healthy breakfast.Give it a try once and see.


INGREDIENTS:

2 cups udit dal
3 cups idli rava
1 cup green peas
1 cup grated carrot
1 cup grated cabbage
1 tea spoon turmeric powder
2 tea spoon mustard seeds
1 cup roasted peanut powder
salt
oil

METHOD:

Soak udit dal in water for min 5-6 hours or overnight.Grind it into paste with little water, keep it aside for 4-5 hours. Soak idli rava 5-6 hours before making the idli.

Strain water from rava and mix it with udit dal paste.Squeeze water from grated cabbage and carrot. If not squeezed idli batter will be watery.

Add salt and turmeric powder and stir well.Now add green peas,cabbage and carrot,peanut powder and mix .

Heat little oil and add mustard seeds to it. When they splutter add this seasoning to the prepared batter and stir.

Grease a idli mould and fill it 3/4 with idli batter. Steam it in idli steamer for 20-25 mins.

Cool it and remove from mould and Serve with green chutney or sauce.


NOTE: You can even add grated beetroot to this idlis to make them more healthy and colourful.

Mughlai Egg Paratha...!!!

Mughlai Paratha is a North-west Indian staple food item made from flour.It comprises filling of vegetarian like potato or non-vegetarian material like kheema and dough is essentially rolled and fried. These parathas can be eaten with vegetarian or non-vegetarian main course dishes, pickles or sauces.In this mughlai paratha i had used egg as stuffing. It turned out crispy and very tasty. Its a very filling and tasty snack.

INGREDIENTS:

1 cup maida(all purpose flour)
2 eggs
1/2 cup fresh grated coconut
1 big onion finely chopped
2-3 green chillis chopped well
1 table spoon ginger-garlic paste
1/2 tea spoon turmeric
1 table spoon corainder chopped(optional)
oil
salt

METHOD:

Kned the maida using little,salt,oil and water to a soft dough.keep it aside.

Take a bowl, add grated coconut,salt,turmeric, onion ,ginger-garlic paste,green chillis,,corainder and mix well.Now beat the two eggs well and mix in this mixture. It should form a paste like mixture.

Make four balls of the dough.Roll out a thin roti of one ball approx 8-9 inches diameter. It should be thin.Now place one fourth of the egg filling on it.Wrap the filling carefully from all sides to make a square.Be carefull to seal it properly or else the egg mixure can come out.

Heat one tablespoon of oil in a pan and place the paratha carefully in it without letting the filling come out.Fry well till both the sides become golden brown and crisp, use extra oil if required.Repeat same with other parathas.

Serve hot with tomato sauce.


Preparation Time : 15 mins.

Banana Pan Cake...!!!

A Pancake is a thin, flat cake prepared from a batter and cooked on a hot griddle or frying pan.Pancakes exist in several variations in many different local cuisines. This Pancake is a banana flavored pancake with egg to increase its fluffiness. I had read this recipe on some magazine and i decided to try it. It tastes very good. Its a easy and quick recipe. A healty and filling snack gets ready in no time.

INGREDIENTS:

3 ripe bananas
1 cup maida(all purpose flour)
1 cup milk
2 eggs
2 table spoon sugar
1 tea spoon baking powder
2 table spoon oil
salt

For Serving:
5 table spoon honey
1/2 cup chopped banana slices
6-7 cherries

METHOD:

Sieve maida, baking powder and Salt couple of times to get uniform mixture. Now take a bowl and beat eggs into it. Mix salt and oil and beat very well till froth is formed.

Grind bananas to from a thick paste. Grind them a little only, no to much.

Add maida and milk little by little to the egg mixture and mix well. Add little by little quantity and go on mixing till all maida and milk is added.Check if balls of maida are formed. If any remove them.Add banana pulp to this mixture and mix properly to form a unifrom frotty batter.

Heat a tawa and spread little ghee over it. Spread the batter to form small and thick dosa, cook on low flame.When there are bubles forming on the upper side, making the cake little fluffier and porous turn to the other side and cook.

Cook till both sides turn golden brown.Ass egg is there in this batter, the pancake does not stick to the tawa, it comes out easily.

Now take a hot pancake , apply honey all over it. Keep banana slices on it and garnish with cherry pieces.Serve Hot.

NOTE:For serving besides from this honey and bananas one more option can also be used.Apply caramelized sugar and serve with strawberry pieces and fresh cream.

Mysore Masala Dosa...!!!

Dosas are famous snacks from south india. There are different types of dosas. Masala dosa is a dosa stuffed with potato bhaji and served with chutney and sambar. I am posting a recipe of mysore masala dosa which is similar to masala dosa but has and additional spicy red chutney which is applied inside along with potato mixture.It is one among the famous dosas.

