Golden & Crispy Sesame Prawns...!!!

This a Chinese Starter which is crisp outside and soft and juicy inside. Its a perfect prawns starter for a small party or get together. Its a very quick recipe so do give it a try.




INGREDIENTS :
  • 12 large sized Prawns/Shrimps (Cleaned and Deveined)
  • 2 tea spoon lemon juice
  • 2 table spoon cornflour
  • salt
Marinade :
  • 1/4-1/2 tea spoon pepper powder 
  • 2 tea spoon soya sauce
  • 1/2 table spoon vinegar
  • salt
Batter :
  • 1 egg white
  • 1/4 tea spoon pepper powder
  • 3 table spoon cornflour
  • pinch of baking powder
  • 1 table spoon sesame seeds
  • 1 table spoon oil
  • 1/2 tea spoon salt
METHOD :

Wash the cleaned prawns.Rub lemon juice and salt on them and keep them aside for 15 mins.Wash them and pat dry again.


In a bowl mix all the ingredients of the marinade. Marinade the prawns in it at least for 1 hour in a refrigerator. 


Mix all the ingredients of the batter in a bowl and beat it a little. Heat oil to deep fry in a wok.Spread the cornflour on a plate. Remove each marinated prawn and make it pat dry.Roll it on the spread cornflour and them dip it in the prepared batter and let it get fully coated in batter.


Reduce heat and deep fry it till golden brown for 2-3 mins. Repeat it with other prawns. You can  fry 3-4 prawns together.


Drain them on paper and serve hot with schezwan sauce/Tomato-garlic dip.


Preparation Time : 20 mins.

Chinese Manchurian Sizzler with Fried Noodles & Schezwan Rice...!!!

Sizzling is all about capturing the flavour of 'smoke' to enhance the taste and flavor of an dish or combo of dishes. This miracle happens in front of you when the sizzler plate is placed in front of you. When hot sizzling platter is served in front of you its a treat to your eyes also.Many of our favourite food combos can be served as sizzlers.Sizzlers are of different types like Indian Sizzlers,Italian Sizzlers,Chinese Sizzlers,Continental Sizzlers etc. Today i am starting with a very simple chinese sizzler which comprises of Gobi manchurian , Fried Hakka Noodles & Schezwan Rice.Try it as its a real treat for Chinese food Lovers.



INGREDIENTS:


For Gobi Manchurian:
  • 1 medium cauliflower
  • 3 table spoon maida
  • 31/2 table spoons + 2 tea spoons cornflour
  • 3-4 tea spoons soya sauce
  • 1 table spoon chopped garlic
  • 1 table spoon chopped ginger
  • 3 tea spoons finely chopped green chillis
  • 1 cup chopped spring onion greens
  • 2 onions finely chopped
  • 1/2 tea spoon pepper powder
  • 1 table spoons tomato ketchup
  • 1 tea spoon sugar
  • Oil
  • Salt
For Fried Noodles:
  • 200 grams cooked hakka noodles
  • 1 cup longly sliced capsicum
  • ½ cup thinly sliced carrots
  • ½ cup spring onion greens and whites chopped
  • 1 cup thinly sliced cabbage
  • 1 onion sliced
  • 2 tea spoon chopped garlic
  • 2 tea spoon chopped ginger
  • 2  tea spoon soya sauce
  • 1/4 tea spoon pepper powder
  • 1-2 tea spoons of vinegar
  • ½ tea spoon sugar
  • Salt
  • Oil
For Schezwan Rice:
  • 4 cups cooked rice(cooked before 2-3 hours)
  • 2  table spoons of schezwan sauce
  • 1 cup chopped cabbage
  • ½ cup thinly sliced capsicum
  • ¼ cup thinly sliced carrots
  • ½ cup sliced spring onions
  • 1 onion chopped
  • ½ tea spoon sugar
  • Salt
  • Oil
For Sizzler Assembling:
  • 1 sizzler iron plate with wooden base
  • few fresh cabbage leaves
  • 1 table spoon oil
  • few tiny butter cubes

METHOD:

Firstly to make gobi manchurian.Remove small florets from the cauliflower and clean them properly. Put little salt in medium hot water and keep it florets in it for 30 mins. Remove them and dry them on kitchen towel. Take a bowl add maida , 31/2 table spoons of cornflour ,salt and ¼ tea spoon pepper powder. Add water and make a thick batter. Heat oil in a kadai .Deep each cauliflower floret in the batter and deep fry them till crispy and little brown. Keep them aside.

