Fancy Apple Paneer Potato(Baked Cheesy Delight)...!!!

This is a very simple and tasty baked delight.It consists of apple, paneer,potato and sweet corns along with some mild seasonings and cheese which give it a sweet ,mild spicy , tangy and cheesy taste.We all loved it when i had tried it for the first time and since then i make this often.Its a very quick dish.Give it a try and see i am sure u all will like it.

INGREDIENTS:

  • 1 cup diced apple cubes(peel and dice)
  • 1 cup paneer cubes(cottage cheese)
  • 1 cup boiled potato cubes
  • 3/4 cup sweet corn kernels( blanched)
  • 1 cup grated mozzarella cheese
  • 2 table spoon lemon juice
  • 1 tea spoon pepper powder
  • 1 tea spoon butter
  • salt

METHOD:

Take a bowl and mix diced apple, paneer pieces, boiled potato cubes and blanched sweet corn kernels. Add salt, lemon juice and pepper powder to it and toss them well so that all the cubes are coated with it.

Let the cubes get marinated for 30 mins.Grease a baking tray with butter.Add the marinated cubes to it and spread evenly in it. Spread the grated cheese all over it.

Bake it at 50 deg for 15-20 mins in oven or at convection mode in microwave at 100 deg till the cheese melts and becomes light brown.

Serve hot.

Corn On The Cob...!!!

Roasted or steamed corn always tastes good.Its more famous in important tourist spots.In goa on every beach you will find many roasted corn stalls.Here corn is roasted and lemon juice, salt and spices are applied and sold.Eating it at this places is always fun.I had been a big fan of this roasted spiced corn from childhood.I make it often at home and enjoy it.I had never tried to modify its preparation.But somedays before i came across this recipe and found it very interesting as the mariantion applied was different and even the roasting procedure was different.It was very much different from the usual roasted corn.So i tried it and just loved it.It was nice buttery and tasty.This recipe will taste best only when american sweet corn is used as it is more sweet campared to our indian corn.This recipe has got its name as "corn on the cob" cause of its special roasting and serving technique.Corn on the cob is the culinary term for a cooked ear of freshly-picked maize from a cultivar of sweet corn. The ear is picked while the kernels are still tender. Other varieties called field corn are edible as "roasting ears", but are not tender or sweet. Ears of corn are roasted, steamed or boiled, with or without their green husks. The husk leaves are then removed before serving.Corn on the cob is usually eaten while still warm. I am sure you will love it.

INGREDIENTS:

1 whole american sweet corn
1 table spoon butter
1 table spoon chopped corainder leaves
1 table spoon finely chopped garlic cloves
salt

METHOD:

Peel the corn and keep aside.Do not throw its husk out.

Take a bowl and add butter in it.Then add chopped garlic, salt, corainder and mix it well.Apply a thick layer of this paste on the corn.

Cover it fully with kept husks,Just one thin layer enough to cover it fully.Then tie a long thread fully around it,and roast it evenly on hot charcoals or even gas will do.Do not allow the tied husks to fall.

when husk is almost black that means the corn is done.Remove the tied husk and serve hot.


NOTE: Use only american sweet corn for this recipe.

Idli Fingers...!!!

This crisp idli is a very quick and tasty recipe. Specialy left over idlis can be utilized here. They can be done in just 5 mins.

INGREDIENTS:

5-6 left over plain rava idlis
4-5 table spoon salted butter

METHOD:

Cut each idli into long thin strips. Heat a non stick tawa and put butter on it. Shallow fry the idli strips till light brown and crisp on both sides.

Serve hot with sauce or some gravy. They realy taste nice.


NOTE:Use of butter is a must. If u use ghee/vanaspati or oil the taste is spoiled.Butter gives them the perfect taste and cripiness.

Chocolate Dryfruit Rocks...!!!

Chocolates are everyones favourite.I just love them in any form. I try different chocolate recipes and this is the most common and easiest one.This dryfruit filled chocolate rocks are very tasty, no one will be able to resist them if they have it once:-))

INGREDIENTS:

2 cups grated cooking chocolate
1/2 cup cocoa butter
1/2 cup chopped walnuts
3/4 cup roasted and chopped almonds
1/2 cup chopped cashewnuts
1/4 cup raisins
1/4 cup pistachoes

METHOD:

Mix grated chocolate and cocoa butter in a microwave safe bowl and microwave it on high for 60 secs or till it gets melted well. Whisk the mixture well and add all the dry fruits and mix well.

