Diwali Wishes with Ganache Bites...!!!

A VERY HAPPY DIWALI TO ALL MY BLOGGER FRIENDS!!!...Hope u all are enjoying this festive season...
I am back with some chocolaty ,tasty and unique Diwali sweet.This Ganache Bites are liked not only by kids but by all age groups as chocolate is liked by all:-))




INGREDIENTS:
  • 200 grams marie biscuit
  • 1/4 cup black raisins
  • 200 grams cooking chocolate
  • 100 grams cream
  • 1/2 tea spoon vanilla essence
  • few walnuts
  • few glazed cherries
  • few slivered almonds
METHOD:
Heat cream on a very low heat in a heavy bottomed pan. Add cooking chocolate pieces to it it and mix it well till the chocolate melts fully. Remove from flame and mix well to form a smooth ganache.


Crush the marie biscuits into tiny pieces.Add finely chopped raisins and vanilla essence to it and mix well. Add almost half of the ganache to the biscuit mixture so that it binds the mixture well. Add little more if required and mix well.


Take small muffin tray or small muffins pans for each.Line it with a butter paper.Add the mixture to it and press to level it with hands.After leveling the mixture well keep this tray or muffins pans in the freezer for 15 mins to set well


Now after setting demould the set biscuit mix on a wired rack.Heat the remaining ganache again if it has thickened and add 1 tea spoon  milk if required. Pour this melted ganache on the biscuit mixture pieces.Pour it in such a way that it covers maximum part of it. Wait for 5 mins for the poured ganache to set again and then again pour the second layer of ganache.Now after pouring ganache keep them in refrigerator for the ganache to set for 20 mins.


Now remove this ganache bites and keep them each in a muffin liner. Garnish each with glazed cherries, walnuts and almonds. Keep in refrigerator  to set again for 5 mins. 


You can serve them whenever you want.


Preparation Time : 25 mins.

NOTE: If you do not have muffins pans you can use a loaf pan. Pur ganache on the whole loaf and then after setting you can cut them into pieces and serve.

Chocolaty Smiling Faces...!!!

This chocolate coated smiling faces is very tasty sweet loved specially by kids, but even i love it:-))...I had eaten a similar sweet some months back for a party and i had liked it a lot.It was a cake ball coated with chocolate.So i decided to give it a try at home and it was succesful.It gets ready soon and is very tempting.It can be served as special sweet for a kids birthday party at home,they will love it.

INGREDIENTS:
200 grams chocolate sponge cake
3-4 table spoon strawberry jam
2 table spoon totty-footy
1/4 cup roasted and chopped almonds
2 cups grated dark semisweet chocolate
1/4 cup condensed milk

For Decorating:
20 gems
10 almonds
10 whole cashewnuts

METHOD:

Crumble the cake in a bowl to fine powder.Add jam, tooty frooty and almond pieces in it and mix it well.Kned it little to form a balls.Now take little mixture and roll big lemon size ball of it.Repeat it with the remaining mixture.Keep aside.

Now Melt the grated chocolate in microwave for 1 min or melt it using a double boiler.When its almost melted add the condensed milk in it and cook for few seconds.

Remove it and dip the rolled balls in it and let them get fully coated with the melted chocolate mixture.Place them on butter paper.Put gems as eyes, cut almond as nose and cashewnut as smiling lips.

Refrigerate it for 15 mins and it will get fully set.Can be stored in refrigerator for up to one week.

Wheatgrass Chocolate Pudding...!!!

This wheatgrass chocolate pudding is made using sprouted whole wheat and milk, and flavoured with cocoa powder to give it a nice chocolaty taste.It is a very healthy dessert and can be made quickly if sprouted wheat is available.It is little similar to famous ragi pudding which is very famous in goa called as "satva".I will post that recipe soon.Try this healthy chocolaty pudding and i am sure you will love it.

INGREDIENTS:
1 cup sprouted whole wheat
4-5 cups whole milk
1-2 table spoon cocoa powder
1 table spoon vanilla custard powder
3/4 cup sugar
1 tea spoon vanilla essence


METHOD:

Grind sprouted wheat along with little milk, custard powder and cocoa powder to a fine paste.Mix this paste with the remaining milk.

Heat a non-stick pan and add this mixture in it.Cook on very low flame stirring countinously.This is important as if not stirred properly the mixture will form lumps.Do not allow it to form lumps and go on stirring.

Add sugar and keep on stirring.After some time it will start thickning.Countinue stirring and cooking it until it starts leaving the pan and get a thickning consistency.

When done add vanilla essence and mix.Remove from flame.Pour in moulds and allow it to cool.When its cooled refrigerate it till fully set.

Garnish with finely grated chocolate and glaced cherries.


NOTE: To get sprouts for wheat, soak them in water for 24 hours.Then drain the water and keep it closed for more 24 hours in a warm and dark place.You can even tie them in dark coloured cloth to get sprouts early.Wash the sprouted wheat well in water 2-3 times before use.
Add amount of cocoa powder according to your taste.

Lauki Kheer with White Chocolate...!!!