Now to make the sauce. Heat a pan and add 2 tea spoon oil in it. Add chopped garlic , ginger and green chillis and sauté for 2 mins. Add chopped onion and sauté for some time more till soft and pink. Add soya sauce, tomato ketchup and mix. Add 11/2 cup of water and let it boil. Add 2 tea spoons of remaining cornflour in 2 table spoons of water and make a paste. Add to the boiling sauce and keep on stirring till the required sauce consistency of sauce is achieved. Finally add spring onion greens, pepper powder, salt and sugar.Close n cook for 2 mins and remove from flame. Keep this sauce and fried cauliflower  fritters aside, as they have to be combined before arranging the sizzler.

 To make fried noodles firstly heat a non stick pan. Add 2 table spoons of boiled noodles in it and stir fry for  4-5 mins till they are little brown and done. Remove and keep them aside on a kitchen towel. Heat a wok and add little oil. Add ginger and garlic and sauté for 1 min. Add chopped onion and sauté for 2 mins. Add carrots and capsicum and sauté on high heat for 2 mins. Add cabbage and spring onion greens and sauté for 1 more minute. Add soya sauce, salt and sugar and mix well. Finally add before tossed noodles and sauté on high heat for 2 mins.Add pepper powder and vinegar and toss for few seconds. Remove from flame and keep aside.

To make schezwan rice.Heat little oil in a wok and add chopped onion and sauté on high heat for 2 mins. Add chopped capsicum and carrot and sauté for 2 more mins. Add carrots and spring onions and toss for more 1 min. Add schezwan sauce and toss for more 2 mins. Add salt ad sugar. Now add the cooked rice and toss on high flame for 2-3 mins carefully. Schezwan rice is ready.

To assemble the sizzler now heat the manchurian sauce for 3 mins and add the fried cauliflower fritters in it and close and cook for 2 mins. 

Remove the iron sizzler plate from the wooden base. Put  2-3 table spoon of water on the wooden base and keep aside.Apply oil generously all over on the iron plate on both the sides and heat it on gas flame till it gets very hot.  Now  reduce the flame and arrange cabbage leaves all over on the heating iron plate. Arrange hot fried hakka noodles one one side of the base and schezwan rice on the other side. Fill the center with hot gobi manchurian.

Now place this iron plate on the wooden base carefully to sizzle and smoke. Serve immediately.
If u want more sizzle you can even put some butter cubes on the hot iron plate just before serving.
I removed the snap of sizzler after the sizzler got cooled a little or else the picture would have been unclear due to smoke.

Preparation Time: 45 mins
 

Burnt Garlic Noodles...!!!

This Burnt garlic noodles are normal Chinese noddles flavored with garlic.Here burnt garlic does not mean that garlic in it is burnt during preparation but its a special cooking technique used in mostly for Chinese cooking to give a nice taste and flavor to the dish.Here the garlic is cooked in oil for some mins on very low fire which gives the dish a very nice flavor and taste.This is a very simple recipe, but frying garlic on low heat makes it very tasty.So do try it.


INGREDIENTS:

  • 100 grams Hakka noodles
  • 1/2 cup thinly sliced carrots
  • 1 cup sliced cabbage
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped spring onions
  • 1/2 cup thinly sliced capsicum
  • 1 table spoon finely chopped garlic
  • 1/2 tea spoon pepper powder
  • 2 tea spoon soya sauce
  • 1 tea spoon chilly sauce
  • salt
METHOD:


Heat 5-6 cups of water in a vessel and when it starts boiling add little salt and 2 tea spoon oil in it. Add the noodles and let them get cooked for 5-6 mins till done.Then drain the water and keep them under running cold water for some time.Drain them and keep them aside.