Now take a tray and put butter paper on it. Take a table spoon full of that mixture and put on that butter paper. Repeat with rest of the mixture.

Refrigerate it till the chocolate gets set. It may be for 30-50 mins.

Enjoy home made tasty chccolates.

NOTE:If microwave is not there, you can melt the chocolate by using a double boiler.
To roast almonds in microwave, keep them on high for 2 mins and on grill for more 2 mins.
You can use any of your choice drys fruits in this chocolates.

Kothambir(coriander) Vadi...!!!

This days people are become more calorie consious, so many prefer to eat less oily stuff to avoid more calories. But at the same time this less calories food must also be tasty as well as healthy. Steamed food is one of the good options to avoid less calories. Today i am posting corainder vadi , which is a very tasty and healthy steamed snack.Its most popular in gujrati cuisine.Its so simple that it gets ready in just 8-10 mins.


INGREDIENTS:

3/4 cup besan(gram flour)
1/2 cup choppped fresh corainder leaves.
3 tea spoons ginger-garlic-chilli coursely grinded
1 tea spoon red chilli powder
1/2 tea spoon turmeric powder
1 tablespoon roasted til
3 table spoon grated coconut
1/2 tea spoon baking soda

For Seasoning(Tadka):
2-3 tea spoon oil
1-2 tea spoon mustard seeds
4-5 curry leaves
2- slitted green chilles
3-4 cloves of garlic smashed


METHOD:

Mix all the ingredients in a bowl. Add water to make a thick paste, but it must be able to flow a little.

Grease a microwave safe dish.Pour it into it, and put it in microcooker with liitle water below and and microwave at high power i.e 100% power for 5 mins.Give a standing time of 2 mins.

Remove from it and cut into pieces. For the tadka heat oil in a small kadia, add mustard seeds, when they pop add green chillies, garlic and curry leaves. Fry till they turn crispy.

Pour it on the corainder vadi pieces. Garnish with chopped corainder leaves and serve.


NOTE: If you want to steam it on gas insted of microwave, Steam it in cooker for 20 mins.

Quick Bread Pizza...!!!

This is the most easiest bread pizza i have ever seen.Its crispy toasted bread and a spread of all veggies, cheese and tomato sauce.Its very simple to make and tasty pizza. If you don not have pizza base and you are in mood to eat a pizza. Just try this simple one.

INGREDIENTS:

3-4 sandwitch bread slices
1 cup chooped cabbage
1/2 cup capsicum chopped
1/2 cup tomato chopped
2 table spoon salter butter
3-4 table spoon tomato chilli sauce
1/2 cup grated chesse
pepper powder
salt

METHOD:

Mix all the vegetables together with a pinch of salt.Heat a pan with little butter. Toast the slices on both the sides till its crispy.

Now apply tomato chilli sauce on one side of the toasted slice.Add the mixed veges on it evenly all over. Sprinkle lot of grated cheese.

Keep it on a microwave plate n cook on 60% power for 40 secs and 80 secs on high ie 100% power. All the cheese gets melted.

Remove from microwave and spinkle some pepper powder. Top it with a tomato chilli sauce.

Serve Hot.

Veg Grilled Sandwitch...!!!

I was staying in pune for last 8-9 months.Pune city is famous for many things. Its also famous for the restaurants or small cafes which are present there. Roadside snacks are also very famous over there like vada pav, pakodas, sandwitches,dabelis etc.There was one sandwitch wala opposite to the building where i used to stay. He used to make awesome grilled sandwitches garnished with sev and cheese.I have tasted many grilled sandwiches in many restaurants but till now , not even one sandwitch tasted like his. His were just superb.Me and my friends used to love them. Now i am in goa from past few months and i realy miss those sandwitches. So few days before i decided to try them at home. I used to see him making them many times.So i followed it. It became very tasty, my attempt did not fail.Its taste was almost close to his.-:))

INGREDIENTS:

8 sandwitch bread slices
1 cucumber
1 boiled potato
1 tomato
butter
chat masala
pepper powder
salt
1 cup shev
1 cheese cube
1/2 cup tomato sauce


METHOD:

Cut the cucumber, tomato, potato into thin round slices.

Remove the sides of the bread slices.Take two slices.Apply butter on each slice.Now apply the corainder mint chutney above the butter on each slice.

Layer potato,tomato and cucumber on one bread slice. Keep 4 slices of each on one layer.sprinkle some salt, pepper powder and chat masala in between each layer if you want spicy or above all layers.

