Healthy Paneer Tikka Wraps...!!!

This Paneer Tikka Wraps are very quick to make and very tasty to...Till now to who ever i have served this wraps  they have just loved them a lot and have asked for more...:-) So i am posting their recipe here. 






INGREDIENTS :


For Paneer Tikka :
  • 200 grams fresh paneer cut into 1" cubes
  • 2 capsicum s cut into 1" squares
  • 2 big onions 
Marinade For Tikka :
  • 1/2 cup thick curd
  • 2 tea spoon besan
  • 1/2 tea spoon amchur powder
  • 2 tea spoon tandoori masala
  • 1/2  tea spoon garam masala
  • 1 tea spoon ginger-garlic paste
  • 1/2 tea spoon chili powder
  • 1/2 tea spoon jeera powder
  • 1/2  tea spoon chat masala
  • 2 table spoons of chopped coriander
  • 1/2 tea spoon sugar
  • salt
For Salad :
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrot
  • 2 table spoons of chopped corainder
  • 1/2 cup shredded capsicum
  • salt
  • chat masala
Other Ingredients : 
  • 4 wheat flour rotis cooked
  • 3 table spoons low fat eggless mayonnaise 
  • 1/2 cup green chutney (Grind to fine paste pudina 1/2 cup, coriander 1 cup, 2-3 green chilis ,tamarind pulp 1 tsp,garlic 4 pods,ginger 1/2",fresh coconut 1 tbsp,chat masala,sugar n salt with little water)
  • oil
METHOD:


Mix all the ingredients listed under marinade. Cut the onion into 4 quarters and then separate each layer.Now take a big bowl and add  the paneer cubes,chopped capsicum  & onion. add the  prepared marinade over them and mix it properly with the paneer n veges. Keep aside for 15 mins.


Take satay sticks or skewers and prick one piece of capsicum, then one paneer cube then one onion pieces and so on. Continue this pattern till the end of stick. Similarly prepare such tikka sticks.


Now heat a flat griddle and sprinkle  2 tea spoons of oil all over it. Put each satay stick over it and sprinkle little oil over them and keep on turning them after 1-2 mins. After 4-5 mins when they are almost done take each satay stick and hold it over naked flame and keep on turning and roasting it till little black patches appear on the onion, paneer and capsicum.This gives the paneer tikka the perfect tandoori flavor. When the tikkas are done remove them from fire and keep aside.


Mix all the veges listed under salad in a bowl and sprinkle little salt and chat masala over them. Take a roti and spread the green chutney all over it on one side. Then above it spread 2 tea spoons of mayonnaise .Sprinkle the shredded veges salad all over it. Then place one paneer tikka stick over it and carefully separate the stick from the panner cubes and let the paneer cubes be in a line over the roti. Carefully roll the wrap and prick with a toothpick.


Serve immediately.


Preparation Time : 15 mins


NOTE : You can even shallow fry the  wrap in butter after its done if u like it more crispy.
Instead of wheat flour roti you can also use maida roti. I have used a healthy option here.

Achari Paneer Tikka...!!!

I am a big fan of tikkas and kebabs and trying them with different flavours is a very interesting task.So i made this "Achari Paneer Tikka" recently by using achar masala(Pickle spice powder) and some regular ingredients.Pickle is a must with food in many regions of India  , so why not use it to make some other tasty dishes.This is a very quick,easy and tasty starter.I added whatever spices i found to make it more spicy but it will get its main taste from the achar/pickle spice powder.You can use any achar/pickle powder for it.I have used a homemade pickle spice powder, but if you do not have homemade achar/pickle powder you can even use readymade pickle spice powder as its very easily available in stores.