Now heat a non stick pan and add 2-3 tea spoon of oil. Keep the heat very very low. Add the chopped garlic and saute it on very low flame for 5 mins till its flavor infuses in the oil. Saute continuously and keep the flame low.This process is very important as it gives the main flavor in it.


Now when garlic flavor is infused fully in the oil and it has turned light brown add chopped carrot and spring onion whites.Saute for a min and add chopped capsicum, mushroom, spring onion greens and cabbage.Saute them all on high flame for 2-3 mins.


Then add soya sauce, salt,chilli sauce and toss well. Add the boiled noodles and mix them well with the veges. Add pepper powder and toss again for few seconds.Add more seasonings if you like and toss on high heat for 2 mins.


Burnt garlic noodles are ready.Serve them hot.

Chicken Momos With Tomato Chilli Garlic Sauce...!!!

"Momos" or "Momochas" is a type of dumpling which is  native to himalayas of Tibet., north-eastern part of India and also some parts of China.This dumplings are either steamed or even deep fried..The stuffing can consists of meat or vegetables.I had tasted this delicacy for the first time in Pune in a North-Eastern restaurant and had just loved it.Its very famous in some parts of pune due to the north-eastern population.Earlier i had posted a vegetarian version of momos...Mushroom Momos...you can check them.Today i am posting chicken momos which i had made few days back and they had tasted very good.I had steamed them as i did not want to increase my calorie intake by having deep fried items...You can even deep fry them to increase its taste instead of steaming.

INGREDIENTS:

For Outer Coating:
  • 200 grams all purpose flour( maida)
  • salt
  • oil
For The Stuffing:
  • 250 grams boneless chicken
  • 1-2 table spoons of ginger-garlic paste
  • 2 onions finely chopped
  • 2 tea spoon soya sauce
  • 1 tea spoon chilli sauce
  • 1-2 tea spoons of red chilli powder
  • 1 seasoning masala cube
  • 2 table spoons of chopped coriander leaves
  • salt
  • oil
For Tomato Chilli Garlic Sauce:
  • 2 tomatoes dry roasted
  • 4-5 red chillis dry roasted
  • 1/2 tea spoon brown sugar
  • 1 tea spoon soya sauce
  • 4-5 chopped garlic cloves
  • salt
METHOD:

Take maida in a  bowl and add salt and little oil and kned it into a soft dough using water.Keep it aside.Take the chicken pieces and apply ginger-garlic paste to them and cook them till they are almost done.Cool them and shred them into small pieces.

Heat a pan and add little oil.Then add the chopped onion and saute till it turns light brown.Then add the shredded cooked chicken and mix.Add soya sauce and chilli sauce and stir for 1-2 mins.Then add chilli powder and seasoning masala and mix well.Add salt and stir. Cook for 1-2 mins.Add coriander leaves and remove from flame and cool.

Roll out  small thin rotis from the kneded dough, they should be of small size diamter of each should be approx  4-5 inches.Put  2 teaspoon of stuffing on the center of each rolled roti and close it giving proper folds.You can even give them the shape of semi circle.Try to give any shape you desire but seal it properly so that the stuffing does not come out.

Heat a steamer with water.Make a bed of  cabbage leaves on the steamer plate and on them keep the prepared dumplings.Because of cabbage leaves the momos wont stick to the plate.Steam this dumplings for 15 mins.Momos are ready.

Now for the sauce grind roasted tomatoes and red chillis till they form a fine paste using little water.Heat little oil in a wok.Saute chopped garlic for 2 mins then add the tomato and chilli paste to it and little water.Let the mixture boil.Then add brown sugar, salt and soya sauce and cook for 2 mins.Sauce is ready.

Serve hot chicken momos with tomato chilli garlic sauce.

NOTE: My vegetarians friends can substitue chicken stuffing with soem vegetable stuffing and can enjoy them.