Grill it in a toaster till it becomes light brown and crispy.

Remove it when done. Cut into two halves.Apply little sauce on top of it.Then sprinkle lot of sev on it.Grate cheese freshly over it.

Serve Hot...

Sweet Corn Butter Chaat...!!!

Sweet corn is very popular in india now a days.Many dishes can be prepared from it, like pulav,chaats etc. This steamed corn chat is very popular. You get it in malls and multiplexes.One cant resist to have steaming hot corns with diffrent spicies.This is my recipe which i had experimented and it tasted very good.

INGREDIENTS:

1 cup fresh sweet corn
3 tea spoon butter
1 tea spoon garam masala
1/2 tea spoon coriander powder
1/2 tea spoon chat masala
1/4 tea spoon pepper powder
salt

METHOD:

Steam the sweet corns. When they are hot take them in vessel and keep on very low flame.

Add butter and mix well.When the butter melts and mixes with it,add garam masala, corainder powder,salt and mix well.

Remove in a serving dish and sprinkle chat masala and pepper powder.

Serve hot.

NOTE: Amount of spices can be increased or decreased according to your taste.

Bread Pattis...!!!

This snack is very tasty and easy to make. If you are boared eating bread and sandwitches, you can try this. It is different from it and has a nice taste. It does not require any extra items, all ingredients are mostly present at home.

INGREDIENTS:

4-5 bread slices
11/2 cup basen
1/2 cup finely chopped onion
3/4 cup grated cheese
2-3 green chillis chopped
2 table spoon corainder leaves chopped
1 tea spoon chilli powder
3/4 cup tomato-chilli sauce
salt
oil/ghee

METHOD:

Take a bowl and mix besan with onion, chilli powder, green chillis, corainder leaves nad salt. Add water and make a thick paste.Do no make a a thin paste.


Now cut the breadslices into two pieces.Heat oil in a pan.

Now take a half part of bread slice.Apply the besan paste all over it on one side. sprinkle cheese on it and put it for shallow fry. The side on which besan has been applied must be placed downwards.

When its geting fried. Apply besan paste to the other above side of the slice and sprinkle cheese. When the lower side is fried that it is become golden brown, turn and let the other side get fried.

Repeat the process with all the other bread slice halves.

Serve hot by applying tomato-chilli sauce all over it.

Cheese Carrot Rolls...!!!

Most of the people who have realy less time 2 cook need some easy recipes. And those recipes need to be healthy too. This cheese carrot roll is very quick recipe and is very healthy too.It has carrot which is a very nutritious vegetable.I had read this recipe in some megazine some months ago. I thought the combination of cheese and carrot wont taste good, but when i tried it it tasted awesome. And the best thing about this dish is u get tasty and nutritious snack in very less time and effort.

INGREDIENTS:

5-6 bread slices
1 cup grated carrot
1/2 cup grated cheese
1 tea spoon finely chopped ginger(or ginger paste)
1 tea spoon chilli finely chopped(or chilli paste)
1/2 tea spoon chat masala
1/4 tea spoon pepper powder
Amul butter( or any other brand)
salt

METHOD:

Take the grated carrot in a bowl and add cheese and mix well. Now add the chilli, ginger and chat masala and pepper powder and mix well.

Now remove the sides of the bread slices. Take 1 slice and roll it a bit to flatten it. Now apply little water to it and press and remove water. Roll again to flatten it more.

Now add the carrot and cheese mixture in the center and close the slice and seal. Repeat the process with the other slices also.

Now heat a pan and add butter. Shallow fry this rolls on low flame till crisp and brown on both sides. Add butter in middle of frying.

Serve hot with tomato-chilli sauce.

Note: Using butter to fry this rolls is a must.Using oil or ghee wont make them as tasty as butter.

Preparation Time: 15 mins.


Tawa Mushroom...!!!

In Goa its mid of rainy season now. This time we get naturaly grown mushrooms. They grow in deep forests and people remove them and sell them in markets, as they have lot of demand. I just love this mushrooms very much-:).They are damn tasty and yummy. Below i have added pics on those mushrooms. I have added both the bigger mushrooms and small mushroom pics.They have lot of mud on them so they have be washed properly and carefully.Many tasty dishes can be prepared from them. Tawa mushroom is one such easy dish,which can be done very easily.You can even use button mushrooms in place of this local mushrooms.