Lauki (Bottle Gourd) kheer is very popular in india.Even i like its taste.But the authentic kheer recipe is very simple,so i decided to try something new ,Thinking whatever may be the outcome i tried it. I decided to add some different flavours to it.I added star anise to flavour the bottle gourd , thought as its similar to nutmeg and nutmeg is used to flavour sweet dishes and believe me, star anise gave such a wonderful flavout and aroma to the kheer that whoever ate it loved that flavour. It went very well with the taste of lauki. I even added white chocolate pieces and when they melted it gave a very nice heavenly taste and flavour to the kheer. The kheer had turned out awesome, i was very happy with my experiments:-))..Those who do not know what is lauki(bottle gourd) i have put its pic below.




INGREDIENTS:

2 cups grated bottle gourd(lauki)
1/2 litre whole milk
1/2 cup chopped dryfruits(pisatachoes,almonds)
1/4 cup cashew powder
3/4 cup sugar
35 gms chopped white chocolate
2 whole star anise
2 table spoon ghee
4 cardomom pods


METHOD:

Heat a kadai and add ghee. When the ghee is heated up add star anise and cardomom pods and stir on low flame.Saute for 2 mins. If grated bottle gourd has extra water squeeze it to remove the water.

Add the grated bottle gourd to the kadai and saute. Keep stirring so that the star anise flavour gets infused in it.Saute till all the water in bottle gourd dries up and it gets cooked well.It will take 7-8 mins. Till then all star anise and carmomom flavour must have got infused well with it.

Simultaneosly boil milk in a pan.When it gets boiled reduce the flame and stir it. Cook it on low-medium flame till it gets reduced to 3/4.Now add this reduced milk to the sauted bottle gourd mixture in kadai. Mix well and cook for 1 min. Now remove all the star anise from it and let it get cooked. Star anise is removed so that the flavour does not become too strong. Strong flavour of it wont taste good.

Now add the cashewnut powder and sugar and stir well. Let it get cooked more. Now add the chopped dryfruits and cook for 2 mins, till now kheer must have got enough thick.

Now remove it from flame and add white chocolate pieces immediately. The chocolate pieces will melt in it.

It tastes best when served warm.


NOTE: To grate bottle gourd. First peel it, cut and remove seeds. Then wash it and grate.
The amount of star anise depends on your taste, you can increase or decrease according to your taste. Adding two star anises here gives the average required flavour.
Add sugar according to your taste as even white chocolate will contain sugar, so add it accordingly.

Chocolate Dryfruit Fudge...!!!

Chocolate fudge is very popular in among chocolate lovers...even i am one:-))...This i had tried last week and it came out very well. It was very chewy and tasty... i had combined the general recipe with some of y addones.

INGREDIENTS:

400 gms sweet condensed milk
1/4 cup sugar
1 1/2 cup drufruits sliced(almonds,cashewnuts,walnuts)
1/2 cup cocoa powder
1/2 cup cocoa butter( or butter)

METHOD:

Heat a non stick pan and add butter. when it melts add condensed milk , sugar,cocoa powder and dryfruits.

Stir gently and cook on medium heat till the mixure leaves the sides of the pan.Stir countinously.when done remove from flame.

Grease a dish and pour evenly into it .Sprinkle remaining dry fruits on it and allow to cool and set.

Cut into squares and serve.

Preparation Time: 25 mins

Chocolate Dryfruit Rocks...!!!

Chocolates are everyones favourite.I just love them in any form. I try different chocolate recipes and this is the most common and easiest one.This dryfruit filled chocolate rocks are very tasty, no one will be able to resist them if they have it once:-))

INGREDIENTS:

2 cups grated cooking chocolate
1/2 cup cocoa butter
1/2 cup chopped walnuts
3/4 cup roasted and chopped almonds
1/2 cup chopped cashewnuts
1/4 cup raisins
1/4 cup pistachoes

METHOD:

Mix grated chocolate and cocoa butter in a microwave safe bowl and microwave it on high for 60 secs or till it gets melted well. Whisk the mixture well and add all the dry fruits and mix well.

Now take a tray and put butter paper on it. Take a table spoon full of that mixture and put on that butter paper. Repeat with rest of the mixture.

Refrigerate it till the chocolate gets set. It may be for 30-50 mins.

Enjoy home made tasty chccolates.

NOTE:If microwave is not there, you can melt the chocolate by using a double boiler.
To roast almonds in microwave, keep them on high for 2 mins and on grill for more 2 mins.
You can use any of your choice drys fruits in this chocolates.

Blackcurrant Chocolate Nuga Delight...!!!

Chocolate is everyones favourite. Even i love it.Its difficult to say no if any one offers you a chocolate. Chocolate dipped desserts are very famous all over the world. I had tried one such dessert made from blackcurrant and butterscotch nuga. I had never thought of making butterscotch nuga at home , but i made it. It is very easy to make it. Dessicated coconut gives it a nice flavour and taste.This dessert will be surely loved by kids as well as adults. This is my new sweet fot this years diwali.