I am fowarding  this momos to jagrutis event Joyful Eating Whilst Traveling.Well i had not gone to Pune for a tour but was staying there for 10 months and had tasted this momos first time there.As one condition for the participation of event is posting a pic of the place where you had tasted this dish, i just have few pics of Pune, so i am posting a snap of the famous Dagdushet Halwai Ganesh Temple.It is the place which i have visited maximum times during my stay there,its a very beautiful and peaceful temple.I idol of lord ganesh in it is very very beautiful.
      

                                





Manchow Soup...!!!

This Manchow soup is one of the most popular soup in indo chinese restaurants of india...This soup is always my first preference whenever i order soups in chinese restaurants as its very spicy and tasty and i always prefer spicy food:-)...Since its one of my favourite soup ,i was trying this soups recipe to get exactly the restaurant taste and finally succeeded in it .It tasted exactly like restaurant version and was healthy also as i had added lot of veges and also not added any msg.I had tried both versions veg manchow soup and chicken manchow soup.Here i am posting the basic veg version and to make the chicken manchow soup i have listed the changes below.

INGREDIENTS:
  • 1 cup shredded cabbage
  • 3/4 cup finely chopped carrots
  • 1/2 cup finely chopped capsicum
  • 3/4 cup finely chopped mushrooms
  • 1 cup spring onions chopped(whites and greens seperated)
  • 1/2 cup chopped corainder(optional)
  • 5 cups vegetable stalk
  • 2 tablespoon finely chopped garlic
  • 1 tablespoon finely chopped ginger
  • 1 table spoon finely sliced green chillis
  • 1 tablespoon dark soya sauce
  • 1-2 tablespoon red chilli sauce
  • 1 table spoon white vinegar/lemon juice
  • 1/2 tea spoon black pepper powder
  • 2 tablespoon cornflour
  • 2 cups boiled hakka noodles
  • 1/2 tea spoon sugar
  • 1 table spoon oil
  • salt

METHOD:

Heat oil in a pot.Add chopped ginger and garlic and saute for one min.Then add green chillis , spring onion whites and black pepper powder and saute for more 2 mins .Now add all the chopped vegetables and mushrooms and saute for 2 mins.

Then add the vegetable stalk and salt and let the mixture boil.When this mixture starts boiling add soya sauce, red chilli sauce, sugar and simmer for 4-5 mins.You can adjust the sauces according to your taste.I like it little spicy so i added them little more.

Mix the cornflour in 1/2 cup water and form a paste.Mix it well to avoid any lumps.Add this mixture to the cooking soup and stir well.Let it cook until it gets slightly thick.

While the soup is being cooked heat a wok.Add oil in it and deep fry the cooked noodles in it till light brown and crispy.Drain them on paper and let them cool. Fry the noodles when they are cooled after being cooked, do not fry hot boiled noodles.

Remove from flame and add vinegar and spring onion greens.Put it in a soup bowl and garnish with fried noodles and serve hot.

NOTE: If you do not have vegetable stalk you can add 2 vegetable seasoning cubes to plain water.
To make chicken manchow soup replace vegetable stalk with chicken stalk and add shredded boiled chicken and little scrambled egg to the above soup.

Yummy Vegetable Manchurian Rolls...!!!

This vegetable manchurian rolls is a very tasty and filling snack...if ur a manchurian lover you will definetly love them...I love making this snack often as its quick , filling and tasty snack.


INGREDIENTS:
  • 4 long bread rolls
  • 1 1/2 cups Shredded cabbage
  • 1 cup grated carrot
  • 1 cup very finely chopped caulifower florets
  • 1/2 cup chopped spring onion greens
  • 1/2 cup finely chopped onions
  • 1/2 cup + 2 tea spoons cornflour
  • 1/4 cup maida(all purpose flour)
  • 2 table spoons soya sauce
  • 1 table spoon tomato ketchup
  • 1-2 tea spoons green chilli sauce(optional)
  • 1-2 table spoons finely chopped garlic
  • 1-2 table spoons finely chopped ginger
  • 2 tea spoons finely chopped green chillis
  • 1 tea spoon vinegar
  • 1/2 tea spoon sugar
  • salt
  • oil

METHOD:

Take a bowl and add shredded cabbage, grated carrot and finely chopped cauliflower florets.Add salt and 2 tea spoons soya sauce in them and mix it well so that its evenly coated with it.Now add the corn flour and maida in them and bind them well.