Big Size Mushrooms

INGREDIENTS:

2 cups chopped natural mushrooms(or artificialy grown mushrooms)
2 big onions chopped lengthwise
1/4 cup fresh grated coconut
1/2 tea spoon chilli powder
1 tablespoon garam masala
1 tea spoon turmeric
salt
1-2 dry kokum or tamrind extract
oil

METHOD:

heat a pan and add oil and fry the onions till they become light brown.Now remove them from pan.

In the same pan add more oil if required and fry the mushrooms for 4-5 mins.Now add the onion to them and fry for 2-3 mins.

Now add the chilli powder, salt, garam masala and turmeric powder and mix well.Add the grated coconut now and mix. When they are almost cooked cut the kokum in 2 pieces and add to it and mix.Remove from flame.

They are ready.Serve hot.

Serves:3-4

Dry Fruits N Dates Laadus...!!!

Well shravan month has started yesterday so i decided to make something sweet and also which can be stored for some days. We had dates at home so decided to make this laddus. I had seen a similar recipe on tv some months back, dint remember the exact recipe but tried something similar to it in my way and they were indeed very tasty. They are very nutritious laddus...Can be used as prasad also...can be made very quickly.

INGREDIENTS:

2 Cup Seedless dates(khajur)
1 Cup Cashew nuts
1 Cup Almonds
1 Cup Grated Dry Coconut(khobra)
1 tablespoon Poppy Seeds(khaskhas)
2 table spoon Desi Ghee


METHOD:

Grind cashews and almonds separately in a dry course powder and keep aside.If the dates contain seeds remove them and cut into small pieces.

In a pan heat the ghee and add dates.Let the dates cook with constant stirring for 5-7 mins..Cook till the colour becomes slight dark and they become soft .Keep aside for cooling.

Grind the cooked date mixture to form a course paste.Fry the poppy seeds in ghee for 1 min and remove from flame.

Mix date paste, almond powder, cashew powder, grated dry coconut and poppy seeds to form a even mixture.Form lemon sized balls out of this mixture.

Laadus are ready. Store them in container.

Sweet Corn Rice...!!!

This is a very easy and tasty recipe.Whenever i want to make a quick lunch i make this. Sweet corns give it a very nice and sweet taste. It gets ready in no time.

INGREDIENTS:
2 cups basmati rice
1 cup sweet corns boiled
1/2 cup green peas (optional)
2 onions chopped lengthwise
2" cinamon stick
4-5 peppercorns
5 cloves
2 bay leaves
1/2 tea spoon shahi jeera
1/4 tea spoon turmeric
1/ tea spoon corainder powder
1 veg maggi cube
4-5 tea spoons chopped coriander leaves.
1/2 lemon juice
ghee
salt

METHOD:

Soak the rice in water and put on a cotton cloth for 30 mins after adding a spoon of oil.

Take a pan add ghee and fry the onions till golden brown then add the sweet corns and green peas. Fry for 5-6 mins.

Meanwhile take another pan add ghee. Now add all the dry whole masalas like cloves, pepper,cinnamon,shahi jeera and bay leaves.Fry for 2 mins. Add the soaked rice and fry for 4-5 mins.

Add the fried rice in the sweet corn mix. Mix it properly.Now add 4 cups of hot water.Add powdered maggi cube, turmeric powder, corainder powder and salt.close the lid and let the rice cook.

When the rice is almost done add lemon juice on top and garnish with coriander leaves.Remove from flame.
Its ready!..

Serve plain or with dal fry/gravy dish.

Egg Role...!!!

Yest i was thinking of making something different and easy.I wanted to try something with egg. As one of my fren was supose 2 come 2 visit me ans she loves eggs.So i just surfed the net and found egg role, which seemed easy and tasty.Its a bengali dish.So i tried egg role with my modifications and they were indeed yummy. My fren liked them very much,She even took the recipe from me.

INGREDIENTS:

3 Spoon Heaps of Maida
1 Spoon Heaps of Wheat Flour
3 Eggs
1 Onion chopped vertically
2 Green Chillies
1/2 teaspoon chilli powder
1/2 teaspoon garam masala
pinch of pepper.
Hot and sweet Tomato Ketchup
Salt to taste
Oil


METHOD:

Mix maida and wheat flour with salt to taste and little oil and knead the dough. Keep aside for atleast half an hour.

In a small pan, add little oil and heat it.Add sliced onions and green chillies to it.Then add the chilli powder and garam masala and cook them till onions lose their rawness and look light brown. Keep aside.

Break the egg each one in 1 bowl and add salt and beat them.