       


INGREDIENTS:

  • 250 grams paneer (cottage cheese)
  • 2 capsicum
  • 2 tomatoes
  • 1 cup yogurt
  • 1 table spoon of homemade/readymade achar masala(Pickle spice powder)
  • 1 tea spoon chilli powder(optional)
  • 1/2 tea spoon turmeric powder
  • 1 tea spoon amchur powder(dry mango powder)
  • 1 tea spoon cumin powder
  • 1/2 tea spoon chat masala
  • 1/2 teaspoon sugar
  • salt
  • oil



METHOD:


Put the yogurt in a muslin cloth and tie a knot.Hung it for 1 hour so that all the water drips down from it.Cut the paneer intoone  inch cubes.Similarly cut capsicum and tomatoes in one inch square pieces.


Take the hung yogurt in a bowl.Add chilli powder, turmeric powder,cumin powder,amchur powder, chat masala and achar/pickle spice powder,sugar and salt  to it.Mix it well so that the spices get distributed evenly.Add the amount of spices according to your taste.Add 2 tea spoon oil also and mix.Marinade is ready.


Now take the paneer cubes and chopped tomato and capsicum pieces in a big bowl.Add the marinade  mixture to it ans mix it well..Apply the marinade gently to the paneer cubes or else they tend to break.


Take some satay/skewer sticks.Take one stick and thread alternate layers of marinated capsicum, paneer cube and tomato.Repeat it with the other sticks.

Heat a tawa/griddle with little oil or a stone griller or tandoor and grill it for 2-3 mins on each side till done.


Serve hot.

Mutter Paneer(Peas With Cottage Cheese)...!!!

Mutter Paneer is one of the most famous gravy dish in north indian paneer gravies....nothing much to say about this dish as its known by most of you.You can make this dish by making slight changes according to your taste.Its basic ingredients are tomato and onion puree and spices can be adjusted to your choice.I had tried making a little different version of mutter paneer from my regular version and it turned out very good , so i am posting it here today.I had serve it with butter-garlic naans whose recipe i will be posting soon.I am very busy this days so i not able to do blog hopping , so sll good stuff is being missed by me.Some of my blogger friends had given lot of awards from past few weeks and i was not able to post them.Sorry for that and thanx a lot for presenting them to me.
                 


INGREDIENTS:
  • 250 grams paneer(cottage cheese)
  • 11/4 cup fresh green peas(or frozen)
  • 2 onions
  • 2 tomatoes
  • 1/2 cup cashewnuts
  • 1 cup milk
  • 4 kashmiri dry red chillis
  • 1 tea spoon poppy seeds
  • 4 cloves
  • 4 pepper corns
  • 1" cinnamon stick
  • 7-8 garlic cloves
  • 1" ginger piece
  • 1/2 tea spoon turmeric powder
  • 1 bay leaf
  • 1 tea spoon chilli powder(optional)
  • 1/2 tea spoon cumin powder
  • 1 tea spoon corainder powder
  • 1/2  tea spoon garam masala
  • 1/2 tea spoon amchur(dry mango powder)
  • butter
  • ghee
  • salt
  • oil


METHOD:

Soak cashew nuts, cloves, cinnamon, pepper corns and poppy seeds in 1/2 cup water for 2 hours.Then grind it with 2 raw onions, garlic cloves and ginger to a smooth paste using the water used for soaking the spices.

Blanch tomatoes in hot boiling water along with kashmiri red chills for 5-8 mins and then peel tomatoes and remove seeds and blend them into a smooth puree along with red chillis.Saute green peas in butter for 4-5 mins and keep aside.Cut the paneer in 1 inch cubes.

Heat 1 tea spoon ghee and 2 tea spoon oil in a pan and add bay leaf and after one min add the onion and spice paste.Saute it for 5-6 mins till the raw smell goes off.Then add tomato -chilli puree and cook for 2 more mins.Then add turmeric powder,salt, cumin powder, chilli powder,corainder powder and amchur powder and stir well.Then add sauted green peas and cook for 2 mins.Add milk and stir well.If gravy is very thick you can adjust the consistency by adding more milk or little water.