You can add more maida and cornflour if required but remember the ratio of quantity added should be 1:2 i.e cornflour should be double of maida.This gives the required crispiness to the balls when fried.Bind the mixture properly and do not add even little water as if water is added the balls will absorb more oil while frying.

Shape them into marbel size firm balls and deep fry them in hot oil till golden brown and crisp.Remove them on absorbing paper and keep aside.

Now to make the sauce heat little oil in a pan and add the chopped onion and saute it till soft then add the chopped ginger, garlic and green chillis and saute for 2 mins. Add the remaining soya sauce , tomato ketchup, vinegar and stir well.Now add salt and sugar and cook for 2 mins.

Mix 2 tea spoon cornflour in 3/4 cup water and mix it well.Add it to the cooking mixture and stir well.Cook till it thickens.You can add little water if required to get the required consistency.Add the spring onion greens and the fried manchurian balls.Close and cook for 3-4 mins.Manchurian is ready.

Slit the bread rolls without cutting through, apply a thick layer of the gravy from the prepared manchurian.Arrange 4-5 balls from the manchurain gravy and close the roll and serve while its hot.

Tastes best when served hot.


TIP: If you have some leftover cooked noodles you can even add them while mixing the manchurian balls mixture.They bind the balls very well and balls become more crispy.

Hot N Sour Cabbage With Fried Rice...!!!

In this new year i have decided to experiment many more interesting and tasty recipes and post them here.This is my first post in 2010 so i decided to post this special meal.It consists of spicy n sour cabbage served with fried rice.Though there are two dishes in it yet its a very quick recipe.When this hot n sour cabbage is served over hot fried rice it becomes a very tasty combo.Give it a try n m sure you will like it.

For Hot N Sour Cabbage:

  • 2 cups cabbage(cut very long n thin like threads)
  • 3/4 cup chopped carrot( chopped fine like match sticks)
  • 3/4 cup sliced capsicum(long n thinly sliced)
  • 2-3 green chillis slitted
  • 2-3 table spoon tomato ketchup
  • 2 tea spoon white vinegar
  • 2 tea spoon soya sauce
  • 2-3 tea spoons cornflour
  • 1/4 tea spoon pepper powder
  • 1/4 tea spoon sugar
  • salt
  • oil

For Fried Rice:

  • 1 cup basmati rice
  • 1/2 cup finely chopped onion
  • 1/2 cup diced carrots
  • 1/4 cup chopped french beans
  • 1/2 cup chopped spring onions
  • 2 tea spoons soya sauce
  • pinch of pepper powder
  • 1/4 tea spoon chilli powder(optional)
  • salt
  • oil

METHOD:

First to make hot n sour cabbage Heat little oil in a pan and add the sliced carrots and saute for 1 min then add chopped cabbage and capsicum saute for 1 more min and add green chilli slits and saute for more 2 mins.Add salt, pepper powder and sugar and mix.

Simultaneously heat a pan on low flame.Add tomato ketchup, soya sauce and vinegar and mix well.Mix cornflour with 1/2 cup water and form a paste and add it to the above cooking sauces mixture.Mix it well with it and cook for 2 mins till it thickens and forms a light brown colour thick sauce.

when the above sauce is done the vegetables will also be cooked .The vegetables must remain crunchy so cook them for just few mins.Add the cooked sauce to them and mix it well so that the veges get coated well with the sauce.Hot n sour cabbage is ready.