INGREDIENTS:

3 cups dosa batter(recipe is here)
oil to fry

For Potato Mixture:

3-4 boiled and chopped potatoes
2 onions chopped
1/2 tea spoon turmeric
1 table spoon urad dal
1/2 tea spoon sugar
salt


For Red Chutney:

1/2 cup roasted chana dal(dalia)
2-3 red chillis
7-8 garlic cloves chopped
1" ginger piece chopped
1 table spoon kashmiri chilli powder
1 table spoon lemon juice
salt

METHOD:

First take a pan and add oil.When its heated fry the urad dal in it till brown. Now add the chopped onions and let them fry till they turn light brown. Now add the potaot pieces and mix well.

Add salt, turmeric powder and sugar and cook for 3-4 mins. Potato filling is ready.

To make the red chutney add the red chillis in a mixer. Add all the other ingredients. Add water and grind till smooth paste.Red chutney is ready.

Heat a dosa tawa. Drizzle some oil and sprinkle little water and wipe it with a piece of cloth.Pour a laddel full on batter on tawa and spread to cover the entire surface.Ensure that the dosa is not too thin.Sprinkle some oil all around and let it cook till underside is crispylight brown and done.

Remove it from tawa. Spread some red chutney all over. Place some potato mixture in the center as shown in the pic below. Fold the dosas into a half moon shape.






Serve Hot plain or with white chutney and sambar.

Cucumber Dosa...!!!

This cucumber dosas are realy tasty dosas. I just love them. They have a very different and sweet taste. Makes a good breakfast.


INGREDIENTS:
1 1/2 cup rice
1/4 cup fresh garted coconut
2-3 table spoons jaggery
3/4 cup grated cucumber remove seeds if any)
Salt
Ghee
Honey(optional)

METHOD:

Soak the rice for atleast 5-6 hours or overnight. Grind rice with all the other ingredients. Add water according to the required consistency while grinding.

Heat a tava and add ghee. Make dosas of medium thickness.Bit crispy dosas tastes nice.

Serve hot by applying honey. Plain dosas also taste nice.

Vada Pav...!!!

Vada pav – Indian version of burger, must be one of the most loved street foods. Vada or batata vada is a spicy potato mixture with a coating of gram flour, deep fried in oil. Pav is a special kind of soft bread, almost square in shape.Its mre popular in mumbai and pune, not that popular here in goa But still i love it. I used to enjoy it when i used 2 go 2 mumbai in my summer hoildays. I had tried it at home, this is the outcome. It tasted quite good-:))

INGREDIENTS:

FOR VADAS

VADA STUFFING:

2 potatoes boiled
1 tea spoon chopped garlic
1/2 tea spoon turmeric
1 table spoon choped corainder
2 green chillis chopped
salt
oil

METHOD:

Chop the potatoes in small pieces.Take a pan and add oil. When it heats up add the garlic and stir. Then add the green chillis.

After 1 min add chopped potatoes and turmeric powder and mix well . Add salt. When its almost done add coriander leaves and remove from flame.Its ready...



VADA COATING

1/2 cup gram flour (besan)
1 tablel spoon rice flour (added for crispiness)
1/2 tea spoon chilli powder
Salt
oil
pinch of baking soda

METHOD:

In a small vessel, mix bason, red chilli powder,rice flour, eating soda and prepare thin batter using water.Heat oil in a pan, add 2 spoon of heated oil to the batter.Its ready

MAIN METHOD:

Heat oil for deep frying.
Make small round flat balls from the stuffing. Dip the ball into the coating batter and deep fry in hot oil. Take out on a paper towel.

OTHERE INGREDIENTS:
4-5 pav (breads)
5-6 green chillis( apply salt and deep fry)

MAIN METHOD:

Take a pav. cut open but make sure one end is still connected.Apply coconut-garlic chutney on the lower half and green chutney on the upper half.Now all the sweet tamrind chutney on green chutney. This is optional for those who do not like spicy stuff.

Now place the vada on the lower half and close the pav.Press it a bit to flaten.Below is apic of the bread with chutneys applied and the vada.


Vada Pav is ready.Serve with fried green chillis.

NOTE:
Heated oil is added in vada batter so that it absorbs less oil n becomes less oily.

Methi Paratha...!!!

I like methi vegetable a lot. So i try different things of it.This methi paratha is also a good combo. Its a tasty and healty breakfast too. Very simple to make.