INGREDIENTS:

150 gms dark cooking chocolate
1 cup desicated coocnut
1 cup black raisins
1/2 cup sliced almonds
1/2 cup sugar
1/2 cup pistacho powder
2 table spoon butter
1/4 cup condensed milk(optional)

METHOD:

heat a pan and add sugar and butter.Keep on stirring till the mixture is thickened and gets brown color.Be careful so that it does not get burned.When its done remove it from flame nad put the almond slices in it and coat them well with the mixture.

Take a butter paper and grease it with butter. Pour the hot almond and sugar mixture on it and spread properly to form a thin layer.Let it cool for 5 mins. Then refrigerate it for 20 mins so that it getd hardened.Remove it from paper and grind it coursely.Butterscotch nuga is ready.

Take the dark chcolate cube in a microwave safe bowl and micowave it on 100% power for 1 min.It will melt.


Grind coursely black currant raisins, 1/2-3/4 quantity of nuga , 1/2 cup dessicated coconut and pistachoes powder.It should be a sticky mixture.If the mixture is not that stick add some condensed milk and grind again.

Make small balls of this mixture and deep them in melted chocolate. Let the whole balls get coated with chocolate, then roll them in dessicated coconut mixture and put them on butter paper.You can keep some balls plain without rolling in dessicated coconut and some you can even roll in pistachoes powder or nuga powder.

Refrigerate them till they set. Yummy chocolate sweet is ready.

NOTE:To make dessicated coconut at home, microwave grated fresh coconut for 3 mins on high with stirring in between.Then grind it to fine powder.

Simple Chocolate Brownie...!!!

I have tasted different kinds of brownies but had never tried making them at home, but i found one easy brownie recipe in one of my cook books so i tried it and it was quite tasty.We enjoyed it.It gets ready in just 10-12 mins and no much work, just mix things and microwave does the rest:-))...i had added egg in it, which gives it a glossy texture.





INGREDIENTS:

2 cups milk
4 tea spoon cocoa powder
2 eggs
1 tea spoon vanilla essence
4 table spoon powdered sugar

METHOD:

In a microwave safe bowl mix milk,cocoa,sugar and vanilla essence and microwave at 100% power for 6-7 mins.

Beat the eggs well and add to the mixture.You can add 1 egg also if you do not like egg smell much.microwave it at 60% power for 4 mins more or till it becomes solid like brownie.

Chocolate brownie is ready.Serve Chilled.


NOTE: Instead of egg gelatin can also be added. Mix 1 table spoon of gelatin with 1/2 cup of water and add same like eggs.

Preparation Time: 10 mins.

Nutty Chocolate Roll...!!!

This nutty chocolate roll looks realy yummy na...and it tastes also very good. Everyone will like this roll. It is chocolate role stuffed with nuts and strawberry syrup.And chocolate syrup on top of it makes it damn yummy. By luking at it one may think that it will be very difficult to make this rolls, but it is damn easy. Kids just love this roll.We see such rolls outside in pastry shops and buy from there. We never think of making them at home,as they seem very difficult to make.But now we can make such roles at home that too with less effort.This role requires ingredients that are easily available at home.

INGREDIENTS:

For Roll:

2 cups marie biscuits crushed(fine powder)
3/4 cup drinking chocolate
1/2 cup powdered sugar
1/4 cup milk
1/2 cup dessicated coconut
1/2 cup chopped cashewnuts, pisatochos and almonds
1/2 cup strawberry syrup
1/2 cup icing sugar
9-10 cherries
1 tea spoon butter

For Chocolate Sauce:

1/2 cup water
1/2 cup sugar
1 tea spoon cocoa powder
1 tea spoon drinking chocolate


METHOD:

Take a bowl and add marie biscuit powder , drinking chocolate and sugar in it. Mix it well.Add sugar according to your taste. Add milk and kned it well so that it becomes very soft and firm like a dough.Apply butter to make it smooth and keep aside.

Now the stuffing need to be done. Mix the coconut, with dry fruits and mix. Add icing sugar to it to make it enough sweet.Mixture is ready.

Take a piece of dough ball and give it round shape. Flatten it using hands and role it using icing sugar. Make a thick flat roti of it by rolling, do not make it thin.Now cut the big roti in to long strips of 2 inches broad.

Now apply the strawberry syrup on the top side on the cut strip. Add the coconut and nuts mxture above it. Role it into a roll as shown in the above pic. Side ways it will look like the pic below.

Now we need to make the chocolate sauce. Mix the water and sugar and heat the mixture when the sugar and water mixture starts boiling up add the cocoa powder and drinking chocolate powder and stir. Let the mixture boil again and become thick. When the mixture becomes thick remove it from heat and cool for some time. Choco sauce is ready.

Now take the rolls and add chocolate sauce on them and garnish them with cherries. Serve them.





NOTE: This rolls can be stored in refrigerator for 4-5 days.
Filling can be changed according to your needs. Even cut strawberry pieces can be added to this roll mixture, but they have to be consumed soon , they cannot be stored for more then a day.