Now for fried rice , soak the rice in water and drain it and keep aside for 20 mins.Add 1 n 3/4 cup water to it and salt and cook the rice till done.Add 1 tea spoon oil also while cooking so that the grains do not stick to each other.

Now take a non-stick pan and add little oil.Saute the chopped onions in it till soft.Add the diced carrots and french beans.Saute them for 2-3 mins till they get cooked a little.Do not overcook them.Add salt.Now add the cooked rice and mix it well with the veges.Add soya sauce and pepper powder and mix it well with the rice.Add little chilli powder if you want it more spicy, i did not add.Remove the rice from flame.Garnish with chopped spring onion.

While serving put the rice in plate and above it put hot n sour cabbage, garnish with spring onions and serve hot.

Spring Rolls With Sweet N Sour Sauce...!!!

Spring roll is a very popular snack and starter in restaurants.In india they are mostly deep fried and served.I like this spring rolls so wanted to try them at home,but since they are deep fried i was not in a hurry to try them.But somedays back i came to know this sping roll wrap recipe which can be shallow fried.I was very excited to try and made them soon.You get ready to use spring roll wraps in stores, but i wanted to make from scratch so i tried it. I made the stuffing using basic indo-chinese ingredients and veges.They were very tasty and with less oil.I also tried this sauce with it using whatever ingredient i felt like adding and sauce was just perfect for them.


INGREDIENTS:

For Outer Wrap:
  • 1 egg(or milk)
  • 3/4 cup all purpose flour(maida)
  • salt
  • oil
  • butter

For Filling:
  • 2 cups cabbage thinly shredded
  • 1 cup carrot very finely sliced(like matchsticks)
  • 3/4 cup capsicum thinly sliced
  • 4 spring onions chopped(whites and greens seperated)
  • 1 tea spoon finely chopped garlic
  • 1 tea spoon finely chopped ginger
  • 1 tea spoon chilli sauce
  • 2 tea spoons soya sauce
  • 1/4 tea spoon pepper powder
  • salt
  • oil

For Sweet N Sour Sauce:

  • 3/4 cup tomato ketchup(or puree)
  • 1 tea spoon minced garlic
  • 1 tea spoon minced ginger
  • 1/2 tea spoon thinly sliced green chillis
  • 1 tea spoon soya sauce
  • 1 tea spoon chilli sauce
  • 1 tea spoon white vinegar
  • 1/4 cup spring onions chopped
  • salt
  • pinch of sugar
  • oil

METHOD:

To make the batter for the wrap, Beat egg in a bowl.Add maida to it and whisk it well , add water little by little to get a smooth batter with dosa batter consistency.Add salt and mix.

Heat a nonstick pan and add little oil.Pour a cup full of batter to form a big thin pancake.When its done on one side flip it and cook the other side.You will get a light yellow colour bit chewy pancake.Repeat the same with the remaining batter.

Now to make the stuffing heat oil in a pan.Add chopped ginger garlic.Saute for 20 secs.Now add the spring onion whites and again saute for more 30 seconds.Now add chopped carrots and capsicum and saute them for few seconds.

Add the shredded cabbage and salt.Saute for few more seconds.Veges should remain crispy, do not cook them much.Now add soya sauce and chilli sauce, cook for few more secs.Now finally spinkle pepper powder and add spring onion whites and toss.Remove from flame.Let it cool.


Make a paste using little flour and water to seal the roll.Take a cooked pancake and spread the filling in the center and tightly roll it into a roll.Seal the edge with the flour paste so that it does not open up.

Heat a tawa and add little oil.Carefully put the sealed roll on it with sealed side down and shallow fry it.When one side done, turn and let the other side get browned.Now add little butter and let the roll get brown and crispy.Cut the rolls.

For the sauce, heat a small kadai and add little oil.Saute ginger and garlic in it for 1 min.Now add green chillis and saute more.Now add chilli sauce and soya sauce and cook for 10 seconds.Add in tomato ketchup and cook on low flame for 30 seconds.Add water to adjust its consistency.Add vinegar, little salt and pinch of sugar.Remove from flame and add chopped spring onion.


