Egg Stuffed Spinach Paratha...!!!

This egg stuffed spinach paratha is a very tasty and filling dish.This egg paratha was a common recipe at my place, so i modified it by using spinach paratha dough instead of normal and they turned out to be very tasty .They make a healthy and filling snack or breakfast.

INGREDIENTS:

For Dough:

2 cup wheat flour
1 cup spinach leaves(palak)
1 inch ginger
3-4 green chillis
1/2 cup coriander leaves
2 tea spoon cumin powder
1 tea spoon chilli powder
1 tea spoon corainder powder
salt
oil

For Stuffing:

3 eggs
2 onions chopped
1/2 tea spoon pepper powder
1 tea spoon turmeric powder
salt
butter/oil

METHOD:

For dough grind all the ingredients except flour and oil into a fine paste using little water.Now mix this paste into flour and kned into a soft dough using water and little oil.Keep aside for 30 mins.

Now add salt and turmeric powder to the chopped onions.Beat eggs and add to this mixture and add pepper powder.

Now make balls and roll out thin rotis of it.To make a single paratha roll out two thin rotis of equal size.Heat a tawa and add butter.Now put one roti on it and spread egg mixture on it.Do not add lots of it as it can come out.Fill the whole roti with it leaving 1 inch area around its edge.

Now take the second similar size roti and place it exactly on top of the first one.Press and seal the edges carefully so that mixture do not come out.Let the paratha get cooked.When its done on one side turn it and cook on other side.Add butter in middle.

When its done on both the sides, cut it into pieces and serve with ketchup.


NOTE:Vegetarains can use grated paneer in this paratha instead of egg.Add salt. turmeric and little chat masala and lemon juice to grated panner and use as its stuffing.
This spinach dough can be used to make simple parathas also which taste very good with pickle or curd.

Mughlai Egg Paratha...!!!

Mughlai Paratha is a North-west Indian staple food item made from flour.It comprises filling of vegetarian like potato or non-vegetarian material like kheema and dough is essentially rolled and fried. These parathas can be eaten with vegetarian or non-vegetarian main course dishes, pickles or sauces.In this mughlai paratha i had used egg as stuffing. It turned out crispy and very tasty. Its a very filling and tasty snack.

INGREDIENTS:

1 cup maida(all purpose flour)
2 eggs
1/2 cup fresh grated coconut
1 big onion finely chopped
2-3 green chillis chopped well
1 table spoon ginger-garlic paste
1/2 tea spoon turmeric
1 table spoon corainder chopped(optional)
oil
salt

METHOD:

Kned the maida using little,salt,oil and water to a soft dough.keep it aside.

Take a bowl, add grated coconut,salt,turmeric, onion ,ginger-garlic paste,green chillis,,corainder and mix well.Now beat the two eggs well and mix in this mixture. It should form a paste like mixture.

Make four balls of the dough.Roll out a thin roti of one ball approx 8-9 inches diameter. It should be thin.Now place one fourth of the egg filling on it.Wrap the filling carefully from all sides to make a square.Be carefull to seal it properly or else the egg mixure can come out.

Heat one tablespoon of oil in a pan and place the paratha carefully in it without letting the filling come out.Fry well till both the sides become golden brown and crisp, use extra oil if required.Repeat same with other parathas.

Serve hot with tomato sauce.

Methi Paratha...!!!

I like methi vegetable a lot. So i try different things of it.This methi paratha is also a good combo. Its a tasty and healty breakfast too. Very simple to make.

INGREDIENTS:

2 cups chopped fenugreek leaves(methi)
1/2 cup besan (gram flour)
3 cups wheat flour
2 tea spoon chili powder
1 tea spoon corainder powder
1 tea spoon cumin powder
4 table spoon butter
Salt

METHOD:

Chop methi leaves into small pieces and add salt. Keep for 5-10mins. Squeeze water out of the leaves.

Mix all the other ingredients.Add methi leaves to the ingredients mixture . Kned it intoa soft dough. Apply oil and leave for 1-2hours.

Make paratha of medium thickness and fry it and apply butter on both the sides.

Serve hot with pickle or sauce.

NOTE:Usually the methi leaves are squeezed after applying salt to remove some of its bitterness, but by doing this some of its nutrients are also lost. So it is your choice to do it or not. Leaves can be used directly also.

Palak(Spinach) Paratha

This paratha recipe i got from net and i tried it with some of my modifications as usual and it turned out well. Many people who do not like to eat spinach will also enjoy this parathas, as they are very tasty.They are also very simple to prepare. A healty breakfast gets ready in no time...

INGREDIENTS:

Wheat Flour 2 cup
Palak(Spinach) leaves 1 Cup
Ginger 1″ piece
Green Chillies chopped 5 Nos
Coriander leaves 1/2 cup
Jeera 2 tsp
Chilli powder 1 tsp
Corainder powder 1 tsp
Salt



METHOD:

Mix all the ingredients(except flour) and blend it in a mixer to a fine paste.


Mix this mixture with the wheat flour and oil, knead till the dough is smooth and soft.


Make medium size balls of the dough, roll it. Fry paratha on tava, apply ghee on both sides.


Serve hot with pickle or curd.

Serves : 5

Aloo Paratha...!!!

This is one of my favourite dish for dinner.I just love it. Before i never use to like parathas so much.Once i had gone for our college tour to north india, it was in himachal pradesh where i had these lovely parathas. Parathas are very famous over there, you get them in small restaurants called dhabas...which are very famous there. So there i had them and just loved them so much tht i even asked for the recipe to one of the dabba owners wife..so this recipe i got from her and i tried it so many times and they are always yummy!!!


So here is the recipe ...try it is possible
INGREDIENTS:
2 potatoes
5 table spoons finely chopped coriander leaves
4-5 finely chopped green chilles
2 table spoons very finely chopped ginger
2-3 cups wheat flour
1 tea spoon turmeric powder
1 table spoon oil
4 table spoon ghee or butter
salt to taste
METHOD:
Add water, salt to the wheat flour and make , similar to chapati dough. Apply oil to it and keep for 1 hour
Boil the potatoes and mash them and add chopped coreinder leaves, chilles, ginger and also turmeric powder and salt.Mix the mixture well.
Take a small ball of dough,roll it to a size of small thick puri. Now make a small ball of potato stuffing(it must be enough for d puri dough) and place it on top of the puri and close the puri carefully.
Now role this ball carefully applying wheat flour. Be carefull while rolling,so that the potato stuffing dont come out.
Fry this paratha on tava applying ghee on both the sides.
Serve hot. While serving extra ghee can be put on it and served, it tastes increases along with the calories also...he he
Serve it with pickle or curd.
