Pahadi Dum Alu...!!!

This creamy and tasty " Pahadi Dum Alu" or we can even say " White Dum Alu" is perfect for this winter season. I got this recipe from one of my friend from Shimla.I had it at her place once and just loved it.It may not be the authentic pahadi recipe, but it was one of the famous dishes at her place in shimla.Its gravy is creamy and rich filled with yogurt, cashewnuts and cream.The spices added are just perfect and give it a very nice aroma.Its very nice to have this in chilling cold with hot nans or parathas.

INGREDIENTS:
  • 10-12 baby potatoes
  • 1 cup fresh cream( low fat)
  • 1 cup fresh yogurt(not too sour)
  • 1/2 cup cashew nuts (soak in water for 1 hr)
  • 2 cups finely chopped onions
  • 1 cup sliced onions
  • 3-4 green cardamoms
  • 2 bay leaves
  • 1 tea spoon shahi jeera
  • 2-3 green chillis finely chopped
  • 1 table spoon ginger-garlic paste
  • 1 tea spoon chilli powder
  • 1/2 -1 tea spoon garam masala
  • salt
  • oil

METHOD:

Half boil the baby potatoes and peel them.Prick them in between with a fork. Heat little oil in a pan and saute the finely chopped onions till golden brown.Cool them and grind them using very little water to a fine paste.

Heat little more oil and fry the sliced onions till crisp and brown and keep them aside. Grind cream, yogurt and soaked cashewnuts to form a very fine thick paste.

Heat a non-stick pan and add little oil.When it gets heated add green cardamoms, bay leaves and shahi jeera.After 1 min add chilli powder and saute it for 20 secs.Now add the half boiled baby potatoes and let them get coated well with the mixture.Saute them on medium to high flame for 2-3 mins.

Add chopped green chillis, ginger-garlic paste and saute it for some time till raw smell goes.Add the fried onion paste and little water and mix it well.Cook it for 3-4 mins and then add salt and garam masala.Stir it well.

Finally add the cream,yogurt and cashewnut paste and stir and cook it till it boils.Add little water if gravy is too thick.Bring it to boil and remove from flame.

Garnish it with fried caramalised onions and serve hot with parathas or nan.


NOTE: If you do not get baby potatoes, you can use scoops of normal size potatoes.Half boil them and remove scoops and use.

Dear Siddhi
Its a great dish although I have doubt if it is an original dish from Uttaranchal. I have extensively traveled in the hills there the alu dum at way side resturant is very different. But may be those are chep alu ka sbji for the travelers..:-)
Notwithstanding the source , I am going to try this soon. This is the time the market is flooded with fresh pahaDi alus...small ones are perfect for this..

Siddhi,love ur awesome recipe for Pahadi Dum Alu. Its been v long sine I tasted them. My mom made such yummy dum alu..so ur dish made me nostalgic. I'll surely try ur creamy pahadi delight when I get some baby potatoes.

Very rich dish....for some reasons just love any dish which has pahadi in front of it...I guess love north Indian Hill stations... specially himachal & kashmir...