Add sugar and garam masala and mix well.Add diced panner cubes and close and cook for 4-5 mins.You can even saute the panner in butter before using or you can deep fry them.I have used them directly.Checkand adjust  the spices  if necessary and remove from flame.

Serve it hot with Naan or paratha.I served them with Butter Garlic Naan which i will post soon.

Angoori Paneer Tikka...!!!

This is a very tasty starter dish...Tangy black grapes sauce is sandwiched between paneer slices,skewered along with bell pepper and tomato and roasted till golden brown. Its a very good tasty and unique vegetarian starter to serve for a party.Give it a try.

INGREDIENTS:

For Paneer Tikka:
  • 200 grams paneer block(cottage cheese)
  • 1/2 cup green bellpepper diced( 1 inch square pieces)
  • 1/2 cup tomato diced( 1 inch square pieces)
  • 2 tea spoon chat masala
  • 1/4 cup besan(gram flour)
  • 1/4 tea spoon pepper powder
  • 1/4 tea spoon amchur(dry mango powder)
  • 2-3 table spoon milk
  • 2 tea spoon fresh cream(optional)
  • 1/2 tea spoon chilli powder
  • 10- 12 small bamboo skewers( or toothpicks)
  • salt
  • oil

For Grape Sauce:
  • 1 cup chopped fresh black grapes
  • 1 cup finely chopped jaggery
  • 1 table spoon lemon juice
  • black salt
  • salt
  • oil

METHOD:

First to make the grapes sauce heat 1 tea spoon oil in a kadai.Add the chopped black grapes and saute until they become soft .Add black salt and salt and mix.Add the jaggery and let the mixture get cooked.Amount of jaggery depends on the sweetness of grapes, if grapes are very sweet then add little less jaggery.

When the mixture becomes thick add lemon juice and remove from flame.Let it get cooled then grind it to a fine and smooth paste.Keep it aside.

Cut the paneer block into 1/2 centimeter thick slices.sprinkle little salt and chat masala evenly over them.Take one slice and apply grapes sauce all over it on one side.Keep the other slice on top of it and cover.This is paneer sandwich.Now cut this paneer sandwich in 1 inch sided squares.

for the batter take besan in a bowl and add salt, chilli powder, pepper powder and amchur to it mix it well.Then add milk and cream and form a thick batter.

Now take a skewer and thread one bellpepper piece and tomato piece.After it thread one paneer sandwich square and again thread one tomato and bellpepper piece.The tomato and bellpepper pieces holds the paneer firmly on the skewer.Repeat the same with the remaining paneer squares and veges.

Arrange all the threaded skewers on a plate and pour 1-2 tea spoon of prepared besan batter on the paneer square so that it covers the paneer square on all sides.

Heat 2-3 tea spoons of oil in a pan. Place these skewers on the hot pan and cook till golden brown on all sides.

Serve hot with black grape sauce.

Tangy Paneer Rolls...!!!

This is a very spicy and quick roll...perfect to carry outside for picnics or as lunch. It gets ready in no time and is a very filling dish.Here paneer is marinated with yogurt and spices which gives it tangy and spicy taste.

INGREDIENTS:

1 cup paneer cubes(cottage cheese)
½ cup tomatoes, deseeded and diced
½ cup capsicum diced
oil

For Marination :

1/4 cup curds beaten
2 n 1/2 tea spoon chilli powder
1/2 tea spoon turmeric powder
2 tea spoon ginger-garlic paste
1 tea spoon besan
1 tea spoon chaat masala
1 tea spoon kasoori methi
1 tea spoon garama masala
salt

For Outer Covering:
1/2 cup wheat flour
1/2 cup maida flour
milk
salt
oil

METHOD:

Combine all the ingredients of the outer covering and knead into a soft dough using only milk.

Mix all the ingredients of the marinade in a bowl.Coat paneer cubes and tomato mixture in it and keep for 15 mins.