Serve the hot spring rolls with sweet N sour sauce.


NOTE: Vegetarians can use little milk in the batter instead of eggs,but taste will change a bit.
You can even deep fry this rolls instead of shallow fry.

Pan Fried Rice...!!!

This is very quick and tasty chinese fried rice.I make it often as it gets ready in 10-15 mins.I have added some prawns to it, but sometimes i even add shredded boiled chicken and scrambled egg, it becomes even more tasty with it.

INGREDIENTS:

1 cup basmati rice
1 cup chopped spring onion
1/2 cup finely sliced carrot
1/2cup sliced capsicum
1 cup chopped cabbage
1/2 cup cleaned small size prawns
1 table spoon soya sauce
1 table spoon chilli sauce
1/2 tea spoon pepper powder
salt
oil

METHOD:

Apply salt and turmeric to prawns and keep aside.Wash rice in water and keep it soaked for 10 mins. Now saute the rice in oil for 2 mins and add 1 3/4 cup water and little salt and cook the rice.Cool it .

Shallow fry the prawns for 4-5 mins in oil.Take a pan and add one table spoon oil. When it gets heated up add soya sauce and saute for 1 min. Now add the chilli sauce and saute more.Adding soya sauce and chilli sauce at this stage gives a nice aroma.Now add chopped carrots and capsicum and saute for 2 mins.

Now add the spring onion and cabbage. saute for 1 mins.Add the fried prawns and mix. Add salt and little pepper.Now add the cooked rice and mix well.spinkle some pepper powder and mix.Toss on high flame for 2 mins.

Remove and serve hot with machurian or any other chinese side dish.


NOTE: You can even add shredded boiled chicken and scrambled to this.

Egg Chowmein...!!!

Chow mein is a generic chinese term for a dish of stir-fried noodles, of which there are many varieties. Chow mein is generally made of soft noodles like egg noodles, veg noodles etc.Chow mein is also common in indian chinese cuisine, having been introduced by the chinese of calcutta. It is usually offered hakka or with gravy. Catering to vegetarian diets, there is an Indian variant, vegetable chow mein, which consists of noodles with cabbage, bamboo shoots, pea pods, green peppers, and carrots and sauces like chilli sauce and soya sauce.I love to eat chinese dishes once in a while for a change. So i had made egg chowmein the other day so posting its recipe here.

INGEDIENTS:

200 gms Chowmein noodles
1 cup cabbge cut
1 carrot cut in thin long pieces
2 capsicum cut in long pieces
2 spring onions chopped
1-2 eggs
2 table spoon soya sauce
2 table spoon green chilli sauce
1/4 tea spoon pepper powder
1 veg maggi cube powdered
pinch of turmeric
salt
oil

METHOD:

Heat water in a vessel.when it starts boiling add 1 table spoon of oil and salt. Add the noodles and let them cook for 5-6 mins till done. Do not over cook them.

Drain the hot water and pass running cold water through them so that they do not stick to each other.Drain them and spread them on a plate and keep.

Beat the egg in a bowl. Add pinch of turmeric and salt.Heat oil in a pan. Add the eggs mixture and keep on stirring till we get scrambeld eggs.Fry the egg pieces till crisp and light brown edges.Keep them aside.

Heat oil in a pan. Add chooped onions and fry. Now add all the other chopped vegetables and fry them till half done. In chinese dishes vegetables need to be half cooked.

Now add the chilli sauce ,cube powder and salt. Mix it properly. Now add the boiled noodles and mix them well with the vegetable mixture. Add the soya sauce and let it get mixed well.Toss on high flame for 2-2 mins.

Add the scrambled eggs and mix well. spinkle pepper powder and remove from flame.


Garnish with more scrambeled eggs.Serve hot with other chinese side dishes like manchurian or chilli.


NOTE:You can add prawns and chicken pieces also to the noodles.

Mushroom Momos...!!!