INGREDIENTS:

2 cups chopped fenugreek leaves(methi)
1/2 cup besan (gram flour)
3 cups wheat flour
2 tea spoon chili powder
1 tea spoon corainder powder
1 tea spoon cumin powder
4 table spoon butter
Salt

METHOD:

Chop methi leaves into small pieces and add salt. Keep for 5-10mins. Squeeze water out of the leaves.

Mix all the other ingredients.Add methi leaves to the ingredients mixture . Kned it intoa soft dough. Apply oil and leave for 1-2hours.

Make paratha of medium thickness and fry it and apply butter on both the sides.

Serve hot with pickle or sauce.

NOTE:Usually the methi leaves are squeezed after applying salt to remove some of its bitterness, but by doing this some of its nutrients are also lost. So it is your choice to do it or not. Leaves can be used directly also.

Patholi (Goan festive spl)

Today was Nagpanchami. In goa its celebrated in most of the hindu houses. Puja of nag idol is done on this day. As every year my family also celebrated it today.Patholi is a special sweet made on this day. It tastes realy awesome, with turmeric flavour.As they are covered in turmeric leaves and cooked.For those who do not know how are turmeric leaves, i am posting its pic.Here is its recipe.

INGREDIENTS:

2 cups rice flour
2 cups water
15 turmeric leaves
salt

For Filling
2 cups fresh grated coconut
1 cup Jaggery
1 tea spoon Cardamom powder
4-5 table spoon cashwe nut pieces


METHOD:

First dough for them must be made. For this heat the water, add salt.When the water starts boiling add the rice flour in it and stir countinously for 1-2 mins till it mixes well in water. Remove from flame immediately and keep on stirring till its fully mixed with the water and forms a rough dough.Keep it for cooling.

Now the filling must be made.for this take a kadai and add the jaggery in it. Cook till it melts and keep on stirring.Now add the coconut in it and keep on stirring countinously till it mixes well with the jaggery. Check the sweetness if more is required then add the jaggery.Add cashwe nuts and mix. When its almost cooked, add the cardoman powder and remove from flame.

Now the hot dough must have been cooled. now kned the dough properly so that it becomes soft.

Now the patholis must be prepared. Take a turmeric leaf and spread it.Nowspread a thin layer of the rice dough on the leaf using hands. If the dough sticks to hand use little water. It makes the spreading easier on leaf. cover the whole leaf with a thin layer of dough.

Now spread around 1-2 table spoons of stuffing on it evenly except the edges of leaves. Use more or less stuffing according to your choice.Now fold the leaf and press on the edges so that it is sealed completely, n no filling comes out. It can be folded horizontally or verticaly, both shape patolis i have shown in the pic.

Make all the remaining patholis in a similar manner.Now Pile them in the steamer or in a cooker vessel.Steam them for aorung 15-20 mins.

Remove them and serve. They must be eaten by removing the leaf(extra info for those who dont know :-))


Turmeric Leaves

NOTE: If you do not have turmeric leaves you can use parchment paper. But u wont get the traditonal turmeric flavour and taste.

You can even eat this patholis by pelling the leaf of a cooked patholi and shallow frying in ghee till slight red. This also tastes very nice.

Urad Dal Dosa...!

This is the simplest way of doing Urad dal dosa. This is a good and tasty breakfast. Can be served with any chutney or gravy.

INGREDIENTS:

2 cups dosa rice(or any normal rice)
1 cup urad dal
1 tbl spn chana dal (optional)
1 tea spoon fenugreek seeds(methi) (optional)
Oil
Salt As per taste

METHOD:

Soak all the ingredients separately for 7-8 hours.

Grind the urad dal separetly with chana dal and fenugreek with water to form smooth paste.Then grind the rice.Mix both the batters well and add salt.


Leave the batter for 5-6hours or overnight. Heat ghee on a pan and Make dosas.Thickness of the dosas depends on individuals taste.Generaly for chuneys or gravies thick dosas are made.


Serve with White Groundnut Chutney or any gravy.


NOTE:One table spoon of chana dal is added for making the dosas very crisp and one tea spoon of fenugreek seeds to give a nice color to it.

Even instead of chana dal 2 tablespoon of poha can also be used.But must be added before grinding.Must not be soaked.

Mango Sheera(Suji ka Halwa)

This mango sheera is bit different from the original sheera,it has mango flavour in it. Just give it a try any time for a change from normal sheera.Its more tasty then normal sheera.

INGREDIENTS:

1 cup rawa
1.5 cup mango pulp
1 cup milk
1.5 cup water
1/2 cup sugar
8-10 Almonds
Pinch of Safron
Ghee

METHOD:

Add ghee in a pan and heat it.Add rawa to it and fry on low flame till its slightly brown.

In another pan mix water and milk and boil it.Add it to the brownish rawa.

