Tahini Sauce...!!!

Tahini Sauce is a very famous dip of middle eastern cuisine.Major part of it consist of ground sesame paste called as "tahini paste" which is one of the main ingredient of middle eastern recipes.
Before i had a very less knowledge of middle eastern recipes and one day i saw one recipe on one of the cookery shows and i found it interesting and tasty. So i did more research on it and tried to make some of the famous middle eastern recipes. This sauce is the base for max of them so made it first.Give it a try, its taste is realy unique and nice.

INGREDIENTS:

1 cup sesame seeds
1/2 cup olive oil
5-6 garlic cloves
1/4 cup lemon juice
salt

METHOD:

First dry roast the sesame seeds and let them cool.When they get cooled, grind them dry in mixie till they get crushed well and oil comes from them.Now add some olive oil and grind more till it forms a smooth paste.Add more olive oil if paste is not of pourable consistency and blend more.Tahini paste is ready. This can be stored alone for 3-4 weeks and can be used in many recipes.

Now to make tahini sauce from it take tahini paste and add crushed garlic cloves and salt and grind to fine paste.Now remove it in a bowl and add olive oil and lemon juice and mix.If its not of sauce consistency add little warm water.

This sauce can be stored in freezer for 2 weeks.

Coriander Mint Sandwitch Chutney...!!!

This chutney is very popular to be used for sandwitches. Mixture of corainder and mint gives it a very nice flavour.It can be also used as a dip.

INGREDIENTS:

1 cup corainder leaves
1/2 cup mint leaves
2-3 green chillis
2 table spoon fresh grated coconut
1/4 tea spoon sugar
1 table spoon lemon juice
black salt to taste

METHOD:

Mix all the ingredients in a mixie and grind adding little water. Chutney is ready.

Dry Coconut-Garlic Chutney

This chutney is very popular in konkan. I can be easily prepared and stored for some days.It can be eaten with many things like bread, chapati etc.

INGREDIENTS:

1 cup dried grated coconut
2 table spoons chilli powder
1 tea spoon chopped garlic
1/2 tea spoon tamarind extract or 1-2 pieces of tamarind (optional, added for tanginess)
1/2 tea spoon sugar
Salt

METHOD:

Dry roast coconut and tamarind till it turns slightly brownish.

Grind together with all other ingredients. This is dry powder, so do not add water.

It can be stored in air tight containers for about a month.

spicy green chutney(chaat chutney)

INGREDIENTS:

1/2 cup chopped mint(pudina) leaves
1 cup chopped coriander leaves
6-8 green chilies
1 tbl spn lemon juice
Salt

METHOD:

Add all the ingredients to a mixer and add water and grind. No need 2 chop and add, use whole chilles and all.

Sweet Tamrind Chutney(chaat chutney)

INGREDIENTS:

6-7 seedless dates
1/2 cup tamarind extract
1/2 tea spn cumin seeds
1/2 tea spn coriander powder
2 table spoon jaggery
Salt

METHOD:

Roast the cumin seeds(fry without oil) and powder them.

Grind all the ingredients to a smooth paste using little water.

preparation time: 5 mins

White Grondnut Chutney...!

This is a traditional common chutney made with many dosas, idlis etc. This can be served with or without seasoning.

INGREDIENTS:

1 cup fresh grated coconut
1″ piece ginger(optional)
1/4th tea spoon tamarind extract
4 green chillis

2 table spoon roasted ground nut pieces

Salt

For seasoning(Optional):

1/2 tea spn mustard seeds
1/2 tea spn urad dal
3-4 curry leaves
1 red chilli

Oil

METHOD:

Grind coconut, ginger, tamarind, ground nut pieces,salt and chilies to a smooth paste adding required amount of water.


Heat oil and add mustard seeds. When they start popping, add urad dal. When dal turns slightly brownish, add curry leaves, broken red chilies. Fry for a little while. Pour this seasoning over chutney.


Serve the chutney with dosa or idli.