Momos or momocha are Steamed Dumplings. It is a popular recipe from the land of china, tibet and north eastern india. It is famous in many north-eastern restaurants in many parts of india. normaly momos are stuffed with vegetable filling or chicken stuffing.They are usauly served with momo sauce.I had lots of mushrooms at home and wanted to try something new so decided to make mushroom momos and believe me they turned out realy yummy...:)

INGREDIENTS:
1 cup maida(all purpose flour)
1 cup chopped natural mushrooms(or artificial)
2 onions chopped finely
1 veg maggi cube
1 table spoon soya sauce
1 tea spoon chilli sauce
1 tea spoon garam masala
1/2 tea spoon baking powder
salt
oil/ghee

METHOD:

Take maida ina bowl and mis baking powder and salt. Add little oil and kned well using water.Keep for 40 mins.

Now take a kadai.Add oil and fry onions till golden brown. Now add the mushrooms in them and mix them and close the lid. Let them cook on low flame.

When the mushrooms are cooked well. Add salt, maggi cube and garam masala and stir well. when its almost done add soya sauce and cook for 1 min and remove from heat. Keep aside.

Now make small balls of the dough.Roll them into small thin puris and put 1 table spoon of the filling in the center.Close the puri and seal it. Same like we make modaks here.

Steam them for 20 mins in a steamer.

Serve hot with tomato-garlic sauce.

NOTE: You can even bake them and serve after steaming.

Apple Toffee...!!!

This apple toffee is one of the famous chinese deserts.Inside a crisp toffee is soft and tender apple with all the juices trapped in the shell.I had read this recipe in some magazine and tried it at home and the try was very succesfull-:)

INGREDIENTS:
2 fresh crisp apples
1 cup maida
1/4 cup corn flour
2 cup jaggery
2 table spoon sesame seeds(Til)
oil
baking powder
salt
10 ice cubes
1 litre chilled water

METHOD:

Chop the apples in cubes of approx 1 cm. Mix maida, cornflour, baking powder and pinch of salt and make a thick batter using water.

Heat oil in a kadai.Deep the apple cubes in the batter and deep fry them in oil till they become crispy. Fry all the cubes and keep aside.

Put the ice cubes in chilled water and let the water become very cold.Now heat a pan with deep bottom and add the jaggery it.

When the jaggery melts completely and becomes bit dark in colour ,deep the fried apple pieces in it fully and coat them completely with the jaggery and remove.

Immediately put the jaggery coated pieces in cold water so that the jaggery coating becomes hard. Keep in chilled water for 15-20 secs and remove on a plate.

Sprinkle sesame seeds on them and serve immediately.

Preparation time: 20 mins.

Gobi Manchurian Dry(Indian style)...!!!

This is one of my favourite dishes...its made often at my place...This recipe is mixture of many manchurian recipes...This has a bit of indian taste campared to the original chinese manchurian,but it tastes superb.So i am posting it here.I made this few days back so removed pic and posting here...


INGREDIENTS:
Cauliflower 1 medium sized
1/2 cup besan
1/2 cup cornflower
14-15 garlic pods finely chopped
5 green chilles finely chopped
2 onions finely chopped
2 tomatoes finely chopped
1/2 cup tomato sauce
1/4 cup finely chopped corainder leaves
oil
salt


METHOD:

Cut the cauliflower into pieces and keep them in hot water for 20 mins so that they soften a bit.Add some salt to it.

Make a batter by mixing the besan and cornflour in water.Add little salt. It should be of medium consistency.

Deep the cauliflower pieces in that batter and deep fry them in oil till they become crispy.

Meanwhile take a pan. Add some oil and fry the onions till they are translucent.Now add the chooped green chilles and the garlic pieces. Fry for some time.Now add the tomatoes to it.Fry for 10 mins.Add a pinch of salt.


Now add he fried cauliflower pieces to this mixture and mix them properly with it.Now add the tomato sauce and mix well.Now close the vessel and cook on low flame for 10mins.


Now remove the lid and garnish with corainder leaves.Remove from flame.

Let it stand for 10 mins and then serve it.


Preparation time:30 mins.