Let the rawa cook for some time (Till mixture becomes thick).Add sugar and mango pulp and cook again for a while.Check the sweetness and add sugar as mango pulp also contains sugar.

Meanwhile soak the almonds in water and pell and cut them in pieces.Garnish with almond pieces and safron and serve hot.

Serves:3-4

Sabudana Thalipith...!!!

This is sabudana item thats favourite among everybody... Thalipith is a maharashtrian dish..Its also made of rice flour. I will post that recipe some other time.this one is simple recipe and is very tasty and crispy.this can be made as fasting food also.

INGREDIENTS:

1 cup saabudana(pearl Sago)
1/4 cup groundnut powder
4-5 green chillis
4 spoon corriander leaves
2 medium sized potatoes boiled
1/2 spoon sugar
Salt to taste
Oil/ghee/butter

METHOD:

Soak Saabudana in water for at least 6-7 hours.The water added should be 2 cms above sabudanas in the bowl.Soaking them in corect amount of water is necesary or else they do not soak properly and become hard.

Add salt, sugar, groundnut powder, finely chopped chillies and corriander leaves to sabudana and mix well.

Mash and add the potatoes to this mixture and form the sticky dough of this mixture.

Take the round ball of this dough and make thalipith out of it.

For those who don't know how thalipith is done on - apply little oil, ghee or butter to a heated tawa and press the ball on the tawa to form the round chapati like item sticking to the tawa - little movable because of oil. Press the dough with the help of flat bottemed bowl, so spreading of dough becomes easier on hot tawa.

Cook on low-medium flame with lid on the tawa for one side cooking.When its brown from the side thats sticking to the tawa flip the thalipith and cook it on the other side without lid.

Remove it when it becomes brown and bit crisy.

Serve hot with green chutney or sauce.

Potato Dosa(Alu dosa)

As usual i was going through one recipe site and this recipe caught my eyes as it was bit diffrent. No one will mostly think of making potato dosa.So i tried this recipe and it turned out very tasty.
I liked it very much.They are very crispy and tasty.I make this often now...

INGREDIENTS:

1 cup mashed potatoes
1 cup rice flour
5-6 strands coriander leaves
1 tea spn ginger-garlic paste
2-3 green chillies
2 tbl spn yogurt/curd
Oil
Salt

METHOD:

Grind all the ingredients(except rice flour). Add rice flour.

Mix well and make dosas. Some times, the dosas get sticked to pan. Add more rice flour and try again.

I usually serve this with tomato sauce.

Serves : 2-3

Palak(Spinach) Paratha

This paratha recipe i got from net and i tried it with some of my modifications as usual and it turned out well. Many people who do not like to eat spinach will also enjoy this parathas, as they are very tasty.They are also very simple to prepare. A healty breakfast gets ready in no time...

INGREDIENTS:

Wheat Flour 2 cup
Palak(Spinach) leaves 1 Cup
Ginger 1″ piece
Green Chillies chopped 5 Nos
Coriander leaves 1/2 cup
Jeera 2 tsp
Chilli powder 1 tsp
Corainder powder 1 tsp
Salt



METHOD:

Mix all the ingredients(except flour) and blend it in a mixer to a fine paste.


Mix this mixture with the wheat flour and oil, knead till the dough is smooth and soft.


Make medium size balls of the dough, roll it. Fry paratha on tava, apply ghee on both sides.


Serve hot with pickle or curd.

Serves : 5

Aloo Paratha...!!!

This is one of my favourite dish for dinner.I just love it. Before i never use to like parathas so much.Once i had gone for our college tour to north india, it was in himachal pradesh where i had these lovely parathas. Parathas are very famous over there, you get them in small restaurants called dhabas...which are very famous there. So there i had them and just loved them so much tht i even asked for the recipe to one of the dabba owners wife..so this recipe i got from her and i tried it so many times and they are always yummy!!!


So here is the recipe ...try it is possible
INGREDIENTS:
2 potatoes
5 table spoons finely chopped coriander leaves
4-5 finely chopped green chilles
2 table spoons very finely chopped ginger
2-3 cups wheat flour
1 tea spoon turmeric powder
1 table spoon oil
4 table spoon ghee or butter
salt to taste
METHOD:
Add water, salt to the wheat flour and make , similar to chapati dough. Apply oil to it and keep for 1 hour
Boil the potatoes and mash them and add chopped coreinder leaves, chilles, ginger and also turmeric powder and salt.Mix the mixture well.
Take a small ball of dough,roll it to a size of small thick puri. Now make a small ball of potato stuffing(it must be enough for d puri dough) and place it on top of the puri and close the puri carefully.