Heat a pan and add oil.Add capsicum and saute for 2 mins.Then add the paneer mixture and saute over a high flame for 4 to 5 minutes, stirring occasionly.Take care so that paneer pieces do not break.Cook till panner is done. Sprinkle little salt and kasoori methi and remove from flame.

Make balls of the kneded dough. Roll out thin chapatis.Cook each chapati on a tava on both sides using little oil. Keep aside.

Spread required of the filling in the centre of each chapati and roll up tightly.If required cook the rolls on a hot tava using butter till they get crispy.

Paneer Butter Masala(Paneer Makhni)...!!!

This is one of the most popular paneer dish in the north indian cuisine menu of indian restaurants. Many consider it very difficult to prepare this dish at home. Even before i had a idea that its very difficult to prepare it, specially its rich creamy gravy. But i just went through the recipe and came to know the basic idea and tried it with my addons and modifications and i could not believe that the dish was ready in just 30 mins.It was damn tasty, i was happy that i could make its taste very similar to its taste in a fine indian restaurant:-))



INGREDIENTS:

200 grams paneer cubes
4-5 medium sized onions
4 tomatoes( or 1 cup tomato puree)
3/4 cup cashew nuts
2-3 cups milk
1/2 cup fresh cream
1 table spoon kasuri methi(dry fenugreek leaves)
2-3 bay leaves
5-6 cloves
15-20 garlic cloves
2" ginger
2 table spoon kashmiri chilli powder
1 tea spoon turmeric powder
2 tea spoon corainder powder
4 tea spoon garam masala powder
5-6 table spoon butter
salt
sugar

METHOD:

Soak cashew nuts in water for 2 hours. Grind them to a paste using milk.Skin the onions and blanch them in hot water for 4-5 mins, then puree them along with ginger pieces and garlic cloves to form a paste.

If not using a tomato puree then blanch tomatoes, peel and deseed them and form a puree.Add little sugar and salt and heat it for 3-4 mins till thick.

Take 2 table spoon of butter and heat in a pan for 2 mins, the saute the paneer cubes in it till light golden brown.If the paneer cubes are not soft follow the procedure below or else you can use them directly. Now take 2 cup hot water, add a pinch of salt and turmeric powder to it and immerse the paneer cubes in it for 10-12 mins to soften.Then remove the pieces, drain them on a tissue paper and keep aside.

Heat 2 table spoon of butter in a pan, add the bay leaf and the cloves, then add ground onion, ginger and garlic pastic and saute till light-brown. Add kashmiri chilli powder, followed by the cashew paste and fry for 5 mins.

Add tomato puree, kasuri methi,coriander powder, turmeric powder, garam masala and salt. Stir and let it simmer for some time.Add milk and let the gravy become thick.

Add the paneer cubes and simmer for 4-5 minutes. Add a small cup of water and let it cook on medium heat till you get the desired curry consistency. Remove from fire.

Add reamaining butter and fresh cream and serve hot with nan, paratha or jeera rice.


NOTE: To get a bit sour taste to the gravy you can add 1/2 cup of yogurt.
Use the quantities of spice powderes according to your taste.

Paneer Peshawari...!!!

This is one of the famous paneer dishes which we get in restaurants.Its very easy to prepare it.It tastes good with puris or parathas.

INGREDIENTS:

200g Paneer
2 Onions
3 Tomatoes
2 tea spoon ginger-garlic paste
1/2 spoon turmeric powder
2 tea spoon red chilli powder
2 tea spoon kashmiri chilli powder
1 tea spoon spoon garam masala
1 tea spoon jeera powder
1 tea spoon corriander powder
2 table spoons chopped corainder leaves
Salt to taste
oil

METHOD:

Grate the paneer, Chop onions and tomatoes.

Heat little oil in a pan and add finely chopped onions.Once onions turn slightly reddish, add ginger-garlic paste.

After a while add turmeric powder, red chilli powder, garam masala, jeera powder, corriander powder to it and stir well.Add tomatoes and cook them well till oil separates.