Make 3 balls out of the dough and roll them into regular thin chapatis one by one.Heat tawa and transfer the rolled roti on to the tawa. Put little oil from sides.When one side is almost done flip the roti and let the other side cook for a while.


Then add the egg mixture of one egg onto the cooking roti and spread it all over the roti and let it cook for a minute or so.Flip it, add oil from sides and cook from the egged side till egg is cooked completely.

When its almost cooked transfer the cooked egg roti on to this plate. Egg side on top.Sprinkle a bit of pepper.Spread the 1/3rd mixture of cooked onion and chilli in the middle as one line. Add single ketchup line to taste.

Now roll the egg roti into the egg roll.Repeat same process for remaining two rolls.



NOTES:
I didnt use complete wheat flour for roti as otherwise you tend to get wheat flour taste in the roll which I dont like in the roll. I didnt use complete maida because otherwise after cooking the rotis tend to get too hard. Hence this combination.
While rolling the roti, the best way to get perfect roll is to first put one side over the other such that mixture is covered and is tightly filled in from one side. and then roll it into the roll from same side.


Makes 3 rolls

Simple Prawns Biryani...!!!

Many people like prawns.Even i am a fan of prawns...:))...Many tasty dishes can be made from prawns...Today i am posting one of them.Prawns biryani is realy tasty and can be made in no time. This recipe is my experiment.This is very simple and easy recipe. I took the recipe of my egg biryani and modified it a bit and made prawns and belive me it became realy spicy as i like and tasty...

INGREDIENTS:
2 cups basmati rice
1 cup prawns( shell removed and cleaned)
2 medium sized onions chopped
1 table spoon ginger garlic paste
1/2 teaspoon chilli powder
1 teaspoon garam masala
1 teaspoon turmeric
1 teaspoon corainder powder
1 veg maggi cube
2' cinnamon
4-5 peppercorns
4-5 cloves
3-4 bay leaves
1/2 lemon
oil/ghee
salt

METHOD:

Apply salt and little turmeric to the prawns.

Take a pan and add ghee and fry the onions in it till they become translucent.Now add the ginger garlic paste and mix well.Fry for 2 mins.

Now add the prawns to it. Add turmeric.In this dish small prawns are preferred over big ones as they give a nice aroma to the dish. If you have big prawns cut them in small pieces and use.Fry the prawns till they get gt cooked for 7-8 mins and get bit golden colour.

Meanwhile soak the rice in water and spread it on cloth so that all the water drains out. Add a teaspoon of oil to the rice before spreading as this helps to separate the rice after cooking and it does not get sticked to each other.Let it be on cloth for 30 mins.


Now take a pan and add ghee. Now add all the whole masalas like cinnamon, cloves, peppers and bay leaves. Fry them for 2 mins and add the rice to it. Fry the rice for 5 mins.

Now add the fried rice to the vessel containing the prawns mixture. Add 1 and 3/4 cups of water. If more water required add later.Now add the chilli powder, garam masala, corainder powder,powdered maggi cube and salt.

Close the lid and let the rice cook.Check for 10 mins if the rice is done. when the rice is almost cooked sprinkle juice of lemon on it.

Remove from flame.

Its ready .Serve Hot.

NOTE: Small prawns are prefered in this dish as they get mixed well and give a nice aroma.If using bigger prawns cut them in small pieces and use.

Simple Pulav(Using whole spices)

I make different types of pulavs and biryanis.I prefer making them as they are very simply and gets ready in no time.I will keep posting diff types of them in future. As they contain diffrent types of vegetables they are healthy too.This simple pulav is one of them. Corn give a sweet taste, all the whole spices give a nice aroma to it.Its very simple and good to taste...


INGREDIENTS:
1 cup basmati rice
1 and half cups chopped vegetables (green peas, carrots, capsicum, corn)
1/2 tea spn black pepper
1″ cinnamon
5-6 cloves
2 bay leaves
1 tea spn shahi jeera
2 tbl spn cashew
2 green cardamom
1 black cardamom
3 green chillies
4-5 strands coriander leaves
1 veg maggi cube
Ghee
Salt

METHOD:

Heat ghee. Add pepper, cinnamon, cloves,shahi jeera,bay leaves, black and green cardamom. Fry for few minutes.

Then add cashews. Fry for a minutes, add rice, green chillies and vegetables.

Add salt and 1 and 3/4 cup water and add the powdered maggi cube. Cook on low flame till completely done.


Garnish with coriander leaves.

Serves : 2-3


Preparation time : 25mins