Take the mixture off the stove and let the mixture cool down.Grind the mixture to a smooth paste.

Again heat a pan and add this mixture with little water.Add the grated paneer and salt and let it cook for some time till paneer is cooked well and gravy has enough thickness.

Garnish with corainder and serve hot with puris or parathas.

Spicy Paneer Biryani...!!!

I wanted to try some new type of biryani as was bored with the regular vegetable biryani. I had some paneer in the freezer so decided to try paneer biryan. I had tried once panner biryani ina restaurant in pune , it was damn tasty. I dint know its recipe, so i decided to just give a try . It turned out very well . It was very tasty and spicy.

INGREDIENTS:
1 1/2 cup basmati rice
1 cup diced paneer pieces
2 big onions vertically chopped
1/2 cup thick yogurt
3 tea spoon chilli powder
1 table spoon biryani masala
2 tea spoon garam masala
1 tea spoon turmeric powder
1 tea spoon coriander powder
2 table spoon ginger-garlic paste
1" cinnamon piece
4-5 cloves
4-5 pepper
2 bay leaves
1/2 lemon
oil
ghee
salt


METHOD:

Firstly add 1 tea spoon chilli powder, turmeric, 1 tea spoon garam masala,salt to the yogut and mix well. Apply this paste on paneer pieces and keep them aside for marination for 2 hrs.

Now soak the rice in water. Add 1 tea spoon of oil on them and spread them on a cloth and keep for 30mins.

Heat a pan and add ghee and shallow fry the marinated panner pieces till they turn brown.When done remove them n keep aside.


Meanwhile heat a pan and add ghee and fry the chopped onions till they become soft. Now add the ginger-garlic paste and stir properly.

Take another pan and add ghee. Add all the whole masalas like cloves, pepper etc and fry for a min. Add the soaked rice in it and fry for 3-4 mins.

Now add this rice in the vessel c0ntaining onions. Add 3 n 1/2 cups of water n stir. Now add the biryani masala, chilli powder, garam masala and salt and mix well and close the lid and let the rice cook.

When the rice is almost 3/4 done. add the fried paneer pieces to it and mix slowly and carefully so that the rice do not break.Close the lid and cook for 5 mins. Sprinkle lemon juice on it and remove from flame.

Tasty paneer biryani is ready.

Paneer Masala...!!!

Sorry..so many days coudnt post my tried recipes as my laptop had some problem..So today i ma posting a paneer recipe..This recipe i got from net.I treid this recipe with some modifications and it turned out good.

INGREDIENTS:
Paneer 250 grams
2 onions finely chopped
2 tomatoes chopped
10 garlic cloves
5 mint leaves
1" ginger
5 green chillies
2" cinnamon
4 cloves
coriander leaves
2 table spoon butter
oil
1/2 lemon
salt
sugar

METHOD:

Cut the paneer into small cubes.Deep fry them in oil and then directly put them in water and keep them in it for half and hour. This makes the paneer very soft, or else it becomes hard and does not taste good.

Meanwhile heat the butter in a pan and add cinnamon and cloves to it , let them fry for some time. Then add garlic, chillies, ginger and fry. Then add onion and fry till it becomes golden brown and gives a nice aroma. Now add the chopped tomatoes to it and fry for 5 mins.

Fry all the ingredients nicely for 15 minutes making sure that nothing sticks to the bottom of the pan.After frying well, remove the pan from stove.

Add mint leaves just before removing the pan. And cool the masala.

Grind the masala well in a mixie with water . Masala should be of medium consistency.

Heat the pan, and add the ground masala. To this add salt to taste and the fried paneer cubes. Then add a pinch of sugar.Add some chilli powder if u want it to be more spicy.Cook this in slow fire for 15 - 20 minutes.squeese the lemon on top and remove from fire.

Its ready.Garnish with coriander leaves and serve hot with parathas.
